The structure of caseins from cow milk]

Abstract:The paper presents a review of up-to-date data on the primary structure of alphas1-, beta- and kappa-casein of cow milk, gives amino acid substitutes in the genetic forms, arrangement of bitter peptides resulting from enzymic degradation and discusses the possible mechanism of phosphorylation. With respect to the primary structure alimentary specificity of caseins is discussed.
