Purpose

Food consumption is one of the main drivers of environmental impacts. To develop meaningful strategies for the reduction of impacts, food consumption patterns need to be understood on the household level, as purchasing decisions are taken on this level. The goals of this study were to develop a model that estimates food demand and environmental impact as a function of household characteristics, to assess variability between households, and to provide a basis for the development of consumer-targeted political interventions. We titled the study “FoodPrints of households,” as we assessed food consumption in terms of carbon footprint (in analogy to (Stoessel et al. Environ Sci Technol 46(6):3253–3262 2012)).

Methods

We used data from the Swiss household budget survey and applied multiple linear regressions based on generalized linear models to quantify food and beverage demand of individual households. Seven household characteristics, such as size, income, and educational level, served as input variables for the regressions. In a case study, food and beverage demand of 3238 individual households of a Swiss municipality was environmentally assessed with life cycle assessment, and scenarios for different reduction strategies were evaluated.

Results and discussion

We found that the carbon footprints of in-home food consumption per household member and year vary from 0.08 t CO2 eq. to 5 t CO2 eq. with a median value of 1 t CO2 eq. This variability is significantly smaller than the carbon footprint variability for the consumption areas of housing and mobility, where 25 % of the people are responsible for 50 % of the environmental impacts. Differences between high- and low-impact households can be primarily explained by differences in meat and dairy consumption.

Conclusions

This paper presents a model for quantifying food demand and impacts on a household level in Switzerland and represents a basis for developing targeted political measures to mitigate food consumption impacts. Household budget data is also available for many other countries, and the methods presented in this paper could therefore also be applied to other geographical regions.

This paper focuses on the changes occurring in households in the indigenous Rana Tharus community. I discuss the household not in terms of physical structure but instead on the social aspects: how people relate to each other through the lens of the household context. I argue that the fluid nature of households makes its flexible to different ecological environments and socio‐economic scenarios. My ethnography of Rana households clearly illustrated that the formation, structure and management of Rana households was fundamentally linked to people's livelihoods. Before 1950s, abundant land resources allowed Ranas to live in joint‐type households. This particular household arrangement not only fulfilled labour needs but also secured the mutual security for every household member. Gradually, undivided and big households (known in Rana as Badaghar) became the ideal model for Ranas as soon as such establishments did not become divided or separated. This household structure also served as an important safety net for most Ranas and fundamental to other social relationships especially Mukhiya (household head system) and Kurmaa (patrilineal kin). However, since the 1950s, new socio‐economic landscapes have significantly challenged the maintenance of traditional Rana households. Within the lifetime of most Ranas, they first experienced household fission and the disappearance of the Mukhiya system. The dynamic relationships between Rana household and new ecological, social and economic landscapes are explored here. It is concluded that the household is a critical institution allowing anthropologists to better understand the long‐term social impacts caused by state policies and ecological changes. This is because people often practice their new household relations in their everyday life as a response to environmental and livelihood changes.  相似文献

In this study meal sharing is used as a way of quantifying food transfers between households. Traditional food-sharing studies measure the flow of resources between households. Meal sharing, in contrast, measures food consumption acts according to whether one is a host or a guest in the household as well as the movement of people between households in the context of food consumption. Our goal is to test a number of evolutionary models of food transfers, but first we argue that before one tests models of who should receive food one must understand the adaptiveness of food transfers. For the Ye’kwana, economies of scale in food processing and preparation appear to set the stage for the utility of meal sharing. Evolutionary models of meal sharing, such as kin selection and reciprocal altruism, are evaluated along with non-evolutionary models, such as egalitarian exchange and residential propinquity. In addition, a modified measure of exchange balance—proportional balance—is developed. Reciprocal altruism is shown to be the strongest predictor of exchange intensity and balance.  相似文献

