Twelve bacterial strains belonging to eight taxonomic groups: Brevibacterium linens, Microbacterium foliorum, Arthrobacter arilaitensis, Staphylococcus cohnii, Staphylococcus equorum, Brachybacterium sp., Proteus vulgaris and Psychrobacter sp., isolated from different surface-ripened French cheeses, were investigated for their abilities to generate volatile aroma compounds. Out of 104 volatile compounds, 54 volatile compounds (identified using dynamic headspace technique coupled with gas chromatography-mass spectrometry [GC-MS]) appeared to be produced by the different bacteria on a casamino acid medium. Four out of eight species used in this study: B. linens, M. foliorum, P. vulgaris and Psychrobacter sp. showed a high flavouring potential. Among these four bacterial species, P. vulgaris had the greatest capacity to produce not only the widest varieties but also the highest quantities of volatile compounds having low olfactive thresholds such as sulphur compounds. Branched aldehydes, alcohols and esters were produced in large amounts by P. vulgaris and Psychrobacter sp. showing their capacity to breakdown the branched amino acids. This investigation shows that some common but rarely mentioned bacteria present on the surface of ripened cheeses could play a major role in cheese flavour formation and could be used to produce cheese flavours.  相似文献

We used gas chromatography-mass spectrometry (GC-MS) to analyze total yields and relative composition of the volatile compounds from leaf extracts ofElshoizia cilliata. This species contains 22 compounds. The major constituents of its essential oils are dihydrotagetone (62.7%), ß-caryophellene (4.96%), germacrene-d (4.03%), and ±-humulene (1.34%). Compounds in these leaf extracts are remarkably high in dihydrotagetones (40.5 to 81.6%). The total amount of monoterpenoids is 3.17 to 7.03 times greater than that of sesquiterpenoids, and is highly correlated with the level of dihydrotagetone (r = 0.97). Seasonal variations are significantly different only for dihydrotagetone (p < 0.0005), but not for the yields of other volatile compounds.

为探究4个采收月份(即2018年的12月和2019年的1月、2月、3月)广西莪术挥发性成分的差异性及动态变化规律,该研究利用气相色谱-质谱联用仪(GC-MS)对挥发性成分进行分析鉴定,并运用化学计量学方法对相对含量在1%以上的挥发性成分进行数据分析。结果表明:经GC-MS分析均鉴定出34种挥发性成分,不同采收月份广西莪术挥发性成分相对含量存在差异性;主成分聚类分析均分为4类,采用偏最小二乘法判别分析发现7个差异性化合物,其中莪术呋喃二烯酮的含量在1月份达到峰值,吉马酮和humulene 2,3-epoxide两个化合物的相对含量均在2月份达到最高,莪术烯、萜品油烯、异龙脑和表莪术呋喃烯酮在3月份达到峰值。该研究结果为广西莪术的质量控制、生长过程控制以及其他开发研究提供了参考依据。  相似文献

The effects on the redlegged earth mite (Halotydeus destructor) (Acarina: Penthaleidae) of volatile compounds released from artificially damaged cotyledons of subterranean clover (Trifolium subterraneum L.), a host plant, were investigated with different assays. Mites were repelled by the volatile compounds in flask tube and in trimmed cotyledon disc tests. No differences could be shown between different tissue amounts and between resistant and susceptible varieties. When a membrane sachet was used containing either 2-(E)-hexenal, a compound produced by damaged subclover cotyledons, or the total volatile compounds collected from damaged cotyledons of Dalkeith (susceptible) admixed with 1% glucose, mites gathered to low but were deterred by high concentrations of the compounds. Volatile compounds collected from the resistant variety DGI007 were more deterrent than those from the susceptible Dalkeith. Membrane sachets containing 30 p.p.m. of 2-(E)-hexenal and 1% glucose were less preferred than cotyledons of Dalkeith (susceptible) but were not different from DGI007 (resistant). By increasing the glucose concentration to 5%, the membrane sachets with 30 p.p.m. of 2-(E)-hexenal were preferred to cotyledons of either variety. The results indicate that the membrane feeding technique provides a sensitive way of assaying volatile compounds from damaged subclover cotyledons against the mite.  相似文献

