甘薯茎尖与常见叶菜类蔬菜氨基酸含量及组成的比较分析

摘    要:选用叶菜型甘薯茎尖和14种常见叶菜类蔬菜为材料,对比分析了氨基酸含量及组成。结果表明:甘薯茎尖含有18种氨基酸,种类齐全。氨基酸总量、人体必需氨基酸含量和儿童必需氨基酸含量均居第1位。甘薯茎尖的E/T值为39.50%,E/N值为0.65,符合理想蛋白质的要求。茎尖中各种人体必需氨基酸含量占氨基酸总量的比例(Val、Ile、Leu、Phe+Tyr、Lys、Thr)与1973年FAO/WHO修订的人体必需氨基酸含量模式谱基本一致,仅M et+Cys中度缺乏。甘薯茎尖中鲜味类、芳香族、甜味类氨基酸含量居第1位。

Abstract:The amino acid content and the composition of the vegetable sweet potato tips and 14 kinds of leaf vegetables were analyzed.The result indicated:(1) The vegetable sweet potato tips included 18 kinds of amino acids. The total quantity,the human body essential amino acid content and the child essential amino acid content all were the 1st.(2) The vegetable sweet potato tips E/T value was 39.50%,the E/N value was 0.65.(3)The percent of each kind of human essential amino acid content in the vegetable sweet potato tips accounting for the amino acid total quantity and the content of Val,Ile,Leu,Phe Tyr,Lys,Thr contents accorded with the pattern spectrum revised by FAO/WHO in 1973,only the percent of Met Cys were moderate lacked.(4) In the vegetable sweet potato tips the fresh taste,the aromatic and sweet taste amino acid contents were the first.
