The influence of temperature on the threshold values of primary tastes   总被引:4,自引:2,他引:2  
The threshold values of taste substances are influenced by severalfactors. To learn about the effect of the temperature on stimulus,recognition and terminal thresholds, these threshold valueswere determined for sucrose, sodium chloride, caffeine, quininehydrochloride, citric and tartaric acid at temperatures of 10,20, 40 and 60°C in a panel of 19 tasters. The individualvalues were found to vary over a wide range, resulting in arelatively large standard deviation of the mean threshold values.A temperature-dependence was found for the stimulus and recognitionthresholds which was different for the different taste substances.The stimulus and recognition thresholds are lowest in the temperaturerange of 20 to 40°C. The threshold values increase withincreasing temperature, and except for citric acid, significantand highly significant differences existed particularly between20 and 60°C, whereas statistically verifiable results couldnot be obtained between 10 and 20°C. There was no verifiabletemperature dependence either for the terminal thresholds. Theterminal thresholds were found to lie rather in a relativelynarrow concentration range and to be largely independent ofthe temperature. The results suggest that in warm dishes andbeverage more taste substances are required to produce the sametaste intensity. A dependence of the individual thresholds uponage, sex and smoking habits could not be found.  相似文献

The relationship between chemical structure and odor characteristics of aroma compounds is interesting in terms of establishing a fundamental understanding and, in the long term, a perspective for the prediction of odor qualities and intensities of unknown compounds; on the other hand, such studies provide a useful tool to analytically elucidate compounds that are exceptionally potent odor contributors to a specific smell. In this respect, a broad knowledge of compounds with regard to their odor threshold and smell specificities compiled in a comprehensive odor library would drastically simplify the chemoanalytical process in identifying aromas and smells. Whereas numerous odor-active substance classes have been investigated intensively, such relationships and fundamental data have hitherto not been established for volatile phenols. In this study, a homologous series and isomers of 30 volatile phenols, including monoalkylated phenols and di- and trimethylphenols, were evaluated by determining their aroma attributes and their odor detection thresholds in air. The investigation demonstrates that the odor qualities, among them leather-like, horse stable-like, and medicinal, as well as the respective threshold values clearly depend on the arrangement of the alkyl substituents at the phenol ring. In particular, phenols with monoalkyl groups in the meta-position were found with very low odor detection thresholds of <1 ng/L air. A comparison of some selected phenols and their corresponding toluenes, which were found to be almost odorless, showed in addition that the phenolic hydroxyl group is obviously an important factor for the odor characteristic of this substance class.  相似文献

Summary The authors examined the sense of smell of 187 students (105 boys and 82 girls), aged from 15 to 19 years, of a technical school. Tests for the ability to smell are reported only in very few papers in the literature; so it was necessary to elaborate an own test procedure. In order to collect olfactory thresholds, a sorting technique based on the use of a serial dilution of the substances, was used similarly to the method for testing taste sensitivity to P.T.C. It was observed as a new phenomenon that the human population showed a polymorphism concerning ketone compounds, i.e. acetone and methylethylketone (MEK); the distribution of thresholds gave a bimodal curve for acetone and a trimodal one for MEK. Correlation — though not very strong — between the thresholds for these compounds was found. Retesting 1–3 months later with acetone showed a fairly good fit. Finally the possibility of the role of genetic factors in the ability to smell ketone compounds is suggested.  相似文献

Taste, smell, and chemical irritation (so-called trigeminal sensation) combine in our daily experience to produce the supramodal sensation of flavor, are processed by partly overlapping neural mechanisms, and show functional interconnectivity in experiments. Given their collaboration in flavor formation and the well-established connections between these senses, it is plausible that polymodal detection mechanisms might contribute to individual differences in measured sensitivity. One would expect the existence of a general chemosensory sensitivity factor to result in associations among taste, smell, and trigeminal stimulation thresholds. Measures of 5 detection thresholds from all the chemical senses were assessed in the same group of young healthy subjects (n=57). An unbiased principal components analysis (PCA) yielded a 2-component solution. Component 1, on which taste thresholds loaded strongly, accounted for 29.4% of the total variance. Component 2, on which the odor and trigeminal lateralization thresholds loaded strongly, accounted for 26.9% of the total variance. A subsequent PCA restricted to a 3-component solution cleanly separated the 3 sensory modalities and accounted for 75% of the total variance. Thus, though there may be a common underlying factor that determines some individual differences in odor and trigeminal lateralization thresholds, a general chemical sensitivity that spans chemosensory modalities seems unlikely.  相似文献

