The zinc nutritional status in south Koreans was established by evaluation of zinc, calcium and phytate intakes, the molar ratio of phytate: zinc, and the millimolar ratio of phytate × calcium: zinc. The intakes of iron and magnesium were also estimated. Sampling was designed so that it was representative of the national population. Two-day food records were used for the calculation of nutrient intakes, using food consumption data from the 1995 National Nutrition Survey (’95NNS) for South Korea. Daily intakes of zinc and calcium were estimated to be 10.1 mg/d and 426.5 mg/d, respectively, and those of iron and magnesium were 15.2 mg/d and 268.0 mg/d, respectively. The estimated daily phytate intake was 1676.6 mg/d. The ratio of phytate: zinc was 15.9 mol/d and that of phytate × calcium: zinc was 168.9 mmol/d. The ratio in millimoles per 4.2 MJ (1000 kcal) of phytate × calcium: zinc was 91.8. The major food groups for zinc intake were meat, poultry and their products (43%), and cereals and grain products (18%). Sixty-two percent of zinc was from animal food sources. Cereal and grain products supplied most of the phytate intake (46%) followed by seasonings, fruits, and legumes and their products. The major food source of phytate was rice (39%). The results of the study raise concern about the suboptimal zinc status in relation to the Western diet.  相似文献

Evidence suggests that rats can tolerate a dietary phytate/Zn molar ratio greater than 15 if the dietary Zn concentration is high. High dietary Ca exacerbates the effect of phytic acid on Zn utilization by rats. In a short term (15 d) balance trial with adult men, we observed slightly greater Zn balance when whole compared to dephytinized wheat bran was consumed (molar ratios 12 and 1.2, respectively). There was, however, greater fecal excretion of Zn during the first 5 d whole bran was consumed. In a second study, Na phytate was the major source of phytic acid and Zn balance was less when the phytate/Zn molar ratio was greater than 16 compared to 4. The difference was not significant, however, and there was evidence of physiological adjustments to maintain homeostasis when the high ratio diet was consumed. Mean Zn intake averaged 17 mg (0.26 mmole) and 11 mg (0.17 mmole) daily for the bran and Na phytate studies, respectively. The level of Zn intake may influence the response of humans to varying phytate/Zn ratios. Comparison of isotope retention studies and the balance data is discussed. Some information on the relationship of dietary Ca to the phytate/Zn effect in human diets is gathered from current literature. The phytate/Zn molar ratio is a useful index of Zn bioavailability.  相似文献

Millimolar ratios of phytate/Zn, Ca x phytate/Zn, and Ca x phytate/Zn per 4.2 MJ were calculated from 3-d weighed-food records collected from 62 male (M) (mean age: 58 +/- 7 mo [mean +/- SD]) and 44 female (F) (mean age: 58 +/- 6 mo) preschool children from Southern Ontario. Food-composition values for phytate were based on laboratory analysis and the literature. No gender differences existed for median millimolar ratios of phytate/Zn (median: M, 5.3; F, 5.3), and Ca x phytate/Zn per 4.2 MJ (M, 68.1; F, 59.5), but median intakes of phytate (M, 399; F, 333 mg/d) and median millimolar ratios of Ca x phytate/Zn (median: M, 102.1; F, 72.3; p less than 0.01) were higher for boys than for girls. Of the children, only two (1M, 1F) and 22 (17 M, 5F) had millimolar ratios of phytate/Zn and Ca x phytate/Zn per 4.2 MJ, respectively, that were above critical values. Millimolar ratios of Ca x phytate/Zn (p = 0.06) and Ca x phytate/Zn per 4.2 MJ (p = 0.05) were higher in boys with hair zinc less than 1.07 mumol/g v greater than or equal to 1.07 mumol/g. Analysis of variance showed that height was influenced by an interaction between millimolar ratios of Ca x phytate/Zn per 4.2 MJ and sex (p = 0.0007), when age and midparent height were treated as covariates. Results suggest that dietary Ca x phytate/Zn millimolar ratios, when expressed per 4.2 MJ, influenced the zinc nutriture of these Southern Ontario boys.  相似文献

