普鲁兰酶及其分泌相关蛋白的研究进展

摘    要:摘要:普鲁兰酶对于以淀粉为原料的食品加工以及生物能源等工业具有重要的作用。近年来对于该工业酶的开发已经不仅仅停留于简单的新菌种筛选过程,为了完成菌株的分子改造从而提高产量以及酶学性质,对其编码基因的调控及其分泌等相关蛋白的研究则显得尤为重要。本文对这一内容的研究进展进行了系统的综述。

Abstract:Due to its ability of hydrolyzing alpha-1,6-linkages, pullulanase plays a significant role in the industries where starch is used as raw material, including food processing and bioenergy. Exploitation of this enzyme focuses not only on screening novel strains, but also on its molecular structure as well as its secretion pathway and improvement of the properties. Therefore, researches on the gene regulation and the proteins involved in the secretory pathway seem especially important. This review introduced the advances in the study of these fields.