Two simple methods were followed to determine detection thresholds for the taste of substances in aqueous solution. The methods applied were: a modification of the ascending method of limits and a method based on the use of scales. Detection thresholds were calculated for the four basic tastes (sweet, salty, acid, and bitterness), umami and metallic. Reference substances for each taste were sucrose, sodium chloride, citric acid, caffeine, monosodium glutamate and iron (II) sulfate heptahydrate and the results of the two methods were compared. We found that the threshold values calculated by method ASTM-679 was within the range of concentrations identified with the scales method.  相似文献

The metaphorisation of sight and hearing, the objective senses, dominate the founding ideas, or philosophemes, of Western philosophy. The senses of taste and smell are of little relevance in the formation of conceptual knowledge or in classificatory systems; they are, by virtue of their dissolving objects, incapable of giving objective knowledge in Western metaphysics. Derrida and Ulmer developed a metaphorology that exploits the chemical basis of the subjective senses of taste and smell. The anthropology of the senses takes this questioning of metaphysics into issues of how olfaction and taste function in sociality. In the routine practices of everyday life, is olfaction able to create the sense of community that it does in rituals? Or, has the repression of smell in humanity's evolution towards ‘civilisation’ muted the connective ability of multiple odour particles? In a culture and metaphysics that presumes the separability of the self from the other and the self from the object, is there a place for senses that make a nonsense of separation and objectivity through their state of meaningful dissolution? Through philosophy's metaphorisation, has taste been stripped of its sensuousness and made a sense for aesthetics and not flavours and textures? In a metaphorics premised in judgement and discernment, can taste be a sense that founds sociality? In blurring the boundaries between self and other that are necessary to form and maintain the distinction, the dissolvability of smell and taste makes another metaphorics and other socialities possible. Of all the senses, that of smell—which is attracted without objectifying—bears clearest witness to the urge to lose oneself in and become the ‘other’. Several fundamental questions remain enigmatic concerning human olfactory sensitivity, including (i) whether detection threshold differences exist between the two sides of the nose (and, if so, whether such differences are influenced by handedness) and (ii) whether bilateral (i.e. binasal) stimulation leads to lower thresholds than unilateral stimulation (and, if so, whether the degree of facilitation is inversely related to general olfactory ability). In this study, and well-validated single staircase procedure was used to establish bilateral and unilateral detection thresholds for the cranial nerve I stimulant phenyl ethyl alcohol in 130 right- and 33 left-handed subjects. No differences in sensitivity between the left and right sides of the nose were observed in either group. Bilateral thresholds were lower, on average, than unilateral thresholds when the latter were categorized in terms of left and right nares. However, the bilateral thresholds did not differ significantly from those of the side of the nose with the lower threshold. Overall smell ability, as measured by the University of Pennsylvania Smell Identification Test, did not interact with any of the test measures. These data imply that (i) the left and right sides of the nose do not systematically differ in detection threshold sensitivity for either dextrals or sinistrals and (ii) if central integration of left:right olfactory threshold sensitivity occurs, its effects do not exceed the function of the better side of the nose.   相似文献

Many chemical and environmental data sets are complicated by the existence of fully missing values or censored values known to lie below detection thresholds. For example, week-long samples of airborne particulate matter were obtained at Alert, NWT, Canada, between 1980 and 1991, where some of the concentrations of 24 particulate constituents were coarsened in the sense of being either fully missing or below detection limits. To facilitate scientific analysis, it is appealing to create complete data by filling in missing values so that standard complete-data methods can be applied. We briefly review commonly used strategies for handling missing values and focus on the multiple-imputation approach, which generally leads to valid inferences when faced with missing data. Three statistical models are developed for multiply imputing the missing values of airborne particulate matter. We expect that these models are useful for creating multiple imputations in a variety of incomplete multivariate time series data sets.  相似文献

The suprathreshold olfactory intensity of pure substances canbe expressed as a function of three biological parameters characteristicof each substance. These parameters are: the detection threshold, the slope ofperceived intensity versus concentration in log. log. coordinates,and a ceiling to this slope of either physical or biologicalorigin. This study represents an attempt at compiling thresholds, intensityslopes and slope limits determined by many authors, and theselection and standardization of these data based on objectivecriteria. Mice with gene-targeted deletion of the Kv1.3 channel were generated to study its role in olfactory function. Potassium currents in olfactory bulb mitral cells from Kv1.3 null mice have slow inactivation kinetics, a modified voltage dependence, and a dampened C-type inactivation and fail to be modulated by activators of receptor tyrosine signaling cascades. Kv1.3 deletion increases expression of scaffolding proteins that normally regulate the channel through protein-protein interactions. Kv1.3-/- mice have a 1,000- to 10,000-fold lower threshold for detection of odors and an increased ability to discriminate between odorants. In accordance with this heightened sense of smell, Kv1.3-/- mice have glomeruli or olfactory coding units that are smaller and more numerous than those of wild-type mice. These data suggest that Kv1.3 plays a far more reaching role in signal transduction, development, and olfactory coding than that of the classically defined role of a potassium channel-to shape excitability by influencing membrane potential.  相似文献

