The use of 4-methylumbelliferyl-β- D -glucuronide (MUG) in different solid media for the detection and enumeration of Escherichia coli in foods was evaluated by testing the effects of different substrate concentrations (50 or 100 μg ml−1), incubation temperatures (37 or 41·5°C) and incubation times (8, 12, 24 and 48 h). Different kinds of foods, both naturally and artificially contaminated, were analysed. The use of selective media without differential substances and an incubation time of 24 h seem to be worthy of recommendation. In this case an incubation temperature of 37°C would be preferred and the MUG concentration could be reduced to 50 μg ml−1. Incubation times shorter than 24 h, which may cause a loss of sensitivity, require higher incubation temperatures (41·5°C) and MUG concentration (100 μg ml−1).  相似文献

The jaw movements and muscular activity of masticatory muscles of five assessors, having bitterness thresholds about 8 μM quinine in water, were monitored throughout chewing of similar strength gelatin gels containing 0, 40, 70 or 100 μM quinine. Gel bitterness ratings were not related to sensory texture which was 78kN/m2 by shear test. On average, 100 μM quinine gels were as bitter as 7 to 30 μM quinine in water, depending on the assessor. Chewing patterns were not affected by concentration of quinine in the gels. During mastication of acceptable gels, there appears to be no feedback from taste to the motor control of mastication. In gels of the same consistency and the same concentration of quinine, assessors who chewed more rated higher for bitterness. The implications for mimicking mastication by machine and the training of assessors for solid foods are discussed.  相似文献

A population genetic study was undertaken to investigate the origin of Koreans. Thirteen polymorphic and 7 monomorphic blood genetic markers (serum proteins and red cell enzymes) were studied in a group of 437 Koreans. Genetic distance analyses by both cluster and principal components models were performed between Koreans and eight other populations (Koreans in China, Japanese, Han Chinese, Mongolians, Zhuangs, Malays, Javanese, and Soviet Asians) on the basis of 47 alleles controlled by 15 polymorphic loci. A more detailed analysis using 65 alleles at 19 polymorphic loci was performed on six populations. Both analyses demonstrated genetic evidence of the origin of Koreans from the central Asian Mongolians. Further, the Koreans are more closely related to the Japanese and quite distant from the Chinese. The above evidence of the origin of Koreans fits well with the ethnohistoric account of the origin of Koreans and the Korean language. The minority Koreans in China also maintained their genetic identity.  相似文献

Fresh mango (Mangifera indica) kernel was processed by soaking, sulphiting, blanching, drying and grinding into a powder, as processed mango kernel flour (PMKF), which could be substituted for wheat flour (WF) in biscuits. PMKF was incorporated into four grades of biscuits containing 50–100% PMKF (flour replacement basis). Results showed that the PMKF had lower contents (g kg−1) of moisture (91), protein (66), higher fat (94), fibre (28) and ash (11) than WF used. The total carbohydrate contents of PMKF and WF were similar (710 g kg−1) with starch constituting 500 g kg−1. The 50:50 biscuit grade was preferred by panelists for colour, texture, flavour and overall acceptability. Other grades were favored only for the brown coloration, probably due to the contribution of the residual tannin in PMKF. The preferred biscuit had optimum protein supplementation and an increased 6.5% energy content compared with whole-wheat biscuit. These findings could encourage commercial manufacture of PMKF – WF blend biscuits where mango is abundant.  相似文献

Abstract:  Monosodium glutamate, a taste enhancer widely used in food industry, was tested in the laboratory to determine its phagostimulatory effects on larvae of Choristoneura rosaceana (Harris). Larvae fed apple leaves treated with 50–700  μ g/l monosodium glutamate increased leaf tissue consumption by approximately 40%. The stimulatory effect of monosodium glutamate (at 675  μ g/l concentration) was maintained throughout 10 days of continuous exposure. Adding 675  μ g/l monosodium glutamate to commercial formulation of Bacillus thuringiensis ssp. kurstaki, (DiPel®2X DF), lowered LC50 from 450 to 150  μ g/l (P < 0.05, Lethal Ratio Significance Test), indicating good potential for monosodium glutamate to enhance B. thuringiensis -based formulations.  相似文献

