| Abstract: | In this article, Lactic Acid Bacteria bacteriocin was introduced and classified, and some other characters of nisin-the most important Lactic Acid Bacteria bacteriocin were introduced,including molecule structure,physics and chemistry characters,inhibition activity,inhibition truth and inhetit control. Finally,the using and research direction of Lactic Acid Bacteria bacteriocin were simply summed up. |