The compositions of the volatile and polar fractions from two coexisting Black Sea invertebrates, the mussel Mytilus galloprovincialis and the beadlet anemone Actinia equina, were established. The main metabolites in the volatile fraction from the investigated animals appeared to be methyl esters of fatty acids and fatty aldehydes. In the polar fraction from both animals low concentrations of free acids and nitrogen-containing compounds were obtained. Free carbohydrates were in much higher concentrations in M. galloprovincialis than in A. equina. Some sterols, probably as polar conjugates, were identified mainly in A. equina. Significant changes among all compounds appeared after treatment of both invertebrates with two different concentrations of cobalt ions. The variety of changes in each invertebrate could be due to their different evolutionary status. The effect of cobalt ions was often stronger at medium cobalt-ion concentrations.  相似文献

Volatile compounds released from callus and nucellar embryo tissues of ‘Valencia late’ and ‘Washington Navel’ sweet oranges (Citrus sinensis, L. Osbeck) were collected/concentrated by head space solid phase micro extraction and analysed by gas chromatography-mass spectrometry. Friable, white embryogenic cultures released a number of volatile compounds, including some essential oils. Different samples of the same embryogenic culture showed variability, possibly related to the presence of tissues undergoing differentiation. Analyses of the somatic embryos permitted the identification of several components, including limonene and methyl anthranilate. Considering the simplicity and the very small sample required (0.3 g of fresh tissue) head space solid phase micro extraction is suitable for studies and comparisons of volatile metabolites released from in vitro Citrus tissue cultures suggesting its potential in Citrus biochemical, genetic and breeding research. Improving fruit quality of apple varieties is an important but complex breeding goal. Flavour is among the key factors of apple fruit quality but in spite of the analytical and biochemical knowledge about volatiles little is known about the genetic and molecular bases of apple aroma. The aim of this study was to use a saturated molecular linkage map of apple to identify QTLs for aroma compounds such as alcohols, esters and terpenes, but also for a number of unidentified volatile compounds (non-targeted analysis approach). Two parental genetic maps were constructed for the apple cultivars ‘Discovery’ and ‘Prima’ by using mainly AFLP and SSR markers. ‘Discovery’ and ‘Prima’ showed very different volatile patterns, and ‘Discovery’ mostly had the higher volatile concentrations in comparison with the Vf-scab resistant ‘Prima’ which has its origin in the small-fruited apple species Malus floribunda. About 50 putative QTLs for a total of 27 different apple fruit volatiles were detected through interval mapping by using genotypic data of 150 F1 individuals of the mapping population ‘C3’ together with phenotypic data obtained by head-space solid phase microextraction gas chromatography. QTLs for volatile compounds putatively involved in apple aroma were found on 12 out of the 17 apple chromosomes, but they were not evenly dispersed. QTLs were mainly clustered on linkage groups LG 2, 3 and 9. In a first attempt, a LOX (lipoxygenase) candidate gene, putatively involved in volatile metabolism, was mapped on LG 9, genetically associated with a cluster of QTLs for ester-type volatiles. Implications for aroma breeding in apple are discussed.  相似文献

Summary The yeast fungus Dipodascus aggregatus was grown aerobically on 9 different nitrogen sources and the production of volatile compounds determined by a gas chromatographic head-space technique. Excellent growth was supported by glutamine, aspartic acid, asparagine, (NH4)2-tartrate and NH4H2PO4. Valine, leucine, and particularly isoleucine were utilized with a somewhat lower growth rate. Lysine was rapidly utilized after a prolonged lag phase.The highest production of volatile compounds was obtained from leucine and isoleucine. At least 20 volatile compounds were formed from each of them and many products were detected in high concentrations. Intermediate amounts of volatile compounds were produced from asparagine, the ammonium salts and valine, and low amounts from lysine, glutamine and aspartic acid.Ethyl acetate was a major product irrespective of the nitrogen source used. Regarding the pattern of volatile compounds produced, leucine, isoleucine and valine had much in common. Most of the volatile products formed from these amino acids contained a branched carbon chain and at least three high-boiling components eluted later than n-amyl acetate from the gas chromatographic column. The other six nitrogen sources could be grouped together. In general the same volatile compounds were formed from these sources, but the quantities of the individual compounds differed. Only one component eluted later than n-amyl acetate. No basic difference in production of volatile compounds was observed between the ammonium salts and -amino compounds like lysine and asparagine.  相似文献

