| Abstract: | Summary The chemical structure of oligosaccharides produced by Zymomonas mobilis levansucrase (EC 2.4.1.10) was determined using enzymatic hydrolysis, mass spectroscopy, and 13C-NMR spectroscopy. The major oligosaccharide (98% of total oligomers) produced from transfructosylation reactions with -sucrose was identified as 1-kestose (O- -D-glucopyranosyl-(1 2)-O- -D-fructofuranosyl-(12)--D-fructofuranoside). |