Epidemiological data suggest at least one in five humans are at risk of zinc deficiency. This is in large part because the phytate in cereals and legumes has not been removed during food preparation. Phytate, a potent indigestible ligand for zinc prevents it's absorption. Without knowledge of the frequency of consumption of foods rich in phytate, and foods rich in bioavailable zinc, the recognition of zinc deficiency early in the illness may be difficult. Plasma zinc is insensitive to early zinc deficiency. Serum ferritin concentration  20 μg/L is a potential indirect biomarker. Early effects of zinc deficiency are chemical, functional and may be “hidden”. The clinical problem is illustrated by 2 studies that involved US Mexican-American children, and US premenopausal women. The children were consuming home diets that included traditional foods high in phytate. The premenopausal women were not eating red meat on a regular basis, and their consumption of phytate was mainly from bran breakfast cereals. In both studies the presence of zinc deficiency was proven by functional responses to controlled zinc treatment. In the children lean-mass, reasoning, and immunity were significantly affected. In the women memory, reasoning, and eye-hand coordination were significantly affected. A screening self-administered food frequency questionnaire for office might help caregiver's identify patients at risk of zinc deficiency.  相似文献

BackgroundComplementary feeding of breastfed infants with foods high in bioavailable zinc (Zn) can help meet physiological requirements for Zn. Some infant cereals contain high concentrations of phytic acid (PA) and calcium (Ca) that may reduce absorbable Zn.ObjectivesThis study measured PA, Zn and Ca concentrations in selected infant cereals sold in Canada and investigated the effects of dietary PA and Ca at concentrations present in infant cereals on Zn bioavailability in rats.Methods and resultsMale Sprague-Dawley rats (36-day old) were fed a control diet containing normal Zn (29.1 mg/kg) and Ca (4.95 g/kg) or six test diets (n = 12/diet group). Test diets were low in Zn (8.91–9.74 mg/kg) and contained low (2.16–2.17 g/kg), normal (5.00–5.11 g/kg) or high (14.6–14.9 g/kg) Ca without or with added PA (8 g/kg). After 2 weeks, rats were killed and Zn status of the rats was assessed. PA, Zn and Ca concentrations in infant cereals (n = 20) differed widely. PA concentrations ranged from undetectable to 16.0 g/kg. Zn and Ca concentrations ranged from 7.0–29.1 mg/kg and 0.8–13.4 g/kg, respectively. The [PA]/[Zn] and [PA × Ca]/[Zn] molar ratios in infants cereals with detectable PA (16 of 20 cereals) ranged from 22–75 and 0.9–14.9 mol/kg, respectively, predicting low Zn bioavailability. Body weight, body composition (lean and fat mass), right femur weight and length measurements and Zn concentrations in serum and femur indicated that diets higher in Ca had a more pronounced negative effect on Zn status of rats fed a PA-supplemented diet. Addition of PA to the diet had a greater negative effect on Zn status when Ca concentration in the diet was higher.ConclusionThese results show that, in rats, higher concentrations of dietary Ca and PA interact to potentiate a decrease in bioavailable Zn and may suggest lower Zn bioavailability in infant cereals with higher PA and Ca concentrations.  相似文献

The effect of phytate reduction, fat extraction, and addition of Ca in the form of skim or whole milk on Ca and Zn bioavailability from a breakfast containing bran muffins was studied in vitro and in vivo. Ca and Zn solubility were measured after in vitro simulated peptic and pancreatic digestion under pH conditions resembling those in the human GI tract. Absorption of Ca and Zn was measured in rats fed test meals tagged with 45Ca and 65Zn. Radioactivity in the femur and liver relative to levels found in rats injected with the isotopes served as criteria for 45Ca and 65Zn absorption, respectively. In vitro solubility was significantly depressed by the presence of phytate and inversely correlated with the phytate:Zn and the (phytate)(Ca):(Zn) ratios. Ca solubility was enhanced by extraction of fat and markedly increased by reduction in both fat and phytate. None of these effects was seen in vivo. However, 65Zn absorption was significantly decreased by fat extraction and phytate reduction although this treatment increased in vitro Zn solubility. Possible reasons for these discrepancies are discussed.  相似文献

