藻胆蛋白短肽性质的研究

摘    要:在不同温度、pH条件下,测定了藻胆蛋白短肽中天然色素基团的稳定性,确定了最适保存条件。研究了样品中乙醇含量、微量元素及稳定剂β-胡萝卜素和维生素C对藻胆蛋白短肽的影响。找出了可使其更稳定的添加剂。

Abstract:Measure the stability of the the natural chromophore in the short-peptide of phycobiliproteins under different temperatures and pH values. The proper conditions were determined. The influence of Alcohol, microelements and stabilizers such as β-carotene and Vit.C on the short peptide was studied. The results showed that some additives can make the chromophore stabler and more nutritious.