IntroductionFew studies have investigated the relationship between dietary pattern and household food insecurity. The objective of the present analysis was to describe the food consumption patterns and to relate these with the prevalence of food insecurity in the context of a rural community.MethodologyThree hundred and seven (307) randomly selected households in Kilosa district participated in the study. Data were collected during the rainy season (February–May) and post harvest season (September–October) in the year 2011. Food consumption pattern was determined using a 24-h dietary recall method. Food insecurity data were based on the 30 day recall experience to food insecurity in the household. Factor analysis method using Principal Components extraction function was used to derive the dietary patterns and correlation analysis was used to establish the existing relationship between household food insecurity and dietary patterns factor score.ResultsFour food consumption patterns namely (I) Meat and milk; (II) Pulses, legumes, nuts and cooking oils; (III) fish (and other sea foods), roots and tubers; (IV) Cereals, vegetables and fruits consumption patterns were identified during harvest season. Dietary patterns identified during the rainy season were as follows: (I) Fruits, cooking oils, fats, roots and tubers (II) Eggs, meat, milk and milk products (III) Fish, other sea foods, vegetables, roots and tubers and (IV) Pulses, legumes, nuts, cereals and vegetables. Household food insecurity was 80% and 69% during rainy and harvest–seasons, respectively (P = 0.01). Household food insecurity access scale score was negatively correlated with the factor scores on household dietary diversity.ConclusionFood consumption patterns and food insecurity varied by seasons with worst scenarios most prevalent during the rainy season. The risk for inadequate dietary diversity was higher among food insecure households compared to food secure households. Effort geared at alleviating household food insecurity could contribute to consumption of a wide range of food items at the household level.  相似文献

食物是人类生存和发展的基础,然而城市化过程中食物消费产生的碳排放也影响着生态环境与人类福祉。双碳目标下,如何协调食物消费增长与低碳减排之间的矛盾,亟需从不同尺度制定绿色消费优化策略。基于此,从居民食物消费碳排放研究的发文态势、研究方法以及研究内容3个方面进行归纳和梳理。研究发现:①由居民食物消费引起的碳排放问题仍是未来学术界的研究热点之一;②从生产端、消费端及系统视角3个方面对居民食物消费碳排放概念和内涵进行理解,有助于界定碳排放核算边界;③目前居民食物消费碳排放核算的主流测算方法包括生命周期评价(LCA)、碳排放系数、投入产出分析(IOA)和物质流分析(MFA)方法这4种;④从碳排放分布特征看,国内外学者从不同尺度(全球、国家、地区、省域、城市)、不同方式(直接与间接)、不同环节(生产与消费等)、不同消费结构(植物型与动物型)等多角度对其进行探讨;⑤从影响机制来看,基于多尺度时空融合视角量化分析居民食物消费碳排放作用机理这一科学问题值得关注。因此,综合考虑人口、社会、经济等多要素,同时考虑空间异质性,识别居民食物消费碳排放关键机制,构建面向双碳目标的碳减排潜力情景并揭示不同情景下的碳减排贡献,将有助于提出最优的居民生活绿色消费模式。  相似文献

Farmers in Africa have long adapted to climatic and other risks by diversifying their farming activities. Using a multi‐scale approach, we explore the relationship between farming diversity and food security and the diversification potential of African agriculture and its limits on the household and continental scale. On the household scale, we use agricultural surveys from more than 28,000 households located in 18 African countries. In a next step, we use the relationship between rainfall, rainfall variability, and farming diversity to determine the available diversification options for farmers on the continental scale. On the household scale, we show that households with greater farming diversity are more successful in meeting their consumption needs, but only up to a certain level of diversity per ha cropland and more often if food can be purchased from off‐farm income or income from farm sales. More diverse farming systems can contribute to household food security; however, the relationship is influenced by other factors, for example, the market orientation of a household, livestock ownership, nonagricultural employment opportunities, and available land resources. On the continental scale, the greatest opportunities for diversification of food crops, cash crops, and livestock are located in areas with 500–1,000 mm annual rainfall and 17%–22% rainfall variability. Forty‐three percent of the African cropland lacks these opportunities at present which may hamper the ability of agricultural systems to respond to climate change. While sustainable intensification practices that increase yields have received most attention to date, our study suggests that a shift in the research and policy paradigm toward agricultural diversification options may be necessary.  相似文献