This study was conducted to survey the levels of cadmium (Cd) and lead (Pb) in the main foods of Isfahan province (central Iran). The rice grains and wheat breads were collected from Isfahan city and villages around the Isfahan and Mobarakeh Steel companies. The food samples were wet-ashed by heating in the presence of concentrated nitric acid and hydrogen peroxide. The concentrations of Cd and Pb were determined by inductively coupled plasma-optical emission spectrometer (ICP-OES). The potential exposure risks were then estimated. Levels of Cd in the rice grains and Pb in the investigated foods (except Sangak beard) were above the maximum levels as set by the Codex Alimentarius and National standards of Iran. The wheat bread samples in Isfahan city and Mobarakeh Steel regions presented higher estimated weekly intake (EWI) of Pb (40.93 and 35.35 µg kg–1 body weight, respectively) compared to other foods. The EWI for Cd and Pb in most samples was considerably above than the provisional tolerable weekly intake. In most cases, the target hazard quotients values were above one and consequently the consumption of foods in the investigated regions was a potentially serious health risk caused by exposure to the crops contaminated with Cd and Pb.  相似文献

The secondary structure of proteins in legumes, cereals, milk products and chicken meat was studied by diffuse reflectance infrared spectroscopy in the region of the amide I band. Major secondary structure components ( β-sheets, random coil, α-helix, turns), together with the low- and high-frequency side contributions, were resolved and related to the in vitro digestibility behaviour of the different foods. A strong inverse correlation between the relative spectral weights of the β-sheet structures and in vitro protein digestibility values was measured. Structural modifications in legume proteins induced by autoclaving were monitored by the changes in the amide I spectra. The results indicate that the β-sheet structures of raw legume proteins and the intermolecular β-sheet aggregates, arising upon heating, are primary factors in adversely affecting the digestibility.  相似文献

The organic phosphate pool of some Camargue sediments (South of France) was studied, after removal of inorganic phosphate, with Ca-NTA/dithionite (Fe bound phosphate) and Na-EDTA (Ca bound phosphate). The organic phosphate was divided into an acid soluble organic phosphate fraction (ASOP) and a residual organic phosphate fraction (ROP). The extraction of organic matter with 2.0 M NaOH (90 °C) from ROP yielded considerable quantities of Org-P. In this extract the presence of phytate (inositol hexa phosphate) could be demonstrated using phytase to hydrolyse the phytate. Phytate was shown to account for a considerable part of organic phosphate in sediments of freshwater marsh sediments as well as in the sediment of the brackish/salt water lake ‘Etang de Vaccares’. In laboratory experiments phytate was found to precipitate with all poly-valent cations tested. Furthermore, phytate was found to be strongly adsorbed onto Fe(OOH), which may explain its accumulation and its stability in sediments. Considerable quantities of ASOP were found; the chemical stucture of this pool remains unknown.  相似文献

The content of the minor class of phospholipids, N-acylphosphatidylethanolamines (NAPEs) in mature seeds of cultivated plants: kidney bean (Phaseolus vulgaris L.), soybean (Glycine max (L.) Merr.), soft spring wheat (Triticum aestivum L. emend. Fiori et Paol), barley (Hordeum vulgare L.), and oat (Avena sativa L.), and the products of technological processing of grain cultures (floor, bran) was studied. Reliable NAPE identification was performed by a comparison of their chromatographic mobility with the marker NAPE sample from wheat flour and synthetic phosphatidylmethanol, and also using specific reagents. Kidney bean cv. Shchedraya seeds contained the highest amount of NAPEs. In legumes, the content of NAPEs varied not only in different species but also in different cultivars of a single species. In cereals, the highest NAPE content was detected in the barley seeds and best quality wheat flour. The content of NAPEs in cereal seeds was less variable than in legumes. NAPE quantification showed that accumulation of this phospholipid class occurred in parallel with accumulation of total phospholipids in seeds. The relation between NAPE content and the processes of seed development and their lipid composition is discussed. The seeds and products best suitable for NAPE isolation are recommended.  相似文献

