Chemical senses and aging: taste versus smell   总被引:4,自引:4,他引:0  
Earlier studies have suggested that aging may adversely affectthe sense of smell more than the sense of taste. Although bothsense modalities lose some absolute (threshold) sensitivity,agerelated losses of suprathreshold magnitude seem to occurcommonly in the sense of smell, less commonly in the sense oftaste. This apparent difference between taste and smell wasput to direct test in the same subjects in the same test session.Young (20–25 years) and two groups of elderly people (65–78and 80–95 years) estimated the taste intensity of variousconcentrations of NaCl and the odor intensity of various levelsof iso-amyl butyrate, under instruction to make magnitude estimationsof both kinds of stimuli on a common scale. Relative to thetaste estimates, the old gave lower odor estimates than theyoung. Also, the 80–95 year group showed, on average,a greater odor deficit than the 65–78 year group. Thisoutcome supports the main hypothesis that as age increases smelldeficits present a more serious problem than do taste deficits.  相似文献

Four experiments explored possible temporal summation in olfactionand the common chemical sense. In one experiment, participantsjudged the perceived magnitude of various concentrations anddurations (1.25–3.75 s) of the pungent odorant ammoniaand the nonpungent odorant isoamyl butyrate. The perceived magnitudeof ammonia increased during an inhalation whereas the magnitudeof isoamyl butyrate did not. Time-intensity trading relationsfor ammonia indicated nearly perfect temporal summation. Inanother experiment, modulation of the concentration of ammoniaduring an inhalation led to assessments of perceived magnitudethat confirmed the high degree of temporal summation seen inthe first experiment. That is, approximately equal time-integratedmass of inhaled ammonia led to approximately equal perceivedintensity. A third experiment indicated that temporal summationfor ammonia arose from its pungency rather than from its odor,a fourth that trigeminally-mediated reflex apnea in responseto ammonia also exhibits temporal summation. The degree of temporalsummation measured with the reflex came very close to that assessedpsychophysically. When stimulated with ammonia, the common chemicalsense behaves more like a totalmass detector than a concentrationdetector. The investigation raises the possibility that theshortterm sensory reaction to most pungent stimuli may followthis simple rule.  相似文献

Naturally occurring odors used by animals for mate recognition, food identification and other purposes must be detected at concentrations that vary across several orders of magnitude. Olfactory systems must therefore have the capacity to represent odors over a large range of concentrations regardless of dramatic changes in the salience, or perceived intensity, of a stimulus. The stability of the representation of an odor relative to other odors across concentration has not been extensively evaluated. We tested the ability of honey bees to discriminate pure odorants across a range of concentrations at and above their detection threshold. Our study showed that pure odorant compounds became progressively easier for honey bees to discriminate with increasing concentration. Discrimination is, therefore, a function of odorant concentration. We hypothesize that the recruitment of sensory cell populations across a range of concentrations may be important for odor coding, perhaps by changing its perceptual qualities or by increasing its salience against background stimuli, and that this mechanism is a general property of olfactory systems.  相似文献

Just-about-right (JAR) scales and attribute liking questions are usually used to study consumer perception of the sensory characteristics of food products. The aim of the present work was to compare the performance of attribute liking and JAR scales to evaluate consumers' perceived adequacy of flavor and texture of milk puddings. Two groups of consumers were asked to evaluate eight milk desserts using (1) overall liking followed by attribute liking for texture and flavor and (2) overall liking followed by JAR scales for thickness, creaminess, sweetness and vanilla flavor. Overall liking scores were significantly different when JAR scales or attribute liking questions were considered. Texture, flavor and overall liking scores were highly correlated to each other, providing the same information. JAR scales correlated better with the intensity of sensory attributes evaluated by a trained sensory panel, being JAR percentages a reliable tool to study the adequacy of sensory attributes.

