| Abstract: | Summary Lipase hydrolysis under water-limited conditions limits the hydrolysis of long chain (C20 above above) esters resulting in their accumulation in the acylglycerols. Hydrolysis of mustard oil under such conditions yield dierucin which can be easily isolated. |