Zinc (Zn) is essential for swine and poultry and native Zn concentrations in feedstuffs are too low to meet their Zn requirement. Dietary Zn bioavailability is affected by phytate, phytase and Zn supplemented in organic form is considered as more bioavailable than inorganic sources. A meta-analysis using GLM procedures was processed using broiler and piglet databases to investigate, within the physiological response of Zn, (1) the bioavailability of inorganic and organic Zn sources (Analysis I); (2) the bioavailability of native and inorganic Zn dependent from dietary phytates, vegetal and supplemental phytase activity (Analysis II). Analysis I: the bioavailability of organic Zn relative to inorganic Zn sources ranged, depending on the variable, from 85 to 117 never different from 100 (P > 0.05). The coefficients of determination of the regressions were 0.91 in broilers and above 0.89 in piglets. Analysis II: in broilers, bone Zn was explained by supplemental Zn (linear and quadratic, P < 0.001) and by supplemental phytase (linear, P < 0.001). In piglets, the interaction between dietary Zn and phytates/phytases was investigated by means of a new variable combining dietary phytic phosphorus (PP) and phytase activity. This new variable represents the remaining dietary PP after its hydrolysis in the digestive tract, mainly due to phytase and is called non-hydrolyzed phytic phosphorus (PPNH). Bone Zn was increased with native Zn (P < 0.001), but to a lower extent in high PP or low phytase diets (ZNN × PPNH, P < 0.001). In contrast, the increase in bone zinc in response to supplemental Zn (P < 0.001) was not modulated by PPNH (P > 0.05). The coefficients of determination of the regressions were 0.92 in broilers and above 0.92 in piglets. The results from the two meta-analyses suggest that (1) broilers and piglets use supplemented Zn, independent from Zn source; (2) broiler use native Zn and the use is slightly enhanced with supplemental phytase; (3) however, piglets are limited in the use of native Zn because of the antagonism of non-hydrolyzed dietary phytate. This explains the higher efficacy of phytase in improving Zn availability in this specie.  相似文献

Total globulins from embryos and endosperms of barley, wheat,rye, and oats were separated by SDS-PAGE under reducing andnon-reducing conditions. The preparations from embryos of allfour cereals contained major groups of bands with Mr's of 50-60000,which were not affected by reduction. These have been characterizedpreviously from oats and shown to correspond to subunits ofthe 7S storage globulin. Immunochemical relationships betweenthese bands (and others with Mr's between 40000 and 70000) weredemonstrated by immunodiffusion and ‘Western Blotting’using antiserum raised against the major subunits of the oat7S globulins. The 7S globulins were also prepared from hand-dissectedembryos of the four cereals using sucrose density ultracentrifugation.Their amino acid compositions were broadly similar, but differedfrom those of the 7S vicilins of legumes. Background and aims Organic P comprises 30–80 %of the total P in most agricultural soils. It has been proventhat chickpea facilitates P uptake from an organic P sourceby intercropped wheat. In this study, acid phosphatase excretedfrom chickpea roots is quantified and the contribution of acidphosphatase to the facilitation of P uptake by intercroppedmaize receiving phytate is examined. • Methods For the first experiment using hydroponics, maize(Zea mays ‘Zhongdan No. 2’) and chickpea (Cicerarietinum ‘Sona’) were grown in either the sameor separate containers, and P was supplied as phytate, KH2PO4at 0·25 mmol P L–1, or not at all. The second experimentinvolved soil culture with three types of root separation betweenthe two species: (1) plastic sheet, (2) nylon mesh, and (3)no barrier. Maize plants were grown in one compartment and chickpeain the other. Phosphorus was supplied as phytate, Ca(H2PO4)2at 50 mg P kg–1, or no P added. • Key results In the hydroponics study, the total P uptakeby intercropped maize supplied with phytate was 2·1-foldgreater than when it was grown as a monoculture. In the soilexperiment, when supplied with phytate, total P uptake by maizewith mesh barrier and without root barrier was 2·2 and1·5 times, respectively, as much as that with solid barrier.In both experiments, roots of both maize and chickpea suppliedwith phytate and no P secreted more acid phosphatase than thosewith KH2PO4 or Ca(H2PO4)2. However, average acid phosphataseactivity of chickpea roots supplied with phytate was 2–3-foldas much as maize. Soil acid phosphatase activity in the rhizosphereof chickpea was also significantly higher than maize regardlessof P sources. • Conclusions Chickpea can mobilize organic P in both hydroponicand soil cultures, leading to an interspecific facilitationin utilization of organic P in maize/chickpea intercropping.  相似文献