Nucleotide sequences of the major noncoding (D-loop) region of human mtDNA from five East Asian populations including mainland Japanese, Ainu, Ryukyuans, Koreans, and Chinese were analyzed. On the basis of a comparison of 482-bp sequences in 293 East Asians, 207 different sequence types were observed. Of these, 189 were unique to their respective populations, whereas 18 were shared between two or three populations. Among the shared types, eight were found in common between the mainland Japanese and Koreans, which is the largest number in the comparison. The intergenic COII/tRNA(Lys) 9-bp deletion was observed in every East Asian population with varying frequencies. The D-loop sequence variation suggests that the deletion event occurred only once in the ancestry of East Asians. Phylogenetic analysis revealed that East Asian lineages were classified into at least 18 monophyletic clusters, though lineages from the five populations were completely intermingled in the phylogenetic tree. However, we assigned 14 of the 18 clusters for their specificity on the basis of the population from which the maximum number of individuals in each cluster was derived. Of note is the finding that 50% of the mainland Japanese had continental specificity in which Chinese or Koreans were dominant, while < 20% of either Ryukyuans or Ainu possessed continental specificity. Phylogenetic analysis of the entire human population revealed the closest genetic affinity between the mainland Japanese and Koreans. Thus, the results of this study are compatible with the hybridization model on the origin of modern Japanese. It is suggested that approximately 65% of the gene pool in mainland Japanese was derived from the continental gene flow after the Yayoi Age.  相似文献

Purine contents of soybean-derived food and various other Japanese foods were quantitatively determined by high-performance liquid chromatography (HPLC). Purine contents were as follows: soybean-derived foods, 21.9-172.5 mg/100 g or 100 mL; Japanese vegetables, 2.3-171.8 mg/100 g; Japanese mushrooms, 9.5-142.3 mg/100 g. Since purine levels in these foods did not exceed 200 mg/100 g, we recommend that eating of them should be adopted and good dietary habits followed.  相似文献

The heat treatment necessary to inactivate spores of non-proteolytic Clostridium botulinum in refrigerated, processed foods may be influenced by the occurrence of lysozyme in these foods. Spores of six strains of non-proteolytic Cl. botulinum were inoculated into tubes of an anaerobic meat medium, to give 106 spores per tube. Hen egg white lysozyme (0–50 μg ml-1) was added, and the tubes were given a heat treatment equivalent to 19·8 min at 90°C, cooled, and incubated at 8°, 12°, 16° and 25°C for up to 93 d. In the absence of added lysozyme, neither growth nor toxin formation were observed. A 6–D inactivation was therefore achieved. In tubes to which lysozyme (5–50 μg ml-1) had been added prior to heating, growth and toxin formation were observed. With lysozyme added at 50 μg ml-1, growth was first observed after 68 d at 8°C, 31 d at 12°C, 24 d at 16°C, and 9 d at 25°C. Thus, in these circumstances, a heat treatment equivalent to 19·8 min at 90°C was not sufficient, on its own, to give a 6–D inactivation. A combination of the heat treatment, maintenance at less than 12°C, and a shelf-life not more than 4 weeks reduced the risk of growth of non-proteolytic Cl. botulinum by a factor of 106.  相似文献

