Consumers’ demand is increasing for safe foods without impairing the phytochemical and sensory quality. In turn, it has increased research interest in the exploration of innovative food processing technologies. Cold plasma technology is getting popularity now days owing to its high efficacy in decontamination of microbes in fruit and fruit-based products. As a on-thermal approach, plasma processing maintains the quality of fruits and minimizes the thermal effects on nutritional properties. Cold plasma is also exploited for inactivating enzymes and degrading pesticides as both are directly related with quality loss and presently are most important concerns in fresh produce industry. The present review covers the influence of cold plasma technology on reducing microbial risks and enhancing the quality attributes in fruits.  相似文献

葡萄果实发育过程中果肉细胞超微结构的观察   总被引:20,自引:0,他引:20  
用透射电镜观察了“巨峰”葡萄(Vitis vinifera×V.labrusca)果实3个发育时期中果肉细胞超微结构的变化。果实第一次快速生长期的果肉细胞超微结构表现出物质和能量代谢旺盛的特点。缓慢生长期的果实虽外部形态平静少变,但果肉细胞超微结构表现出深刻的变化:细胞核形状特化为裂瓣状是最显著的特点;线粒体数目丰富;粗面内质网槽库膨大形成的囊泡富集,出现向液泡汇融和向质膜靠近的现象;质膜内陷;液泡膜完整。另外,原生质也出现一些降解的现象。但总体结构特点表明果肉细胞在此期处于十分活跃的物质周转代谢和信息交换过程中。果实第二次快速生长期果肉细胞超微结构表现出衰老降解的特点,但线粒体结构依然完整,数量仍然丰富,原生质膜也保持了很好的完整性,这似乎与维持第二次快速生长或成熟有关。  相似文献

该试验以‘赛蜜酥1号’枣及其芽变品系‘赛蜜酥2号’果实为试验材料,运用流式细胞术对它们的倍性进行鉴定,采用石蜡切片法进行果实细胞组学的观察,并对两者果实生长发育过程中的内外观品质及决定果实口感的蔗糖代谢相关酶活性进行比较分析,为深入研究芽变对枣果实口感、品质造成的影响提供理论支持。结果表明:(1)‘赛蜜酥2号’芽变品系的细胞倍性未发生改变,仍为二倍体。(2)两个枣品种(系)果实在外部形态上有明显区别,‘赛蜜酥1号’为卵圆型,‘赛蜜酥2号’为扁圆型,且后者的果形指数成熟时大于1,单果质量高于前者,核小、可食率更高,皮薄果实更加酥脆;‘赛蜜酥1号’果皮的蜡质层厚度一直大于其芽变枣,两者角质层厚度和表皮层厚度的变化趋势基本一致,但厚度之间具有显著差异。(3)影响果实细胞生长、分裂,果实脱落的各类激素水平在品种间均存在显著差异,‘赛蜜酥2号’IAA和GA_(3)含量显著高于‘赛蜜酥1号’,使之果形更大。(4)两个枣品种(系)果实可溶性糖、可滴定酸、维生素C、植物淀粉、可溶性蛋白含量等随发育时期的变化趋势一致,但含量水平之间存在差异,‘赛蜜酥2号’果实的糖含量、维生素C含量更高,可滴定酸含量更低,口感更甘甜。(5)两品种枣果实的蔗糖代谢相关酶活性在果实迅速生长的膨大期都存在着显著差异,也导致‘赛蜜酥2号’果实甜度明显高于‘赛蜜酥1号’。研究发现,两个枣品种均为二倍体,它们在果实外部形态上存在明显区别,易于分辨;芽变品系‘赛蜜酥2号’果实更大,核小、可食率更高,皮薄更加酥脆,口感更甘甜。  相似文献

Glycosides are an important potential source of aroma and flavour compounds for release as volatiles in flowers and fruit. The production of glycosides is catalysed by UDP‐glycosyltransferases (UGTs) that mediate the transfer of an activated nucleotide sugar to acceptor aglycones. A screen of UGTs expressed in kiwifruit (Actinidia deliciosa) identified the gene AdGT4 which was highly expressed in floral tissues and whose expression increased during fruit ripening. Recombinant AdGT4 enzyme glycosylated a range of terpenes and primary alcohols found as glycosides in ripe kiwifruit. Two of the enzyme's preferred alcohol aglycones, hexanol and (Z)‐hex‐3‐enol, contribute strongly to the ‘grassy‐green’ aroma notes of ripe kiwifruit and other fruit including tomato and olive. Transient over‐expression of AdGT4 in tobacco leaves showed that enzyme was able to glycosylate geraniol and octan‐3‐ol in planta whilst transient expression of an RNAi construct in Actinidia eriantha fruit reduced accumulation of a range of terpene glycosides. Stable over‐expression of AdGT4 in transgenic petunia resulted in increased sequestration of hexanol and other alcohols in the flowers. Transgenic tomato fruit stably over‐expressing AdGT4 showed changes in both the sequestration and release of a range of alcohols including 3‐methylbutanol, hexanol and geraniol. Sequestration occurred at all stages of fruit ripening. Ripe fruit sequestering high levels of glycosides were identified as having a less intense, earthier aroma in a sensory trial. These results demonstrate the importance of UGTs in sequestering key volatile compounds in planta and suggest a future approach to enhancing aromas and flavours in flowers and during fruit ripening.  相似文献

