蜀葵紫红色素及其理化性质研究

摘    要:研究了蜀葵(Althaen rosea L.Cavan.)紫红色素的提取纯化工艺、理化性质。实验以蜀葵紫红色花瓣为材料,采用溶剂浸提法、硅胶柱层析法对色素进行提取纯化,效果较好。利用光谱扫描对该色素进行理化性质鉴定时发现:该色素属于花色苷类色素;色素耐光性好;耐氧化性、耐还原性较差;对热有一定的耐受性;防腐剂及多数金属离子对色素的稳定性无不良影响;但Fe^3+、Fe^2+、Cu^2+、Pb^2+、Sn^2+对色素具有不利影响。

Abstract:In this paper, the extraction, purification,properties,crude components harm tace elements and edible-safety of purple-red pigments of Althaea rosea L.Cavan. were researched. The pigments were successful extracted from purple-red petals using solvent and purified using column chromatography. When identifying the properties of this pigment by the visible spectra, the results indicated this pigment was a type of anchocyanin. It was strong in resisting light but poor in resisting oxide and reduant. To some extent, it was resistant to the temperature. It was also found in the experiments that conservative and some metal ions did not exert negative effects on the stability of the pigment. While other metal ions, such as Fe~ 3 ,Fe~2 ,Cu~2 ,Pb~ 2 and Sn~2 ,had presented negative effects.