Effects of short-term ozone (O3) fumigation on radish (Raphanus sativus L.) plants were examined in growth chambers under controlled environment conditions. Plants were exposed to 0 μg/m3 (reference), 80 μg/m3, 160 μg/m3 and 240 μg/m3 O3 concentrations for 7 h per day for five days. Day/night temperature was 21°C/14°C and photoperiod 16 h. Chlorophyll content was evaluated spectrophotometrically. Chromatographic analysis of saccharides was also undertaken. The results showed that elevated O3 inhibited the growth of radish rhizocarps, net assimilation rate and biomass accumulation. O3 induced leaf desiccation, necrosis and premature senescence, but a typical reaction of plants to O3 stress was the rapid regeneration of new leaves. O3 inhibited accumulation of carotenoids more than chlorophylls. The higher photosynthetic pigment content in newly generated radish leaves may be regarded as an adaptation of the photosynthetic system to O3. Leaf saccharide metabolism and incorporation depended on O3 concentration. Rapid regeneration of new leaves and increased content of photosynthetic pigments is the typical reaction of radish plants to O3 stress.  相似文献

The influence of the Japanese superstition that females born in the year of Hinoe-Uma (Elder Fire Horse) possess undesirable characters and should not marry on the fertility of the Korean immigrant population in Japan was examined and compared with the influence of this superstition on the Japanese in Japan and the Korean population in Korea. The year of Hinoe-Uma occurs once in every 60 years according to the ancient Sino-Japanese almanac. For both the Koreans in Japan and the Japanese a remarkable drop in crude birthrates and a sharp increase in stillbirth rates was found for 1966. In contrast, Koreans in Korea showed only a steady decline in the crude birthrate. Clearly, the Japanese folk superstition played an important part in discouraging Koreans in Japan from having a child in 1966. The fact that no such effect was apparent among Koreans living in Korea suggests that this phenomenon is due to either the adoption or the mimicry of cultural practices on the part of the immigrant population.  相似文献

The commercially available dog food samples (29 dry foods and 11 wet foods) were analysed for deoxynivalenol (DON) and ochratoxin A (OTA) using ELISA. All (100%) dry foods were contaminated with DON with various amount of the toxin (22-1837 μg/kg). In wet food 3 samples were found to be positive for DON in the range of 95-170 μg/kg. There were a few samples contaminated with OTA: 3 samples in dry foods (7-40 μg/kg) and 2 samples in wet foods (45 and 115 μg/kg).  相似文献

This study aimed to analyze the amounts of copper, selenium, and molybdenum among trace minerals in foods and to evaluate their daily intakes in Korean adults. Contents of copper, selenium, and molybdenum in 366 varieties of foods commonly consumed by Koreans were analyzed using inductively coupled plasma atomic emission spectrometry and inductively coupled plasma mass spectrometry, techniques with low detection limits as well as high reproducibility and precision. Next, we evaluated the status of trace mineral intake using the 24-h recall method after conducting anthropometric measurements on 249 male and 344 female adults aged 20 or older. The average daily energy intake for males was 7,452.8 kJ, significantly higher than the 6,118.3 kJ for females (p < 0.001). The average daily copper, selenium, and molybdenum intakes by males were 1,156.7, 135.5, and 12.2 μg, respectively, compared to 1,028.5, 122.9, and 10.1 μg, respectively, by females. In males, the intake levels of copper and molybdenum were both significantly higher than in females. By continuously evaluating intake levels in this manner, it is anticipated that reference intakes of trace minerals will be established.  相似文献

Background

Our current understanding of Asian American mortality patterns has been distorted by the historical aggregation of diverse Asian subgroups on death certificates, masking important differences in the leading causes of death across subgroups. In this analysis, we aim to fill an important knowledge gap in Asian American health by reporting leading causes of mortality by disaggregated Asian American subgroups.

Methods and Findings

We examined national mortality records for the six largest Asian subgroups (Asian Indian, Chinese, Filipino, Japanese, Korean, Vietnamese) and non-Hispanic Whites (NHWs) from 2003-2011, and ranked the leading causes of death. We calculated all-cause and cause-specific age-adjusted rates, temporal trends with annual percent changes, and rate ratios by race/ethnicity and sex. Rankings revealed that as an aggregated group, cancer was the leading cause of death for Asian Americans. When disaggregated, there was notable heterogeneity. Among women, cancer was the leading cause of death for every group except Asian Indians. In men, cancer was the leading cause of death among Chinese, Korean, and Vietnamese men, while heart disease was the leading cause of death among Asian Indians, Filipino and Japanese men. The proportion of death due to heart disease for Asian Indian males was nearly double that of cancer (31% vs. 18%). Temporal trends showed increased mortality of cancer and diabetes in Asian Indians and Vietnamese; increased stroke mortality in Asian Indians; increased suicide mortality in Koreans; and increased mortality from Alzheimer’s disease for all racial/ethnic groups from 2003-2011. All-cause rate ratios revealed that overall mortality is lower in Asian Americans compared to NHWs.

