Abstract: | Glucosyltransferase from Aureobasidium produced 212 mg ml-1 of glucosyl-oligosaccharides (panose: Glcα1→6Glcα1→4Glc 189 mg ml-1 and isomaltose: Glcα1→6Glc 23 mg ml-1) from maltose: Glcα1→4Glc at a high concentration (500 mg ml-1) and the efficiency of production was 42-4%. The enzymatic reaction from maltose to panose is reversible but that from panose to isomaltose is not. |