In the regulation of chemical substances, it is generally agreed that there are no thresholds for genotoxic effects of chemicals, i.e. , that there are no doses without genotoxic effects. When classifying and labelling chemicals, dangerous properties of chemicals are to be identified. In this context, in general, the mode of action (threshold or not) is not considered for genotoxic substances. In the process of quantitative risk assessment, however, determination of the type of dose-effect relationships is decisive for the outcome and the type of risk management. The presence of a threshold must be justified specifically in each individual case. Inter alia, the following aspects may be discussed in this respect: aneugenic activity, indirect modes of action, extremely steep dose-effect relationships in combination with strong toxicity, specific toxicokinetic conditions which may lead to 'metabolic protection' prior to an attack of DNA. In the practice of the regulation of chemical substances with respect to their genotoxic effects, the discussion of thresholds has played a minor role. For notified new substances, there are, in general, no data available that would allow a reasonable discussion. Concerning substances out of the European programme on existing substances, so far 29 have been assessed in our institute with respect to genetic toxicity. Eight out of these have shown considerable evidence for genotoxicity. For two of them, a possible threshold is discussed: one substance is an aneugen, the other one is metabolised to an endogenic compound with genotoxic potential. In the practice of risk assessment of genotoxic substances, the discussion of the mode of action for genotoxicity is frequently associated with the evaluation of potential carcinogenic effects. Here, tissue-specific genotoxic effects in target organs for carcinogenicity are to be discussed. Moreover, the contribution of genotoxicity to the multifactorial process of tumour development should be assessed.  相似文献

Detection thresholds and psychophysical curves were established for caffeine, quinine-HCl (QHCl), and propylthiouracil (PROP) in a sample of 33 subjects (28 female mean age 24 +/- 4). The mean detection threshold (+/-standard error) for caffeine, QHCl, and PROP was 1.2 +/- 0.12, 0.0083 +/- 0.001, and 0.088 +/- 0.07 mM, respectively. Pearson product-moment analysis revealed no significant correlations between detection thresholds of the compounds. Psychophysical curves were constructed for each bitter compound over 6 concentrations. There were significant correlations between incremental points of the individual psychophysical curves for QHCl and PROP. Regarding caffeine, there was a specific concentration (6 mM) below and above which the incremental steps in bitterness were correlated. Between compounds, analysis of psychophysical curves revealed no correlations with PROP, but there were significant correlations between the bitterness of caffeine and QHCl at higher concentrations on the psychophysical curve (P<0.05). Correlation analysis of detection threshold and suprathreshold intensity within a compound revealed a significant correlation between PROP threshold and suprathreshold intensity (r=0.46-0.4, P<0.05), a significant negative correlation for QHCl (r=-0.33 to -0.4, P<0.05), and no correlation for caffeine. The results suggest a complex relationship between chemical concentration, detection threshold, and suprathreshold intensity.  相似文献

Ecological thresholds describe abrupt changes in ecological properties in time or space. In rangeland management, thresholds reflect changes in vegetation and soils that are expensive or impossible to reverse. The threshold concept has catalyzed important advances in rangeland management thinking, but it has also introduced two classes of drawbacks. First, the ambiguity of the term "threshold" and the desire for simplicity in its application has led to an overemphasis on classification thresholds, such as vegetation cover values. Uncritical use of classification thresholds may lead to the abandonment of management efforts in land areas that would otherwise benefit from intervention. Second, it is possible that the invocation of thresholds and irreversible degradation may eventually result in the wholesale conversion of land areas that would have been recoverable or served important societal functions, such as biodiversity maintenance, that are not reflected in threshold definitions. I conclude with a recommendation to clarify the nature of thresholds by defining the relationships among pattern, process, and degradation and distinguishing preventive thresholds from restoration thresholds. We must also broaden the attributes used to define states and thresholds.  相似文献

