A near infrared assay for lipolysis in lecithin-stabilised water-in-oil microemulsions

Abstract:Summary A near infrared (N-IR) spectroscopic assay has been developed for in situ monitoring of lipolysis in water-in-oil (w/o) microemulsions stabilised by soybean lecithin. Water, fatty acid and partial glyceride concentrations may be individually determined. N-IR has general utility in the study of hydrolysis/condensation reactions in low-water organic media.
