Abstract:Summary The extracellular carboxylesterase produced by Fusarium graminearum was investigated. The esterase showed optimum activity at 37°C and at pH 8.7–9.0. Increased activity was observed when whey as a growth substrate was supplemented with either Tween 40 or olive oil. Good activity was also obtained when the fungus was grown on a semi-solid bran culture medium. The esterase showed increased activity towards esters containing short-chain fatty acids.
