超声波技术作为一种新型技术,在食品工业中发展迅速,并被广泛研究和应用。冻结及解冻技术是目前水产品及肉类产品长期贮藏的常用手段,基于超声波的物理及化学效应,超声波辅助冻结及解冻技术正成为超声波在食品领域中的应用研究热点。本文中,笔者阐述超声波辅助冻结及解冻的机制,并探讨超声波冻结及解冻技术在水产及肉类产品中的应用及其对产品品质的影响,以期为超声波冻结及解冻技术在水产品及肉类产品中的应用提供理论指导。  相似文献

分散贮藏食物是许多啮齿动物所采取的一种重要的觅食策略。分散贮藏方式对于植物的幼苗建成、更新、群落演替和生态系统功能的维持有着积极的意义。多种因素影响啮齿动物对食物分散贮藏。内部因素有性别、年龄、社群关系、饥饿状态等;外部因素包括食物特征、竞争与盗食环境条件等。这些因素并非独立地发挥作用,内部因素受外部刺激的综合影响,而且外部因素只能通过改变动物的内部状态才能发挥作用。特别是在一些室内的或围栏实验中,实验设计的差异不仅影响动物的食物贮藏及其管理,也会造成实验结果的不同。  相似文献

自工业革命以来,空气中人为排放CO2量增加,引起温室效应,导致地球表面温度升高和海水升温;同时,由于海-气界面气体交换,大气中CO2部分溶解于海洋,引起海洋酸化。海洋升温加快鱼体内生化反应和代谢速率,并通过影响生长、觅食和繁殖等生命过程中能量供给,间接影响到鱼类种群分布、群落结构及生态系统的功能。而海水酸化会干扰海洋鱼类仔稚鱼的感觉和行为,增加其被捕食率,并削弱其野外生存能力,可能威胁自然种群补给量。综述了海洋升温、海洋酸化及其两者共同作用对海洋鱼类的影响,为预测鱼类响应全球海洋环境变化的响应趋势提供相关依据。  相似文献

衰老是黄瓜贮藏中的主要问题。本文研究了贮藏的温度、氧、二氧化碳和乙烯等因素对黄瓜贮藏中衰老的影响。试验结果表明,调整贮藏温度可以有效地控制黄瓜贮藏中的衰老。如将贮藏温度保持在10—13℃,则可以延缓衰老,在此基础上将氧和二氧化碳的分压控制在2—5%,再用20:1的高锰酸钾载体除去贮藏环境中的乙烯,这样黄瓜可以贮藏45天,不致影响其外观和风味。结果还指出,温度、氧、二氧化碳等对黄瓜衰老的影响在于改变其呼吸度和纤维水解酶的活性。  相似文献

为了防止热鲜羊肉腐败变质,延长产品货架寿命,研究了波尔山羊肉在1±0.5℃低温贮藏条件下的贮藏保鲜效果,分析测定了贮藏过程中羊肉菌落总数、pH值、挥发性盐基氮(TVB-N)含量和肉色等品质指标的变化情况。结果表明:在整个贮藏过程中,随着贮藏时间的延长,羊肉的菌落总数、pH值和挥发性盐基氮(TVB-N)含量均不断上升;羊肉的色泽指标L*值呈“U”字型变化趋势、a*值呈现较平稳的增加趋势、b*值先迅速增加而后下降。试验结果表明:在1±0.5℃贮藏条件下,波尔山羊肉的最佳货架寿命为6d。  相似文献

以嗜水气单胞菌感染体重70g左右的鲫并检测了感染鱼和对照鱼的血液学及播散性血管内凝血判定指标等参数。结果表明细菌性败血症病鱼严重贫血,存在明显的凝血障碍,在疾病发展过程中存在播散性血管内凝血现象。这一些象导致了病鱼全身性出血,并在疾病的病理生理过程中起了重要作用。  相似文献

