Abstract:A new definition of the term “biopolymer hydration,” based on thermodynamic characteristics of water evaporation from biological preparations, is proposed. A new method for investigation of bound water, based on precise measurement of the enthalpy of water evaporation from the sample, using differential scanning micro-calorimetry, is developed. Adequacy of the new approach for estimating the water state in biopolymers and at various levels of structural organization of biosystems is demonstrated by study of collagen fibers as an example.