The Importance of Imports for Household Environmental Impacts   总被引:1,自引:0,他引:1  
A promising way to reduce environmental impacts of consumer expenditure is through the encouragement of more sustainable consumption patterns. Consumers cause environmental impacts both directly, such as by fuel use in personal cars, and indirectly, by paying for the production of consumables. With increased international trade, the indirect environmental impacts are difficult to determine because a portion of the emissions occurs in different geographical regions. Many previous studies have unrealistically assumed that imports are produced using domestic production technology. For countries with diverging technology and energy mixes the likely errors are significant. This study applies a methodology that explicitly includes technology differences to the case of Norwegian households. It is found that a significant portion of pollution is embodied in Norwegian household imports. Further, a disproportionately large amount of pollution is embodied in imports from developing countries. Overall, as in previous studies, we find that mobility and food are most important in terms of household environmental impacts. By analyzing the imports in more detail we find that for some sectors the majority of emissions occur in foreign regions; in particular, this is true for food, business services, clothing, chemicals, furniture, cars, agriculture, textiles, and most manufactured products.  相似文献

生态工程的实施对区域居民生产生活产生了重要影响。以锡林郭勒草地样带为例,利用2017年8月—2018年7月农牧户食物跟踪调查数据、农牧户问卷调查数据、生态恢复措施数据,结合土地利用数据和社会经济数据等,重点分析了不同生态恢复措施对锡林郭勒草地样带农牧户食物消费的影响。研究结果显示:(1)锡林郭勒草地样带生态恢复措施沿样带自北向南实施力度逐渐变弱,草地恢复措施由以草畜平衡、休牧和禁牧为主向休牧和围栏封育为主转变,草地恢复措施中对人类活动的限制也随之由弱变强;(2)沿草地样带自北向南居民食物消费形成了三种模式,在食物消费数量和消费结构上呈显出由牧区特征向农区特征的转变,即人均食物消费量沿样带递减,食物消费由肉蛋奶和蔬菜水果为主向粮食和蔬菜水果为主转变;(3)食物消费模式受到草地供给、收入及其结构、文化习俗和职业分布等生态、经济和社会多方面因素的影响。研究为实现区域生态、经济和社会的协调发展相关政策的制定提供参考。  相似文献

Quantifying differences in resource use and waste generation between individual households and exploring the reasons for the variations observed implies the need for disaggregated data on household activities and related physical flows. The collection of disaggregated data for water use, gas use, electricity use, and mobility has been reported in the literature and is normally achieved through sensors and computational algorithms. This study focuses on collecting disaggregated data for goods consumption and related waste generation at the level of individual households. To this end, two data collection approaches were devised and evaluated: (1) triangulating shopping receipt analysis and waste component analysis and (2) tracking goods consumption and waste generation using a smartphone. A case study on two households demonstrated that it is possible to collect quantitative data on goods consumption and related waste generation on a per unit basis for individual households. The study suggested that the type of data collected can be relevant in a number of different research contexts: eco‐feedback; user‐centered research; living‐lab research; and life cycle impacts of household consumption. The approaches presented in this study are most applicable in the context of user‐centered or living‐lab research. For the other contexts, alternative data sources (e.g., retailers and producers) may be better suited to data collection on larger samples, though at a lesser level of detail, compared with the two data collection approaches devised and evaluated in this study.  相似文献

BackgroundOver 650 million people worldwide lack access to safe water supplies, and even among those who have gained access to ‘improved’ sources, water may be seasonally unreliable, far from homes, expensive, and provide insufficient quantity. Measurement of water access at the level of communities and households remains crude, and better measures of household water insecurity are urgently needed to inform needs assessments and monitoring and evaluation. We set out to assess the validity of a quantitative scale of household water insecurity, and to investigate (1) whether improvements to community water supply reduce water insecurity, (2) whether water interventions affect women’s psychological distress, and (3) the impacts of water insecurity on psychological distress, independent of socio-economic status, food security, and harvest quality.ConclusionThese results contribute to the construct validity of our water insecurity scale, and establish our approach to measuring water insecurity as a plausible means of evaluating water interventions. Improvements to community water supplies were effective in reducing household water insecurity, but not psychological distress, in this population. Water insecurity was an important predictor of psychological distress. This study contributes to an emerging literature on quantitative assessment of household water insecurity, and draws attention to the potential impact of improved access to water on women’s mental well-being.  相似文献