Conclusions

Our findings show heterogeneity in the leading causes of death among Asian American subgroups. Additional research should focus on culturally competent and cost-effective approaches to prevent and treat specific diseases among these growing diverse populations.  相似文献

Japanese isolates of Bacillus thuringiensis were screened for larvicidal activity against the mosquito Anopheles stephensi , the urban malaria vector of the Indian subcontinent. Among more than 30 strains identified, larvicidal activity causing >80% mortality in 72 h was demonstrated for 41/1449 (2.8%) isolates. The majority of strains and isolates (97.2%) exhibited little or no larvicidal activity. Anopheles -active strains belonged to more than 12 H serotypes, especially H3ade (serovar fukuokaensis ) and H44 (serovar higo ). SDS-PAGE profiles of inclusion proteins showed 4 distinct types among 6 active strains examined. The most active Japanese isolates were H20 strain 89-T-34-14 (LC50 4.4 μg/ml) and H44 serovar higo strain 74-E-45-24 (LC50 7.6 μg/ml), respectively, 13-fold and 23-fold less active than the international standard H14 serovar israelensis (LC50 0.33 μg/ml).  相似文献

This study explored the possibility of replacing skimmed milk – a core ingredient of High-energy biscuit (HEB), with edible-insects as inexpensive and sustainable alternative sources. HEB was formulated to meet the USAID 2016 (STD) nutritional standards and powdered locust and mulberry silkworm pupae (LP and SWP) at 15% inclusion, were used as alternative protein sources. Preliminary nutrients composition of the insect powders were examined. Physicochemical, sensory and microbial qualities of insect-enriched biscuits (LPB and SWPB) were evaluated and compared with that of skimmed milk (SMB) and STD. Spread ratios of the biscuits were between 7.8 and 11.6 – a technically acceptable range for biscuits. SWP possessed impressive amounts of protein (60.7 g/100 g), fat (23.5 g/100 g) and energy contents (498.93 kcal/100 g), while LP had slightly more fibre (1.4 g/100 g), ash (2.1 g/100 g) and carbohydrate (31.5 g/100 g). LPB and SWPB had relatively similar proximate compositions as SMB with slight variations, and all the HEBs were above USAID minimum standard. SWPB was marginally below requirements for Ca and Mg minerals, but both (SWPB and LPB) had more than twice the recommended pro-vitamin A (918.44 and 957.65 µg/100 g) and vitamin C contents (102.17 and 98.51 mg/100 g). All the samples received reasonably good sensorial rankings; but SMB’s aroma was preferred. Similarly, microbial quality assessment of the products reflected remarkable hygienic sample preparation. These results demonstrated that HEB of significant nutritional, sensorial and microbial qualities could be developed using edible-insects as alternative protein sources.  相似文献

Genome-wide SNP arrays have generated unprecedented quantities of data allow the detection of human evolutionary history and dense genome-wide data also enable the identification of distance ancestry among individuals or ethnic groups. To explain wider aspects of the genetic structure of Koreans and the East Asian population, we analyzed 79 individuals from the Korean HapMap project at 555,352 common single-nucleotide polymorphism loci, and compared this data with the worldwide population groups with the 53 ethnic groups from Human Genome Diversity Panel (HGDP-CEPH). Population differentiation (FST), Principal Component Analyses, STRUCTURE and ADMIXTURE are examined. In general, all the individual samples studies here were classified into subset of ethnic groups according to their geographical origins. Korean HapMap individuals were grouped together with East Asian populations from HGDP panel. Recently, a sub-population structure within Korean population has been reported. Our result, however, revealed the genetic homogeneity of Korean population. The ADMIXTURE analysis showed that, overall the Korean populations derive 79 % of their genomic ancestry from southern Asia and have relatively little northern Asian ancestry (21 %). The present work, therefore, provide the evidence that the male-biased southern-to-northern migration influenced not only for the genetic make up of the Y chromosome in the Korean population but also, its autosomal composition.  相似文献