PRACTICAL APPLICATIONS


Results from the present work showed that consumers might not be able to independently evaluate their liking of different sensory attributes of a product. For this reason, the use of attribute liking questions for studying the adequacy of sensory attributes in complex products would not be recommended. JAR scales were better indicators of the adequacy of sensory attributes. Consumers were able to independently evaluate texture and flavor attributes using JAR scales. However, the influence of JAR scales on overall liking scores should be taken into account when including these scales on consumer studies.  相似文献

Effects of context on judgements of odor intensities in humans   总被引:2,自引:2,他引:0  
This study evaluated whether the intensity of previously smelled odors could unintentionally influence the subsequent judgement of odor intensity. The predicted context effect was based on the adaptation- level theory. Before and 25 min after either WEAK or STRONG biasing odor concentrations, 51 subjects were required to rate the intensity of 10 different odor concentrations of California Orange Oil. After the WEAK bias, subjects judged the odor intensity as being stronger than they did after the STRONG bias. Thus the intensity of odors smelled 25 min earlier can unintentionally influence subsequent odor intensity judgement. The findings are discussed in the light of two alternative explanations, namely, a central implicit memory process and a stimulus- level-based change at the peripheral level.   相似文献

Psychophysical functions for the odor, taste, and flavor offive common flavorings were obtained by the method of magnitudeestimation. The stimuli included three simple compounds (vanillin,piperonal, and benzaldehyde) and two complex ones (natural vanillaextract and artificial almond essence). The odor intensity ofall the flavorings grew much less rapidly with concentrationthan did taste intensity. The growth of flavor for the complexsubstances and piperonal behaved very much like taste. For vanillinand benzaldehyde, the flavor functions resembled taste functionsat high concentrations but showed a tendency to flatten at lowerconcentrations. These findings implied that, at least for someflavorings, the growth of flavor reflects the most salient featureon the particular concentration range studied. At low concentrationsodor seems to be the most important feature and so flavor functionsare generally flat, but at high concentrations taste becomesthe salient feature and so flavor functions steepen.  相似文献

Chemosensory event-related potentials (CSERP) can be used toexamine central nervous odor processing. An important questionfor understanding odor perception is how different concentrationsare processed. In the present study two odors were chosen whichactivate either the olfactory (linalool) or the trigeminal (menthol)system. Both odors were presented to 11 subjects in four differentconcentrations. Four subjects had to attend actively to theodors while the others perceived the odors under passive attention.The results showed that increased concentrations of the olfactorystimulus resulted in shorter latencies of the N1 component butdid not affect the amplitudes of the CSERP. However, the amplitudesof the stimulus dependent, exogenous components (N1, P2) increasedwith higher concentrations of the trigeminal stimulus. The amplitudeof the late positive complex, which reflects endogenous processes,was usually larger when the odorous stimuli had to be attendedto actively. The application of sensory methodology for measuring deodorizing effect of an air conditioner equipped with electric plasma was introduced. Deodorizing effect was measured using chemical and sensory methods at different time (0, 30 and 60 min) and mode (control, blowing and cooling) of an air conditioner. Smoke from a roll of cigarette in a closed room was used as a source of odor and the concentrations of acetic acid and ammonia were measured as odorous chemical components. As one of the sensory methods triangle test was used and as a first step to obtain deodorizing effects by triangle test, the threshold of each panelist was obtained as the log dilution ratio of odor concentration at which the difference from odorless air was detected. The odor concentration at each time and mode was calculated using the threshold of the panel and the deodorizing effect was obtained on the basis of the odor concentration. In addition to a triangle test, scaling methods such as category scaling or magnitude estimation were used to measure deodorizing effect of an air conditioner. Deodorizing effects by scaling methods were calculated based on odor intensity with time at each mode. The regression analysis was done between the efficacy of deodorizing effect by sensory test and those by acetic acid and ammonia, the R2 values of the regression equations for triangle test, category scale, and magnitude estimation were 0.84, 0.72 and 0.69, respectively. Deodorizing effect by triangle test explained the decrease of acetic acid and ammonia better than those by category scaling or magnitude estimation while high cost and time consuming labor involved in triangle tests reduced the merit. The results of this study demonstrated that various sensory methods could be used to measure deodorizing effect of air conditioners and further researches on fast and reliable methods are needed to establish the official procedures.  相似文献