The European Green Deal and the German Resource Efficiency Programme both aim at decoupling resource consumption and associated environmental burdens from economic growth. Monitoring the progress of such policies requires robust estimates of environmental pressures and impacts, both from a domestic and a footprint perspective. Building on the life cycle assessment-based consumption footprint (CoF) indicator, developed by the European Commission Joint Research Centre, we assess the environmental impacts of Germany's consumption in the areas of food, mobility, housing, household goods, and appliances during the period 2010–2018. A comparison between European and national consumption statistics revealed some differences in terms of data composition, granularity, consumption intensities, and calculated environmental impacts. Using national data sources results in slightly lower environmental impacts (e.g., due to differences in the assessment scope of national statistics) and requires some data preparation to match the CoF indicator. Emerging consumption trends can be highlighted using national data. Both data sources converge on main trends: Germany transgresses the safe operating space for several impact categories, with consumption of food, household goods, and mobility being the main drivers. Domestic impacts have decreased over time at the expense of outsourcing environmental pressures and impacts to other countries. The CoF indicator could complement resource monitoring frameworks and might be further aligned to the national context using country-level consumption statistics and life cycle inventory data.  相似文献

Bringing about more sustainable consumption patterns is an important challenge for society and science. In this article the concept of household metabolism is applied to analyzing consumption patterns and to identifying possibilities for the development of sustainable household consumption patterns. Household metabolism is determined in terms of total energy requirements, including both direct and indirect energy requirements, using a hybrid method. This method enables us to evaluate various determinants of the environmental load of consumption consistently at several levels—the national level, the local level, and the household level.
The average annual energy requirement of households varies considerably between the Netherlands, the United Kingdom, Norway, and Sweden, as well as within these countries. The average expenditure level per household explains a large part of the observed variations. Differences between these countries are also related to the efficiency of the production sectors and to the energy supply system. The consumption categories of food, transport, and recreation show the largest contributions to the environmental load. A comparison of consumer groups with different household characteristics shows remarkable differences in the division of spending over the consumption categories.
Thus, analyses of different types of households are important for providing a basis for options to induce decreases of the environmental load of household consumption. At the city level, options for change are provided by an analysis of the city infrastructure, which determines a large part of the direct energy use by households (for transport and heating). At the national level, energy efficiency in production and in electricity generation is an important trigger for decreasing household energy requirements.  相似文献

The highland forests of Madagascar are home to some of the world''s most unique and diverse flora and fauna and to some of its poorest people. This juxtaposition of poverty and biodiversity is continually reinforced by rapid population growth, which results in increasing pressure on the remaining forest habitat in the highland region, and the biodiversity therein. Here we derive a mathematical expression for the subsistence of households to assess the role of markets and household demography on deforestation near Ranomafana National Park. In villages closest to urban rice markets, households were likely to clear less land than our model predicted, presumably because they were purchasing food at market. This effect was offset by the large number of migrant households who cleared significantly more land between 1989–2003 than did residents throughout the region. Deforestation by migrant households typically occurred after a mean time lag of 9 years. Analyses suggest that while local conservation efforts in Madagascar have been successful at reducing the footprint of individual households, large-scale conservation must rely on policies that can reduce the establishment of new households in remaining forested areas.  相似文献

