云南地方特产酒的氨基酸营养

摘    要:本文测定分析了十一种云南特产酒中十七种氨基酸的含量。十一种酒中主要含鲜甜、药效氨基酸,其中核桃酒、松茸酒、乌鸡宝酒在氨基酸总量、必需、半必需氨基酸含量、赖氨酸含量、鲜甜、药效氨基酸总量都占前三位。

Amino Acids in Yunnan Special Local Wine
Abstract:17 amino acids in different Yunan special local wines were determined by Hitachi 835-50 amino acid auto-analyser. The results indicaled that the delicious and drug-effective amino acids were the main components, and walnut wine, matsutake wine, and black cock wine were the top three in the contents of total amino acid, essential, semi-essential amino acids, Lys, delicious amino acidand the amino acids with pharmaceutical effect.
