Abstract: | This study was undertaken to determine the influence of dietary carbohydrate sources: wheat meal, bread meal, soluble corn starch, native potato starch and sorghum meal, on soluble protein, enzyme activity (aldolase) and glucose concentration in muscle and liver of European eels (Anguilla anguilla). There was less soluble protein in both muscle and liver of eels fed 30% wheat meal or bread meal than the other experimental groups. However, eels fed 30% bread meal or soluble corn starch had a higher glucose concentration in muscle and liver than the other experimental groups. High enzyme activity (aldolase) was found in the liver of eels fed 30% wheat meal, bread meal or soluble starch. |