Farmers’ maintenance of agrobiodiversity is fundamental to global food security, particularly in a world increasingly affected by climate change. Biodiversity helps to buffer agroecosystems from stresses like climatic variability, and the crop genetic diversity conserved with biodiverse agroecosystems is critical for plant breeding both locally and globally. Yet, despite these benefits, few studies have directly assessed the implications of household–level agrobiodiversity maintenance on household food security. Drawing on survey data collected in Sri Lanka’s Hambantota District, we evaluated the plant diversity maintained by small–scale farming households in both homegardens and crop fields and determined the relationships between this diversity and their households’ food security. We also considered how a suite of additional demographic, household, community, and farm characteristics relate to both the plant diversity maintained by a household and their food security. Similar to previous studies, the age of the agricultural decision-maker and the age and size of households’ homegardens positively correlated with the overall species richness of farming systems. Older homegardens were also identified to be more evenly distributed in their species abundance, and market–oriented households had significantly higher species richness but lower Shannon Indices. Most notably, household socioeconomic status and material wealth were important to both agrobiodiversity maintenance and household food security, while no significant relationships between species richness and food security measures were detected. These findings suggest that effort aiming to increase the food security of small–scale farming households in Sri Lanka, and elsewhere, should target those farming households with a paucity of socioeconomic assets, as these households lack both agroecological and economic resources to overcome shocks, such as those associated with climate change.  相似文献

In order to influence global policy effectively, conservation scientists need to be able to provide robust predictions of the impact of alternative policies on biodiversity and measure progress towards goals using reliable indicators. We present a framework for using biodiversity indicators predictively to inform policy choices at a global level. The approach is illustrated with two case studies in which we project forwards the impacts of feasible policies on trends in biodiversity and in relevant indicators. The policies are based on targets agreed at the Convention on Biological Diversity (CBD) meeting in Nagoya in October 2010. The first case study compares protected area policies for African mammals, assessed using the Red List Index; the second example uses the Living Planet Index to assess the impact of a complete halt, versus a reduction, in bottom trawling. In the protected areas example, we find that the indicator can aid in decision-making because it is able to differentiate between the impacts of the different policies. In the bottom trawling example, the indicator exhibits some counter-intuitive behaviour, due to over-representation of some taxonomic and functional groups in the indicator, and contrasting impacts of the policies on different groups caused by trophic interactions. Our results support the need for further research on how to use predictive models and indicators to credibly track trends and inform policy. To be useful and relevant, scientists must make testable predictions about the impact of global policy on biodiversity to ensure that targets such as those set at Nagoya catalyse effective and measurable change.  相似文献

As major drivers of economy, households induce a large share of worldwide environmental impacts. The variability of local consumption patterns and associated environmental impacts needs to be quantified as an important starting point to devise targeted measures aimed at reducing household environmental footprints. The goal of this article is the development and appraisal of a comprehensive regionalized bottom‐up model that assesses realistic environmental profiles for individual households in a specific region. For this purpose, a physically based building energy model, the results of an agent‐based transport simulation, and a data‐driven household consumption model were interlinked within a new probability‐based classification framework and applied to the case of Switzerland. The resulting model predicts the demands in about 400 different consumption areas for each Swiss household by considering its particular circumstances and produces a realistic picture of variability in household environmental footprints. An analysis of the model results on a municipal level reveals per‐capita income, population density, buildings' age, and household structure as possible drivers of municipal carbon footprints. While higher‐emission municipalities are located in rural areas and tend to show higher shares of older buildings, lower‐emission communities have larger proportions of families and can be found in highly populated regions by trend. However, the opposing effects of various variables observed in this analysis confirm the importance of a model that is able to capture regional distinctions. The overall model constitutes a comprehensive information base supporting policymakers in understanding consumption patterns in their region and deriving environmental strategies tailored to their specific population.  相似文献

This work aims to contribute to the number of urban metabolism case studies using a standardized methodology. An economy‐wide material flow analysis (EW‐MFA) was conducted on the Metropolitan Municipality of Cape Town (South Africa) for the year 2013, using the Eurostat framework. The study provides insights into the city's metabolism through various indicators including direct material input (DMI), domestic material consumption (DMC), and direct material output (DMO), among others. In order to report on the uncertainty of the data, a set of data quality indicators originating from the life cycle assessment literature was used. The results show that domestic extraction involves significant quantities of non‐metallic minerals, and that imports consist primarily of biomass and fossil fuels. The role of the city as a regional hub is also made clear from this study and illustrated by large quantities of food and other materials flowing through the city on their way to or from international markets. The results are compared with indicators from other cities and with previous metabolism work done on Cape Town. To fully grasp the impacts of the city's metabolism, more work needs to be done. It will be necessary to understand the upstream impact of local consumption, and consumption patterns should be differentiated on a more nuanced level (taking into account large differences between household income levels as well as separating the metabolism of industry and commerce from residential consumption).  相似文献