本文研究了影响杜仲(Eucommia ulmoides Oliv.)和秤锤树(Sinojackia xylocarpa Hu.)花粉超低温贮藏的一些因素,包括花粉含水量、贮藏时间、冻解方法等。利用差热分析(DTA)技术预测花粉在液氮(LN)中安全贮藏含水量的范围。结果表明,含水量的影响最显著。DTA 有望用于预测花粉在 LN 中安全贮藏含水量的范围。  相似文献

海洋沉积物是重金属的重要贮库,而海洋底栖无脊椎动物主要从沉积物中摄取重金属,这些被摄取的重金属能够通过食物链进行传递,进而影响到人类健康。本文总结了近些年来在海洋沉积物中重金属对底栖无脊椎动物生物有效性方面的研究进展,包括海洋底栖无脊椎动物对重金属的吸收途径、沉积物地球化学性质和底栖无脊椎动物生理等生物因素对沉积物中重金属生物有效性的影响。在此基础上,展望了未来研究重点,主要包括近海富营养化对沉积物中重金属生物有效性的影响,海洋底栖无脊椎动物消化道中的物理消化过程对沉积物中重金属生物有效性的影响,海洋底栖无脊椎动物整个生活史过程中沉积物中重金属生物有效性的变化等。  相似文献

饲料颗粒化是实验动物饲料标准化的重要内容,是实验动物质量控制的重要环节。影响颗粒饲料质量的因素很多,现就饲料加工、贮存环节中对其品质的影响因素加以分析。1 加工工艺对颗粒饲料品质的影响1.1 原料选择的影响因素 饲料的原料,特别是谷物原料,易被野鼠及昆虫污染,可能传播疾病,尤其是沙门氏杆菌。因此在选择、贮存时要引起注意。某些饲料原料含有营养素拮抗因子,如大豆含胰蛋白酶抑制因子、菜籽饼含芥子甙、芥子硷等多种有毒有害物质,影响饲料的营养品质,选择时应尽量不用或少用,或去毒后再用。某些饲料对实验动物的适口性差,如高梁、棉籽饼  相似文献

Proteolytic maturation of lysosomal proteinases is initiated after receptor-mediated targeting to prelysosomal compartments, while terminal processing occurs upon delivery to lysosomes. These late processing events are impaired in patients suffering from inherited lysosomal disorders, such as sialic acid storage disease and mucolipidosis II (I-cell disease). Lysosomes in the affected cells display marked changes in their physiological and morphological properties, with features reminiscent of prelysosomal compartments. This indicates that the absence of mature lysosomes interferes with the final processing steps during the biosynthesis of lysosomal proteinases. Thus, impaired proteinase maturation reflects an incompetent lysosomal apparatus and as such can be seen as a hallmark of lysosomal storage diseases.  相似文献

Aims:  To evaluate the potential for developing a quality index for a Danish modified atmosphere packaged (MAP) heat-processed and naturally contaminated pork meat product stored at 5°C.
Methods and Results:  The composition of the predominating microflora and changes in contents of tyramine, arginine, organic acids and sensory characteristics were analysed. The microflora was predominated by Lactobacillus sakei , Leuconostoc carnosum and Carnobacterium divergens . The presence of each species varied between products and batches resulting in limited usefulness of the concentrations of these bacteria or their metabolites as indices of quality. Furthermore, the three species differed in their metabolic activities as shown by use of a model meat extract. However, when MAP storage of the processed pork product was followed by aerobic storage then acetic acid showed some potential as a chemical indicator of sensory quality.
Conclusion:  Variation in processing parameters and spoilage microbiota limited the usefulness of concentrations of micro-organisms and their metabolites as indices of spoilage for the studied processed MAP pork product.
Significance and Impact of the Study:  The present study contributes to an understanding of the difficulties experienced in developing quality indices to be used in the control of microbial spoilage of processed MAP meat products.  相似文献

ESTWeb is an internet based software package designed for uniform data processing and storage for large-scale EST sequencing projects. The package provides for: (a) reception of sequencing chromatograms; (b) sequence processing such as base-calling, vector screening, comparison with public databases; (c) storage of data and analysis in a relational database, (d) generation of a graphical report of individual sequence quality; and (e) issuing of reports with statistics of productivity and redundancy. The software facilitates real-time monitoring and evaluation of EST sequence acquisition progress along an EST sequencing project.  相似文献

