Abstract: | A time-honored but increasingly less common method of making a molasses from sweet sorghum,Sorghum bicolor, on a Tennessee farm is described. The thin, greenish juice extracted from the stalks is skillfully boiled and attended with specially designed equipment, resulting in a desirable sweet, golden product. |