Background

Malaria imposes significant costs on households and the poor are disproportionately affected. However, cost data are often from quantitative surveys with a fixed recall period. They do not capture costs that unfold slowly over time, or seasonal variations. Few studies investigate the different pathways through which malaria contributes towards poverty. In this paper, a framework indicating the complex links between malaria, poverty and vulnerability at the household level is developed and applied using data from rural Kenya.

Methods

Cross-sectional surveys in a wet and dry season provide data on treatment-seeking, cost-burdens and coping strategies (n = 294 and n = 285 households respectively). 15 case study households purposively selected from the survey and followed for one year provide in-depth qualitative information on the links between malaria, vulnerability and poverty.

Results

Mean direct cost burdens were 7.1% and 5.9% of total household expenditure in the wet and dry seasons respectively. Case study data revealed no clear relationship between cost burdens and vulnerability status at the end of the year. Most important was household vulnerability status at the outset. Households reporting major malaria episodes and other shocks prior to the study descended further into poverty over the year. Wealthier households were better able to cope.

Conclusion

The impacts of malaria on household economic status unfold slowly over time. Coping strategies adopted can have negative implications, influencing household ability to withstand malaria and other contingencies in future. To protect the poor and vulnerable, malaria control policies need to be integrated into development and poverty reduction programmes.  相似文献

This paper presents results from a year-long household survey in which the aquatic resource collection and consumption activities of 240 households across Lao PDR were studied to assess the diversity of species used, their role in household food security and the overall importance of ricefield habitats in this respect. Results show that aquatic biodiversity, under threat in rice-based ecosystems, plays a larger role in household consumption than previous estimates. More than 90 % of these resources are collected by households themselves and the greatest quantities from ricefield habitats. This seasonal aquatic environment is therefore the principal habitat from which households acquire aquatic animals, both to eat fresh and to process and store for use during nutritionally vulnerable times of year. The importance of these habitats therefore goes far beyond their use for rice production and this multi-functionality needs to be understood and addressed in agricultural, conservation and food security policy.  相似文献

There are different ways and strategies to reduce the environmental impacts caused today. One starting point for reducing the environmental impacts of today is the private consumption. Finally, all goods and services provided in a country contribute to fulfil the needs and demands of consumers. Several national and international initiatives therefore aim for a considerable reduction of the environmental impacts of consumption patterns. The 49th LCA Discussion Forum analysed the present consumption patterns of households and their consequent environmental impacts. Based on this, potentials for a reduction of the environmental impacts were identified and discussed. In this context, the possible applications, advantages and drawbacks of the life cycle assessment (LCA) methodology were analysed. National and international speakers provided qualified insights on the topic. The 49th Discussion Forum concentrated on different aspects of sustainable consumption patterns. The focus lay on private households and the environmental impacts caused by their consumption patterns. In the first session, the idea of the “2000-Watt society” was introduced as an example of a concept of a “sustainable lifestyle”. Another way of analysing the total impacts is the consumption perspective introduced in a second presentation. Based on an analysis of environmental impacts due to final demand of Swiss households, different measures for a reduction of environmental impacts were proposed and analysed. The second session examined similar activities in Germany. The short presentations covered the communication of LCA results. The third session focused on web-based eco-calculators. In the last session, two scientific inputs were given on the modelling of household consumption patterns and on the impact of rebound effects on the environmental impact of private consumption. The most important consumption domains are nutrition, mobility and energy use in households. Apart from different modelling approaches and boundary conditions, the majority of the presentations showed that today’s consumption patterns in Switzerland and Germany are far away from a sustainable level. Considerable reduction measures are needed in order to reach this goal. Eco-calculators and similar tools provide an effective way to raise customer awareness. In general, it is very important to communicate LCA results in a simple, clear and transparent way.  相似文献