Various Japanese foods were treated with 22 mm nitrite at pH 3 for 1 hr at 37°C. Ethyl acetate extracts of the nitrosation mixtures were examined for their total NC content and mutagenicity to Salmonella typhimurium TA 100 to search for foods which formed a considerable amount of N-nitroso compounds (NCs) but showed no mutagenicity.

Most of the foods (32/35) formed NCs at levels in the range of 22–4758 μmol N-NO/kg after the nitrite treatment. Among these foods, fermented products had a high level of NCs (mean = 952 μmol N-NO/kg), vegetables, cereals and fruits had a moderate level of NCs (mean = 225 μmol N-NO/kg), and meat and fish had a low level of NCs (mean = 99 μmol N-NO/kg). Only five kinds of food, i.e., soy sauce, salted Chinese cabbage, cabbage, Japanese radish and sausage, showed mutagenicity to Salmonella typhimurium TA 100. These results imply that considerably large amounts of various precursors of non-mutagenic NCs are present in foods, especially in some fermented products and citrus fruits.  相似文献

Blood lead levels of 634 healthy Japanese (422 males and 212 females), aged 0–87, living in the Kyushu and Okinawa Islands, were determined by the colorimetric dithizone method and atomic absorption spectrometry. The lead level in the atmospheric environment was not extremely high; it was below 1 μg/m3 in most of the places examined. The differences in the geometric means of blood lead levels between 0–5 yr and other age groups were statistically significant (P<0.01). The blood lead levels of Japanese seem to increase in late teens and then decrease slowly to a steady state. The accumulation of lead taken from food was calculated by assuming the amount of lead from food corresponds to the caloric intake recommended for each Japanese age group (e.g., assuming 150 μg/2700 kcal for boys in late teens). Lead concentration in the air was assumed to be 1 μg/m3. The pattern of lead accumulation in blood by age was similar to the theoretical curve for the accumulated total amount of lead obtained by simulation. The fact probably indicates that blood lead levels in Japanese are dependent on lead in daily foods rather than on lead in the atmospheric environment.  相似文献

Experiments were conducted to determine the optimum dose of luteinizing hormone-releasing hormone analogue (LHRHa) and pimozide (PIM) injected simultaneously to yield a high ovulation rate and produce sufficient eggs in the Asian catfish Clarias macrocephalus . In June 1990, injection of 0.05 or 0.10 μg LHRHa/g body weight (BW) + 1 μg PIM/g resulted in 100% ovulation, while only 80% of gravid catfish injected 0.025 μg LHRHa + 1 μg PIM/g ovulated. Most of the eggs stripped from 6 out of 8 control fish were not mature. Fertilization and hatching rates of LHRHa + PIM-induced fish (75–90% and 39–51%, respectively) were higher than those of control fish (36–39% and 0–1% respectively). In August and September 1990, at gravid catfish ovulated after injection of 0.05–0.10 μg LHRHa + 1 μg PIM/g BW. However, only 20% of the fish given 0.025 μg LHRHa/g + 1 μg PIM/g BW in August ovulated. No eggs could be striped from any of the control fish in August and September 1990. Techniques developed in this study, showed a simple and effective way of spawning captive catfish, C. macrocephalus . A simultaneous intramuscular injection of 0.05 μg LHRHa + 1 μg PIM/g and stripping of eggs at 16–20 h post-injection have been tested to yield high ovulation, fertilization and hatching rates.  相似文献