 Plants produce volatile compounds known to influence insect preferences for oviposition and feeding. To examine whether volatile leaf compounds are correlated with the herbivorous insect community, we analyzed volatile compounds in leaves from three co-occurring willow species, Salix serissaefolia, S. eriocarpa, and S. integra, and investigated their associated insect communities in 3 months across different years. The gas chromatographic profiles of volatile compounds were highly specific to each willow species and remained constant in the study months. In a comparison between the chemical composition of the volatile compounds and the taxon composition of the insect communities, dissimilarity patterns in chemical composition among the three willow species were very close to those in herbivorous insect communities. These findings indicate that willow leaves produce specific volatiles that are highly correlated with the community structure of herbivorous insects associated with them. Information on intra-specific variation in pollinator-attracting floral traits provides clues to selective pressures imposed by pollinators. However, these traits also reflect constraints related to floral phenology or morphology. The specific weevil pollinator Derelomus chamaeropsis of the dioecious Mediterranean dwarf palm Chamaerops humilis is attracted by volatile compounds that leaves, and not flowers, release during anthesis. Production of these olfactory cues is thus probably not constrained by any other floral function. This provides the opportunity to study variation of a floral trait that is not produced by a floral organ. We studied volatile compounds emitted by leaves of 12 individual C. humilis over the whole flowering season. The quantity of volatile compounds emitted by leaves reached a maximum when plants required pollinator visits. The relationship between odour emission and floral phenology was slightly different between male and female plants, probably reflecting differences in the exact time at which females and males benefit from pollinator visitation. Male plants produced higher quantities of volatile compounds than females. Odour composition was highly variable among individuals but did not differ between male and female plants. In this system, female C. humilis are pollinated by deceit and pollinators should be selected to avoid visiting them. 采用顶空-气相色谱-质谱联用法对灵芝发酵物的风味物质进行了定性和定量测定。结果表明,灵芝发酵物中至少含有31种风味物质。对其中21种主要成分进行了鉴定,这些物质大多是酮类、醇类和内酯类化合物。所有物质中4,5-二氢-3,5-二甲基-2-呋喃酮的含量最高,达64.12%。此外,3-戊烯-2-酮和戊基乙烯基原醇是已知的食品香料成分。结果有助于初步理解灵芝发酵物产生清淡香味的原因。  相似文献

Four volatile compounds emitted from fungus-infected date fruit,Phoenix dactylifera L., were identified using coupled gas chromatographic-electroantennographic recordings, coupled gas chromatographic-mass spectrometric analysis, electroantennographic assays of synthetic standards, and wind tunnel bioassays. These compounds were ethyl hexanoate, ethanol, acetaldehyde, and 2-phenylethanol. Wind tunnel bioassays showed that ethyl hexanoate was capable of stimulating upwind flight and landing on the source by mated female carob moths,Ectomyelois ceratoniae (Zeller). Addition of both ethanol and acetaldehyde to ethyl hexanoate resulted in an increase in attraction to a level similar to that found for date fruits. No such effect was noted for additions of 2-phenylethanol at the dosages tested. In this study, it appears that ethyl hexanoate is a dominant olfactory stimulant and attractant for mated female carob moths, and represents a novel compound with regard to previously identified lepidopteran host odor attractants.  相似文献

Rhus coriaria, also known as Sumac, has been traditionally used in many countries as spice, condiment, dying agent, and medicinal herb. The chemical composition of essential oils (EOs) and the volatile emissions from different organs of this species collected in Sicily (Italy) were analyzed by gas chromatography‐flame ionization detection and gas chromatography/mass spectrometry. Monoterpene and sesquiterpene hydrocarbons were the most abundant class in the volatile emissions with β‐caryophyllene and α‐pinene were the main constituents in the majority of the examined samples. The EO composition was characterized by high amount of monoterpene and sesquiterpene hydrocarbons together with diterpenes. The main compounds in the EO obtained from the leaves and both stages of fruit maturation were cembrene and β‐caryophyllene, while α‐pinene and tridecanoic acid were the key compounds in the flower EO. All the data were submitted to multivariate statistical analysis showing many differences among the different plant parts and their ontogenetic stages.  相似文献

采用水蒸气蒸馏法提取,运用毛细管气相色谱/质谱联用法首次对毛冬瓜根挥发油化学成分进行了分析研究,确认了其中的49种化合物,用气相色谱面积归一法测定各组分的相对百分含量.在分离出的主要挥发性成分中含有烃类(22.26%)、醛酮类(8.52%)、醇类(45.38%)、酚类(1.08%)、羧酸类(7.69%)、酯类(7.18%)、杂环类(2.72%)和环氧类(3.39%)等8大类.在主要成分中以萜类化合物为主(62.20%),包括5种单萜(5.29%)和17种倍半萜(56.91%).其中多种成分为已知药用成分,为进一步评价其质量和开发新药提供了基础数据.  相似文献