The fluoride (F), calcium (Ca), magnesium (Mg), zinc (Zn), copper (Cu), and phosphorus (P) content in potable water and food samples (cereals, pulses, and vegetables) from endemic and nonendemic villages for fluorosis were analyzed. It was found that the F content in water was significantly higher (p<0.01) in endemic villages (4.20±1.6 ppm) than control villages (0.63±0.15 ppm), whereas the Ca, Cu, and Mg contents were found to be significantly lower (p<0.05) in endemic villages compared to control villages. However, there was no significant difference in Zn and P contents between the villages. Foods (cereals, pulses, and vegetables) grown in endemic villages contained significantly higher (p<0.01) fluoride content as compared to control villages. There was no significant difference in Ca, Mg, P, and Zn contents in food grown in endemic and control villages. Copper content in cereals (p<0.05), pulses (p<0.01), and vegetables (p<0.01) in endemic villages was found significantly higher as compared to control villages. The overall prevalence of dental fluorosis in six endemic villages was 97.4% in boys and 96% in girls, which was significantly higher (p<0.01) than that of control villages, where it was 10.5% in boys and 8.3% in girls. The prevalence of dental fluorosis was positively correlated (r=0.125, p<0.01) to fluoride and negatively correlated to Ca and Cu content in drinking water in endemic villages.  相似文献

The authors present a new and sensitive method for the determination of T-2- und HT-2 Toxin in cereals and cereal products in the low ppb level. A representative part of the cereal sample is extracted with a mixture of methanol-water (90:10) and the extract is cleaned on the commercially available immunoaffinity column T-2test™ (IAC), eluted with methanol, derivatized by pentafluorpropionic anhydride (PFPA) and measured on a GC-ECD. The method has been successfully validated on wheat, rye and oats. The recovery rates with wheat and rye endowed on a level of 50 ppb and with 85 ppb naturally contaminated oats were 71–115% with a coefficient of variation of 5.7–19.5%. The detection limits of the method with a signal to noise level of 3:1 were 1.5–2.3 μg/kg for HT-2 and 1.1–1.7 μg/kg for T-2 toxin. A survey of aflatoxin contamination in selected Colombian foods was conducted over a 12-month period on a total of 248 samples. Samples were collected in supermarkets, retail stores and stock centres and were grouped into five categories: (1) corn and corn products, (2) cereal grains, (3) rice and rice products, (4) legume seeds; and (5) snacks and breakfast cereals. Aflatoxins were identified and quantitated using a liquid chromatographic technique with a limit of detection of 1 ng/g for each aflatoxin. Aflatoxins were detected in 14 of 109 samples of corn and corn products, 4 of 40 samples of rice and rice products, 2 of 30 samples of legume seeds, and 2 of 11 samples of snacks and breakfast cereals. None of the cereal grains samples analysed contained detectable levels of aflatoxins. Twelve of the total of 22 positive samples exceeded the maximum tolerable level of aflatoxin B1 adopted in most countries (5 ng/g); 10 of these 12 samples corresponded to corn and corn products. The results of the present study indicate that aflatoxin B1 contamination in certain foods in Colombia is a major public health concern. Continuous monitoring of aflatoxin B1 levels in Colombian foods is advised.  相似文献

