Abstract: | 1H and 31P continuous wave and spin-echo NMR measurements have been made on lecithin-water mixtures as a function of water content at 20 °C. An analysis of the data demonstrates the existence of two water environments, lecithin bound and free. Conclusions are presented concerning the stoichiometry and kinetics of the binding. The results indicate that six molecules of water are bound to one lecithin molecule and the lifetime of the bound water is 6·10−5±3·10−5 s. |
