| 摘 要： | 通过泥沙类杂质和菌落总数的分析测定对南京市场收集的15种(其中散称的6种、袋装的9种)葡萄干进行了卫生状况调查,结果葡萄干泥沙类杂质含量约0.19%,葡萄干原样菌落总数平均约3.9×103CFU/g,表明市场上的葡萄干直接食用是不卫生。经自来水20 s短时间高压冲洗或继而再淋无菌水后测定,结果表明自来水高压冲洗后最高除菌率为92.0%,无菌水冲洗后最高除菌率为98.3%,样品葡萄干的菌落总数都能降到1 000以下。这方法生产上简单可行,对提高市场葡萄干质量具有重要意义。

| Abstract: | The hygienic status of 15 samples of raisin from Nanjing was investigated through sediment determination and colony count.The results show that the raisins averagely contain 0.19% of sediment impurities,and total bacterial count 3.9×10^3 CFU/g.After high pressure washing with tap water in 20 s and then sprinkling sterile water,the highest degerming rate reached 92.0% and 98.3% respectively.This method is simple and feasible,and helpful to raisin quality improvement. |
