Cellulose component of Acetobacter xylinum pellicle: morphology and its significance for the mechanism of microfibril formation

Abstract:The cellulose component of native, minimally disturbed pellicles of Acetobacter sylinum has a three-dimensional, microfibrillar, interconnected, ‘brush-wood’ structure. This structure could not originate from a spinneret or extrusion mechanism of cellulose microfibril formation. It may be produced by a mechanism of spontaneous association and post factor crystallization of preformed, transient I → 4β glucans.
