| Abstract: | During the shelf life of truss tomatoes (Lycopersicon esculentum Mill.), the fruit firmness, flesh firmness and pectin content declined; the soluble pectin content increased; the activity of PG presented peak variation which was less than that of the normal tomatoes. |
