Abstract: | Summary Cells of Saccharomyces cerevisiae were immobilized in K-Carrageenan. Addition of sodium sulfite to the fermentation medium up to four percent led to glycerol yields of 25 to 27 g/l at temperatures below 31°C.These results demonstrate that it is possible to direct the metabolism of immobilized cells from ethanol fermentation to glycerol fermentation by sulfite. |
