Production of a novel syrup containing neofructo-oligosaccharides by the cells of Penicillium citrinum

Abstract:A novel syrup containing neofructo-oligosaccharides was produced from sucrose (Brix 70) by whole cells of Penicillium citrinum. The efficiency of fructo-oligosaccharides production was more than 55% and those of the main carbohydrate components, 1-kestose (Fruf beta2rarr1Fruf beta2rarr1agr Glc), nystose (Fruf beta2rarr1Fruf beta2rarr1 Fruf beta2rarr1 agr Glc) and neokestose (Fruf beta2rarr6agr Glc1rarr2 beta Fruf), were 22, 14 and 11%, respectively.
