Enhancement of enzymatic hydrolysis of triolein in aqueous solution by cyclodextrin derivatives

Abstract:Summary Based on the ability of beta-cyclodextrin and its partially methylated derivatives to form inclusion complexes, the hydrolysis of triolein by pancreatic lipase in aqueous solution can be increased up to 7-fold. beta-Cyclodextrin, dimethyl-beta-cyclodextrin and trimethyl-beta-cyclodextrin accelerated the lipolysis 3-7-fold in accordance with their solubility in water.
