鳗鱼肌肉的氨基酸及营养价值

摘    要:通过对优质食用鱼类—鳗鱼肌肉的氨基酸进行测定证实,鳗鱼较之其它鱼类是一种营养价值更高、滋味更鲜美的鱼类。并且,根据结果氨基酸组成比例,可为鳗鱼的人工饲养等方面的研究提供理论依据。

Abstract:The plasma-free amino acids(PFAA) were measured in 65 healthy children and 35 disabled ones, aged from 3 to 7 years, by densly-cholrids reaction and thin-layer chromatography(TLC). The results showed that the free amino acid levels were not changed with different sexualitoies and ages and the normal value of PFAA in healthy children may be used in clinical practice. The PFAA levels in healthy group was significantly higher than those in disabled ones. This indicates that all kinds of PFAA levels is obviously decreased when children are in severely malnutrition.
