黑莓鲜果及其加工品的营养成分

摘    要:本文首次报道了黑莓引入南京后其果实和加工品的营养成分。结果表明:黑莓鲜果富含V_E,还含有较高的钾、锌、铁、硒等矿质元素以及γ-氨基丁酸。其加工品也都不同程度地保持了黑莓的营养特点。黑莓汁饮料和黑莓果酱值得大力开发。

Abstract:The nutrient constituents of fruits and products of blackberry in Nanjing are reported for the first time. It has been shown that blackberry fruits and products (concentrated juice,beverage,canned fruit and jam) are rich in various nutrient constituents,of which, vitamin E contents are the highest a-mong all cultivated and wild fruits and the contents of mineral elements Ca,Zn,Mg,Fe and Se are higher than those in most of cultivated and wild fruits. Blackberry fruit and products are considered to be excellent for nourishment and health protection. It is a suggestion that blackberry jam and juice should be made as a main product for its very rich vitamine E.