Myo-inositol-1,2,3,4,5,6-hexakisphosphate, also known as phytate, is a natural metal chelate present in cereals, an important feedstock worldwide. This article reports the characterization of three metal storage model complexes: the homometallic Mn(II) myo-inositol-1,2,3,4,5,6-hexakisphosphate (IP6), the heterometallic Zn(II), Mn(II) analogue Na4MnZn4(C6H6O24P6) x (NO3)2 x 8H2O (MnZn4IP6) and the homometallic Zn(II) metal complex Na3Zn5(C6H6O24P6)OH x 9H2O (Zn5IP6). The techniques of high-resolution 23Na, 13C and 31P NMR, electron paramagnetic resonance (EPR) and X-ray photoelectron spectroscopy (XPS) were applied in this study. The complexation of Zn(II) and Mn(II) by phosphate groups of IP6 is demonstrated by NMR and XPS results. 13C NMR results show a conformation for IP6 consisting of five equatorial phosphate groups to one axial group showing only one chemical environment for Zn and two for Mn, when characterized by XPS and EPR, in both Mn complexes. These results support, for the first time, a probable supramacromolecular structure for phytate complexes of transition metals. Based on the similarity between the EPR spectra of wheat seeds and that of the MnZn4IP6 compound, the manganese storage centers in wheat grains can be assigned to similar heterometallic phytate complexes.  相似文献

Heavy metals in biological samples: nails, teeth, and hair were examined during 1991–1993. Investigations of biological samples (hairn=249 samples, teethn=145, nailsn=80 samples) were provided for inhabitants of selected towns in Beskid Śląski. The towns are small mountain towns in southern Poland: Wista, Szczyrk, Istebna, Koniaków, and Jaworzynka. The analysis of ANOVA and MANOVA variances were used for biological samples in the context of age, sex, and type of samples for 12 elements (Pb, Cd, Cr, Zn, Fe, Cu, Mn, Ni, Co, Ca, Na, and K). The matrix correlation and cluster analysis were applied to explain the behavior of metals in human hair, teeth, and nails.  相似文献

Aflatoxin contamination has been well known as a world-wide health-threatening problem in tropical countries including Indonesia. This research was undertaken to determine the degree of aflatoxin contamination in different Indonesian foodstuffs. A preliminary survey was carried out to evaluate the level of total aflatoxin (AfT) and aflatoxin B1 (AfB1) contamination of baby foods, peanut products, and corn products, which were purchased from traditional markets and supermarkets in Indonesia during the year 2001-2002. Eighty two peanut products, 12 baby foods products, and 11 corn products from different brands were analysed for AfT and AfB1 using the Enzyme-Linked Immunosorbent Assay (ELISA) method. The results indicate that, of the brands analysed, 35% of the peanut products were contaminated with aflatoxins at various levels (range 5 to 870 μg/kg). Peanut-chilli sauces had the highest percentage of AfT contamination 9/12 (75%), which was followed by traditional snacks 5/11 (45%), peanut butter 4/11 (40%), flour egg coated peanut 6/16 (37%), and peanut cake 3/10 (30%). Fried peanuts and roasted peanut were found to contain aflatoxin at relatively lower percentages of 9% and 8%, respectively. From the 12 analysed baby food samples, on the other hand, no sample was found to be contaminated with aflatoxins. Two of 11 samples (18%) of corn based products were contaminated with AfT, ranging between 5.8 and 12.4 μg/kg. Additionally, 30 selected samples in different concentration ranges were further analysed to verify the correlation between ELISA and HPLC techniques and results were compared.  相似文献