Deficiencies in the sterile processing of medical instruments contribute to poor outcomes for patients, such as surgical site infections, longer hospital stays, and deaths. In low resources settings, such as some rural and semi-rural areas and secondary and tertiary cities of developing countries, deficiencies in sterile processing are accentuated due to the lack of access to sterilization equipment, improperly maintained and malfunctioning equipment, lack of power to operate equipment, poor protocols, and inadequate quality control over inventory. Inspired by our sterile processing fieldwork at a district hospital in Sierra Leone in 2013, we built an autonomous, shipping-container-based sterile processing unit to address these deficiencies. The sterile processing unit, dubbed “the sterile box,” is a full suite capable of handling instruments from the moment they leave the operating room to the point they are sterile and ready to be reused for the next surgery. The sterile processing unit is self-sufficient in power and water and features an intake for contaminated instruments, decontamination, sterilization via non-electric steam sterilizers, and secure inventory storage. To validate efficacy, we ran tests of decontamination and sterilization performance. Results of 61 trials validate convincingly that our sterile processing unit achieves satisfactory outcomes for decontamination and sterilization and as such holds promise to support healthcare facilities in low resources settings.  相似文献

The effect of salicylic acid (SA) treatment at different concentrations on fungal decay and some quality factors of kiwi fruit (Actinidia deliciosa var. Hayward) in postharvest conditions were studied. Results experiment showed that SA at all applied concentrations inhibited grey mould growth. The SA application significantly decreased weight loss percentage and increased life storage fruits. Also, SA positively affected on postharvest quality factors including total soluble solids (TSS), titratable acidity (TA), antioxidant, ascorbic acid and pH value. It was observed that treated fruits with SA at concentration 5?mM had the highest TSS, TA, ascorbic acid and antioxidant content and it had the lowest decay and acidity. Thus, these results showed that SA has strong impact on postharvest decay and fruit quality of kiwi fruit.  相似文献

Molecular epidemiology uses biomarkers and advanced technology to refine the investigation of the relationship between environmental exposures and diseases in humans. It requires careful handling and storage of precious biological samples with the goals of obtaining a large amount of information from limited samples, and minimizing future research costs by use of banked samples. Many factors, such as tissue type, time of collection, containers used, preservatives and other additives, transport means and length of transit time, affect the quality of the samples and the stability of biomarkers and must be considered at the initial collection stage. An efficient study design includes provisions for further processing of the original samples, such as cryopreservation of isolated cells, purification of DNA and RNA, and preparation of specimens for cytogenetic, immunological and biochemical analyses. Given the multiple uses of the samples in molecular epidemiology studies, appropriate informed consent must be obtained from the study subjects prior to sample collection. Use of barcoding and electronic databases allow more efficient management of large sample banks. Development of standard operating procedures and quality control plans is a safeguard of the samples' quality and of the validity of the analyses results. Finally, specific state, federal and international regulations are in place regarding research with human samples, governing areas including custody, safety of handling, and transport of human samples, as well as communication of study results.Here, we focus on the factors affecting the quality and the potential future use of biological samples and some of the provisions that must be made during collection, processing, and storage of samples, based on our experience in the Superfund Basic Research Program and Children's Environmental Health Center, at the University of California, Berkeley.  相似文献

在成熟谷类种子中,总蛋白约为种子干重的7%~16%,其中大部分为贮藏蛋白。这些贮藏蛋白对于人类和牲畜所需要的营养质量以及在食品加工中都有重要的影响。本文对一些重要谷类种子贮藏蛋白的组成特性以及利用基因工程技术提高谷类种子蛋白质含量和质量进行了全面综述。此外,还简要介绍了在利用基因工程改良谷物种子品质中可能产生的食品安全性问题、如何增加外源基因的表达量和全面提高谷类种子蛋白质含量以及解决的办法。  相似文献
