Abstract: | Summary Based on the ability of -cyclodextrin and its partially methylated derivatives to form inclusion complexes, the hydrolysis of triolein by pancreatic lipase in aqueous solution can be increased up to 7-fold. -Cyclodextrin, dimethyl- -cyclodextrin and trimethyl- -cyclodextrin accelerated the lipolysis 3-7-fold in accordance with their solubility in water. |
