摘    要:从桃仁中提取苯甲醛进而研究其作为食品防腐剂的效果。从桃仁中提取的苦杏仁苷水解为苯甲醛的条件,并通过气态防腐试验初步研究了苯甲醛的抑菌效果。结果表明:苦杏仁苷水解的条件为:在0.5mol/L的硫酸,80℃温度条件下水解80m in;提取的天然苯甲醛对霉菌和细菌均有一定的抑制作用。

Abstract:Peach kernel was used as raw material in this paper.Benzaldehyde was prepared by the acid hydrolysis of amygdalin extracted from peach kernel,and the antimicrobial effects of benzaldehyde were studied by using gaseous antisepsis.The results indicated that amygdalin was hydrolyzed in 0.5mol/L solution of sulfuric acid for 80min at 80℃.In addition,benzaldehyde prepared can effectively inhibit some microorganisms,such as mold and bacteria.