Human body odor, which contains several volatile organic compounds, possesses various odor qualities. To identify key volatile compounds responsible for the common unpleasant odors derived from human axillae and feet, the odor quality and intensity of 118 human axillae and feet were directly evaluated by sniffing, and odor compounds obtained from the subjects were identified. Furthermore, the sensory differences in odor intensity and quality with and without addition of butane‐2,3‐dione were evaluated by using the visual analog scale (VAS). An acidic odor was a common unpleasant note in human axillae and feet. Butane‐2,3‐dione was identified as a key compound associated with this odor. Strong positive correlations between the amount of butane‐2,3‐dione, and the odor intensities of axillae and feet were observed, and the addition of butane‐2,3‐dione solution to blended short‐chain fatty‐acid solutions caused significantly increased VAS values of axillary‐like odor, unpleasantness, and odor intensity compared to those of each solution without added butane‐2,3‐dione.  相似文献

The odors we perceive are mainly the result of mixtures of odorants that, however, are commonly perceived as single undivided entities; nevertheless, the processes involved remain poorly explored. It has been recently reported that perceptual blending based on configural olfactory processing can cause odorant mixtures to give rise to an emergent odor not present in the components. The present study examined whether specific component proportions are required to elicit an emergent odor. Starting from the composition of a ternary target mixture in which an emergent pineapple odor was perceived, 4 concentration levels of each component were chosen to elicit just noticeable differences (JNDs). Each combination of levels was used to design sample mixtures. Fifteen subjects evaluated the intensity, typicality, and pleasantness of each sample mixture against the target mixture in a paired-comparison protocol. Statistical modeling showed that a variation of less than 1 JND in one of the components was sufficient to induce a significant decrease in pineapple odor typicality in the ternary mixture. This finding confirms previous findings on perceptual blending in simple odorant mixtures and underscores the human ability to discriminate between odor percepts induced by mixtures including very similar odorant proportions.  相似文献

Human studies indicate that alcohol exposure during gestation not only increases the chance for later alcohol abuse, but also nicotine dependence. The flavor attributes of both alcohol and nicotine can be important determinants of their initial acceptance and they both share the component chemosensory qualities of an aversive odor, bitter taste and oral irritation. There is a growing body of evidence demonstrating epigenetic chemosensory mechanisms through which fetal alcohol exposure increases adolescent alcohol acceptance, in part, by decreasing the aversion to alcohol''s bitter and oral irritation qualities, as well as its odor. Given that alcohol and nicotine have noteworthy chemosensory qualities in common, we investigated whether fetal exposure to alcohol increased the acceptability of nicotine''s odor and taste in adolescent rats. Study rats were alcohol-exposed during fetal development via the dams'' liquid diet. Control animals received ad lib access to an iso-caloric, iso-nutritive diet throughout gestation. Odorant-induced innate behavioral responses to nicotine odor (Experiment 1) or orosensory-mediated responses to nicotine solutions (Experiment 2) were obtained, using whole-body plethysmography and brief access lick tests, respectively. Compared to controls, rats exposed to fetal alcohol showed an enhanced nicotine odor response that was paralleled by increased oral acceptability of nicotine. Given the common aversive component qualities imbued in the flavor profiles of both drugs, our findings demonstrate that like postnatal alcohol avidity, fetal alcohol exposure also influences nicotine acceptance, at a minimum, by decreasing the aversion of both its smell and taste. Moreover, they highlight potential chemosensory-based mechanism(s) by which fetal alcohol exposure increases the later initial risk for nicotine use, thereby contributing to the co-morbid expression with enhanced alcohol avidity. Where common chemosensory mechanisms are at play, our results suggest broader implications related to the consequence of fetal exposure with one substance of abuse and initial acceptability of others.  相似文献

VOLATILE FLAVOR COMPOUNDS AFFECTING CONSUMER ACCEPTABILITY OF KIWIFRUIT   总被引:2,自引:0,他引:2  
Sensory research on kiwifruit has shown that specific sugars and acids, and volatile flavor compounds have causative effects on "sweet" and "acid" aroma and flavor attributes. New Zealand consumers (n = 162) assessed the perceived flavor intensity and acceptability of three volatile flavor compounds (ethyl butanoate, E-2-hexenal and hexanal) at varying levels in a model base solution. Increasing levels of ethyl butanoate positively affected all the acceptability attributes ("overall liking,""liking of aroma,""liking of flavor") as well as increased the perceived intensity of "kiwifruit aroma" and "kiwifruit flavor." Increasing levels of E-2-hexenal negatively affected all the acceptability attributes but increased the perceived intensity of "kiwifruit aroma" and "acid flavor." An increase in hexanal increased perceived intensity of "kiwifruit aroma." Ethyl butanoate and E-2-hexenel at the levels tested had the most prominent effects on consumer perceived intensity and acceptability of the "kiwifruit flavor."  相似文献

