摘    要:蜂蜜饮品在蜂蜜用量为4%时感观指标最好;经0.22、0.45、0.65μm孔径滤膜过滤后样品澄清透明,可滤掉蜂蜜中较大分子的蛋白质等影响样品澄清的物质,同时一定程度起到膜除菌的作用;蜂蜜饮品不应通过加热的方式杀菌,以减少营养物质的损失;通过保质期试验,经0.65μm孔径滤膜可以保证样品的澄清度,结合无菌灌装及非加热杀菌...

Abstract:Perception index was the best as the amount of bee-honey used in the beverage at 4%.Filtration with filter membrane with aperture at 0.22,0.45,and 0.65 μm in diameter could filter away protein of macromolecule and other matter that affected the transparency of the sample and after the filtration the sample was clear and transparent,and at the same time it played the role of germ removal at a certain degree.Honey beverage should be not be sterilized by heating to reduce the nutrition.Shelf life experiment results showed that filter membrane with aperture at 0.65 μm could guarantee the trasparency of the sample,combined with the sterile filling and non-heating sterilization the shelf life of the product was as long as 12 months.
