A total of 262 specimens of meat and meat dishes were examined for the presence of Clostridium perfringens. Of this total, 161 were raw, unprocessed beef, veal, lamb, pork, or chicken; 101 were processed meats and meat dishes. C. perfringens was isolated from 113 (43.1%) of these specimens. The highest percentage of contamination (82%) was found in veal cuts, and the lowest (4.7%) in sliced sandwich meats and spreads. Only 2 of the 113 isolates were shown to produce heat-resistant spores, which indicates a very low incidence (0.8%) of contamination. These findings indicate that outbreaks of C. perfringens food-borne disease in the Cincinnati area are caused principally by the contamination of the food with vegetative cells or spores of the organism after cooking. Studies of the effects of various holding temperatures on the growth of C. perfringens indicated that, in the range of 5 to 15 C, no multiplication would occur, but that viable cells would still be present at the end of a 5-day holding period. Extremely rapid growth occurred at temperatures around 45 C, and complete inhibition of growth was accomplished between 49 and 52 C.  相似文献

Summary The results of this study indicated that antigens prepared from the three morphological phases ofCoccidioides immitis differed in their complement fixing activity with anti-Histoplasma capsulatum pooled serum. Spherule antigens were serologically less active in tests with the anti-H. capsulatum pooled serum than antigens prepared from arthrospores and from mycelium.Antigenic determinants which are common toC. immitis andH. capsulatum appeared to be located on the intact arthrospore cellular surface but not on the surface of spherule cells.Part of a dissertation submitted to the Graduate School of Duke University in partial fulfillment of requirements for the Ph. Observations were made on the morphology, seed fertility, pollen viability and meiotic configurations of 22 different interspecific hybrids of 12 North American taxa representative of 3 sections of Ruellia. The hybrids were classified as (1) fully vigorous and fertile; (2) vigorous but with reduced fertility; (3) reduced vigor and fertility; (4) weak and sterile. Hybrids showed meiotic irregularities in microsporogenesis: univalents, chains, precocious separation of bivalents, nondisjunction, and micronuclei were commonly observed. Interspecific pollinations within sect. Dipteracanthus resulted in fertile or partially sterile F1 hybrids. Intersectional crosses produced partially or completely sterile hybrids or failed. Assuming that crossability is correlated with degree of evolutionary relationship, the parental species are interpreted in genecological terms to be grouped in polytypic ecospecies. Hybridization experiments doubtless would be of value in clarifying relationships in tropical and subtropical species of Ruellia.  相似文献

The effects of gaseous environment and temperature on the microbial populations of ensiled high-moisture corn were investigated. Molds, coliform bacteria, mesophilic aerobic bacteria, and yeasts were enumerated at intervals during ensiling. The numbers of aerobic bacteria were similar in structures containing different concentrations of gas and held at different temperatures. Coliform bacteria could not be detected after 10 days of ensiling. Mold numbers were relatively low, but were important in the deterioration of corn at the surface of the silos. Yeast and bacterial numbers increased rapidly following an initial aeration period, but no increase was observed after a second aeration series. Lack of a growth response to the second aeration series is believed related to the depletion of an assimilable carbon source.  相似文献