The present investigation explores the stimulus–response(psychophysical) functions for total nasal perceived intensityfor two pungent odorants, formaldehyde and ammonia, presentedeither alone or with different backgrounds of the other irritant.Stimuli were comprised of four formaldehyde concentrations (1.0,3.5, 6.9 and 16.7 p.p.m.); four ammonia concentrations (210,776, 1172 and 1716 p.p.m.); and their 16 binary mixtures. Ammoniafunctions showed a consistent upward concavity. At low, mediumand high concentrations, the total perceived intensity of themixtures showed hypoadditivity, simple additivity and hyperadditivity,respectively. That is, the intensity of the corresponding mixtureswas significantly lower than, equal to, or greater than thesum of its components. The progressive involvement of pungency,aroused by common chemical sense stimulation, may be responsiblefor the increasing additivity observed. Simple additivity, andeven hyperadditivity, may characterize mixtures involving commonchemical stimulation.  相似文献

Twenty subjects judged the taste and odor intensity and thetaste and odor pleasantness/unpleasantness of five concentrationsof sucrose, glycerol, a commercial triglycerol, a syntheticlinear diglycerol and a synthetic linear triglycerol. Judgmentsof intensity were made using the method of magnitude estimation;judgments of pleasantness/unpleasantness were made using a graphicline scale. Only the two linear polyglycerols had appreciableodor intensity. Both were described as having an ‘acrid’or ‘burnt caramel’ quality. The odor exponent forthe linear triglycerol was extremely high (1.44) and may beattributed to its intensely unpleasant quality. Sucrose wascharacterized solely by sweet taste, glycerol and the commercialtriglycerol by sweet and bitter tastes, the linear diglycerolby sweet, bitter and sour tastes, and the linear triglycerolby bitter and sour tastes. The relationships between perceivedtaste intensity and concentration were well described by powerfunctions, although the slope of the psychophysical functionfor the linear triglycerol was markedly lower than that forthe other compounds. The relative order of taste intensitieswas: linear triglycerol > sucrose > glycerol = lineardiglycerol > commercial triglycerol. Judgments of taste (andodor) pleasantness/unpleasantness showed only sucrose and glycerolto have positive hedonic qualities. All the polyglycerols werejudged unpleasant at all concentrations. Differences in thetaste and odor characteristics of the commercial and synthetictriglycerols were attributed to the commercial product beinga mixture of over 20 compounds. Although the synthetic lineardi- and triglycerols are effective in lowering water activity,these data suggest that more purified crystalline forms mustbe synthesized before they can be used effectively as humectantsfor intermediate moisture foods.  相似文献

Explorations of the qualitative and quantitative differencesbetween the odors of pemenone (PEM), androstenone (AND) andisovaleric acid (IVA) show that they share a number of commonperceptual characteristics. Among these are similarities intheir odor quality and relative intensity ratings. PEM is alsoan efficient cross-adaptor and modulator of a subject's ANDsensitivity. Here we evaluate the reciprocal efficacy of ANDadaptation to alter the perceived intensity and quality of PEM,IVA and AND. Twenty-three people, including both those osmicand allosmic (n = 11) for the putrid odor quality of PEM, weretested. Following training in odor quality and intensity ratingtechniques, subjects sampled a selected substance for 2 minto obtain adaptation and then reported quality and intensityratings for the three test stimuli. There was significant self-adaptationby PEM and IVA in all subjects, but self-adaptation by AND wasonly observed in the PEM-osmic subjects. AND did not cross-adaptPEM or IVA to any significant extent. Collectively, these resultscontrast with our earlier study in which PEM was an efficientcross-adaptor of AND. Here, AND was no more efficient than thecontrol as an adapting substance for PEM, despite significantself-adaptation of PEM by itself. This lack of reciprocity inthe effectiveness of PEM and AND as cross-adapters is not relatedto differences in odor intensity, as the PEM and AND concentrationswere adjusted for each subject to elicit comparable intensityreports. These results support the notion that PEM, AND andIVA share certain perceptual characteristics, but interact differentiallywith three or more sets of perceptual channels that are nowthought to result in a putrid odor quality.