Behavioral responses of Marthasterias glacialis to low molecular compounds were studied under laboratory conditions. Feeding postures, stomach eversions and locomotion of initially inactive animals can be released with very dilute solutions of lactic acid, neutral 2 and 3 carbon amino acids, L isomers of 4 to 6 carbon neutral amino acids, L-arginine, acetylcholine iodide, and several of their analogues. Hunger was induced by temporary withdrawal of food. Responsiveness to feeding stimuli was controlled with L-cysteine and L-leucine. The lowest behavioral thresholds for the most effective feeding stimuli were 3 X 10(-11) mol/l for both enantiomers of lactic acid, 10(-8) mol/l for L-proline and both enantiomers of cysteine and 10(-7) mol/l for acetylcholine iodide and some of the effective neutral amino acids. The behavioral threshold values for chemical stimuli differed by a factor between 30 and 100 in different sea stars. The test concentration was 3 X 10(-7) mol/l, the level at which L-cysteine elicited a complete feeding response from all the animals. Structure-activity comparison of substances less effective than the control stimulus was thus possible. The behavioral threshold of fully effective substances was determined later. The independence of receptor mechanisms for different substances can be inferred as: L-cysteine controlled responsiveness is not always accompanied by responsiveness to neutral amino acids. Autotomized marthasterias arms crawled after stimulation with lactic acid, cysteine, and acetylcholine iodide but did not respond to the feeding stimuli betaine and L-proline. The composition of the volatile organic compounds (VOCs) of various leaf tobacco brands and their blends has been studied. The differences in the content of nicotine, solanone, tetramethyl hexadecenol, megastigmatrienones, and other compounds, determining the specific tobacco smell, have been revealed. A microbial consortium, which is able to deodorize simulated tobacco emissions and decompose nicotine, has been formed by long-term adaptation to the VOCs of tobacco leaves in a laboratory reactor, functioning as a trickle-bed biofilter. Such a biofilter eliminates 90% of the basic toxic compound (nicotine) and odor-active compounds; the filtration efficiency does not change for tobacco brands with different VOC concentrations or in the presence of foreign substances. The main strains, isolated from the formed consortium and participating in the nicotine decomposition process, belong to the genera Pseudomonas, Bacillus, and Rhodococcus. An examination of the biofilter trickling fluid has shown full decomposition of nicotine and odor-active VOCs. The compounds, revealed in the trickling fluid, did not have any odor and were nontoxic. The obtained results make it possible to conduct scaling of the biofiltration process to eliminate odor from air emissions in the tobacco industry.  相似文献

Some experiments in aquarium and in situ have been carried out to investigate the sensory abilities of coral reef fish larvae in the recognition of their settlement location. Ten out 12 species studied detected their settlement location due to the presence of conspecifics and not by habitat characteristics. Many biological, hydrological, and geological processes are interactively linked in ecosystems. These ecological phenomena normally vary within bounded ranges, but rapid, nonlinear changes to markedly different conditions can be triggered by even small differences if threshold values are exceeded. Intrinsic and extrinsic ecological thresholds can lead to effects that cascade among systems, precluding accurate modeling and prediction of system response to climate change. Ten case studies from North America illustrate how changes in climate can lead to rapid, threshold-type responses within ecological communities; the case studies also highlight the role of human activities that alter the rate or direction of system response to climate change. Understanding and anticipating nonlinear dynamics are important aspects of adaptation planning since responses of biological resources to changes in the physical climate system are not necessarily proportional and sometimes, as in the case of complex ecological systems, inherently nonlinear.  相似文献

Massive changes to ecosystems sometimes cross thresholds from which recovery can be difficult, expensive and slow. These thresholds are usually discovered in post hoc analyses long after the event occurred. Anticipating these changes prior to their occurrence could give managers a chance to intervene. Here we present a novel approach for anticipating ecosystem thresholds that combines resilience indicators with Quickest detection of change points. Unlike existing methods, the Quickest detection method is updated every time a data point arrives, and minimizes the time to detect an approaching threshold given the users’ tolerance for false alarms. The procedure accurately detected an impending regime shift in an experimentally manipulated ecosystem. An ecosystem model was used to determine if the method can detect an approaching threshold soon enough to prevent a regime shift. When the monitored variable was directly involved in the interaction that caused the regime shift, detection was quick enough to avert collapse. When the monitored variable was only indirectly linked to the critical transition, detection came too late. The procedure is useful for assessing changes in resilience as ecosystems approach thresholds. However some thresholds cannot be detected in time to prevent regime shifts, and surprises will be inevitable in ecosystem management.  相似文献