1 Oligonychus afrasiaticus, the old world date mite, is a serious pest of dates in North Africa and the Near East, including Israel. It attacks and rapidly develops when the fruit is young and green. Mite phenology is affected by date cultivar, but the relationship between fruit characteristics and mite population development is unknown. 2 We report that mite establishment on the main cultivars grown in Israel, ‘Medjool’, ‘Barhi’ and ‘Deglet Noor’, began only when the water content of the fruit increased to ≥ 84%. Fruit bunch architecture and resistance to penetration, as well as sugar composition and content, were not key factors in mite establishment. 3 Later in the season, when total sugar levels reached ≥ 150 mg/g fresh fruit weight, total soluble solids comprised 15% and water content decreased to ≤ 75%, mite populations declined. 4 Yearly climatic variations could be responsible for phenological asynchrony between the pest and fruit development.  相似文献

Gynodioecious populations (i.e. populations with female and hermaphrodite individuals) often contain a third phenotype with an intermediate sex expression. In Silene italica , this phenotype is characterized by a mixture of pistillate and perfect flowers and is thus gynomonoecious. To characterize sexual functions of these gynomonoecious individuals and their potential influence in the maintenance of gynodioecy, reproductive characters of the three sexual phenotypes were compared over 2 years in several families of S. italica produced by crossing. We found that gynomonoecious individuals were intermediate for flower production and female fertility characters, although they did not always significantly differ from female individuals. Perfect flowers of gynomonoecious and hermaphrodite plants were similar in size and pollen production. Gynomonoecious individuals were thus intermediate in female and in male functions. Family effects were found for most of the characters. The female advantage (i.e. the fertility of females compared to the female fertility of pollen producing plants) was not dramatically different when gynomonoecious plants were taken into account.  © 2006 The Linnean Society of London, Biological Journal of the Linnean Society , 2006, 87 , 583–591.  相似文献

With different prevalence in different regions, radio frequency (RF) electromagnetic fields (EMF) are widely used for therapeutic tissue heating. Although short‐wave diathermy (27.12 MHz) is the most popular treatment modality, quantitative data on patient's exposure have been lacking. By numerical simulation with the numerical anatomical model NORMAN, intracorporal distributions of specific absorption rates (SAR) were investigated for different treatment scenarios and applicators. Quantitative data are provided for exposures of target treatment areas as well as for vulnerable regions such as the eye lenses, central nervous system, and testes. Different applicators and distances were investigated. Capacitive and inductive applicators exhibit quite a different heating efficiency. It could be shown that for the same output power therapeutic heat deposition can vary by almost one order of magnitude. By mimicking therapist's practice to use patient's heat perception as an indicator for output power setting, numerical data were elaborated demonstrating that muscle tissue exposures may be several times higher for inductive than for capacitive applicators. Presented quantitative data serve as a guide for power adjustment preventing relevant overexposures without compromising therapy; they also provide a basis for estimating target tissue heat load and developing therapeutic guidelines. The peel and pulp of the banana fruit and the pseudostem were examined for glutamate-oxaloacetate transaminase (GOT), glutamate-pyruvate transaminase (GPT) and aldolase activities and protein, phenolics, chlorophyll and starch. The peel-pulp ratio at various stages of fruit development on the plant and in detached fruits showing incipient ripening were used as an index of the physiological age of the fruit. The enzymes exhibited maximum activity at a stage corresponding to the initiation of the climacteric. GPT level at this stage was higher than that of GOT. An initial increase in the protein content was followed by a decline in both peel and pulp, the level reaching a minimum in climacteric fruits. Astringency, measured in terms of total phenolics, decreased with development; in mature fruits, peel contained 4–5 × as much phenolics as pulp. Chlorophyll in mature fruits was 10 × higher than in young fruits and decreased in ripe fruits. The onset of ripening was attended with a pronounced decrease in the starch. The various analyses were carried out also on the pseudostem removed from the plant soon after flower formation.  相似文献