The production of volatile compounds by Dipodascus aggregatus was studied in relation to the oxygen concentration in the medium. Oxygen concentration was determined with a Clark oxygen electrode and volatile compounds in the atmosphere above the culture by a gas chromatographic technique. Shake cultures of the fungus in its stationary phase of growth were very sensitive to a decrease in oxygen concentration in the presence of residual glucose. Anaerobic conditions induced production of volatile compounds that continued for many hours. The pattern of production of volatile compounds observed under conditions of low oxygen concentration during the stationary phase of growth differed from that obtained under aerobic conditions during the exponential phase of growth.  相似文献

The evolution of volatile compounds produced during solid substrate cultivation (SSC) of Gibberella fujikuroi on wheat bran was tracked looking for volatile metabolites related with GA3 production. Ethyl acetate and isoamyl acetate gave identical profiles and sharp increases that abated as the production of GA3 began, while ent-kaurene displayed a profile matching that of the development of GA3. ent-Kaurene is a precursor in the synthesis of gibberellins and was the most abundant compound found.  相似文献

Bacterial antagonists are bacteria that negatively affect the growth of other organisms. Many antagonists inhibit the growth of fungi by various mechanisms, e.g., secretion of lytic enzymes, siderophores and antibiotics. Such inhibition of fungal growth may indirectly support plant growth. Here, we demonstrate that small organic volatile compounds (VOCs) emitted from bacterial antagonists negatively influence the mycelial growth of the soil-borne phytopathogenic fungus Rhizoctonia solani Kühn. Strong inhibitions (99–80%) under the test conditions were observed with Stenotrophomonas maltophilia R3089, Serratia plymuthica HRO-C48, Stenotrophomonas rhizophila P69, Serratia odorifera 4Rx13, Pseudomonas trivialis 3Re2-7, S. plymuthica 3Re4-18 and Bacillus subtilis B2g. Pseudomonas fluorescens L13-6-12 and Burkholderia cepacia 1S18 achieved 30% growth reduction. The VOC profiles of these antagonists, obtained through headspace collection and analysis on GC-MS, show different compositions and complexities ranging from 1 to almost 30 compounds. Most volatiles are species-specific, but overlapping volatile patterns were found for Serratia spp. and Pseudomonas spp. Many of the bacterial VOCs could not be identified for lack of match with mass-spectra of volatiles in the databases.  相似文献

为探究贯叶马兜铃(Aristolochia delavayi)在不同地理居群挥发性成分含量的变化情况,该文采用固相微萃取-气质联用技术分析了来自五个不同地理区域的贯叶马兜铃叶的挥发性成分,并用气相色谱面积归一化法对各成分进行了定量。结果表明:四个贯叶马兜铃居群植株叶挥发性主成分均为癸烯醛,且占有较高比例。香格里拉三坝乡、丽江大具、楚雄铁锁乡和禄劝则黑乡四个居群植株叶中挥发性成分癸烯醛分别占挥发性成分检出总量的63.5%、79.3%、69.9%、79.6%,其中大具和禄劝两居群含量相对较高并且稳定性较好。分布在鹤庆黄坪的居群,检测出其挥发性主成分为乙酸龙脑酯(30.1%),但癸烯醛含量仅占4.5%,该结果与其他居群有明显差异。通过对该物种不同居群植株叶片挥发性癸烯醛含量的分析,确定了质量更好的种源,同时结合该植物所含马兜铃酸的情况,提出了健康安全的食用方式。该研究结果为合理开发贯叶马兜铃的经济价值及保护该濒危物种提供了技术指导和理论支持。  相似文献

The flavours contained in a mammalian mother's milk can exert a marked influence on her offspring's proximate suckling behaviour and later preferences. The aim of this study was to establish a reliable analytical procedure to characterise the mammary transfer of selected volatile constituents of maternal food from non-pregnant and recently parturient ewes. Six known volatile compounds, most representative of cumin aroma (α-pinene, γ-terpinene, cuminaldehyde, p-cymene, limonene and cineole), were traced in the blood and milk of ewes fed with cumin seeds, using liquid-liquid extraction combined with gas chromatography-specific ion monitoring mass spectrometry. Among the six cumin odour markers, only one, p-cymene, was transfered in quantifiable amounts into the venous plasma. The other cumin markers could only be detected as traces corresponding to amounts lower that the limit of quantification. In milk, four of the cumin markers could be detected, and two of these were quantified.  相似文献
