This study reviews the factors of pig production that impact the quality of dry-cured ham. When processing is standardized, the quality of the final dry-cured product is primarily determined by the quality of the meat before curing (green ham). This has been defined as the aptitude for seasoning and is determined by the green ham weight, adipose tissue quantity and quality, meat physico-chemical properties and the absence of visual defects. Various ante-mortem factors including pig age and weight, genetic type, diet, feeding strategy and slaughter conditions determine green ham properties such as the dynamics of water loss, salt intake and, as a consequence, proteolysis and lipolysis. Muscle conditions (pH, salt concentration, water content and availability, temperature) influence enzymatic activity and development of characteristic texture and flavor. Generally, hams of older and heavier pigs present better seasoning aptitude because of higher adiposity. Adiposity is also positively correlated with fat saturation, which is desired to avoid rancidity and oiliness. The fatty acid profile of tissue lipids can be manipulated by diet composition. Feeding strategy affects tissue accretion and protein turnover, thus directly impacting proteolysis. With respect to the impact of pig genotype on dry-cured ham quality, local breeds are generally considered more suitable for producing quality dry hams; however, the majority of dry-cured hams on the market today are from modern pig breeds raised in conventional systems, providing lean hams. The importance of all these factors of pig production is discussed and synthesized, with an emphasis on the main difficulties encountered in dry-cured ham production.  相似文献

A quantitative trait locus (QTL) analysis of carcass composition data from a three-generation experimental cross between Meishan (MS) and Large White (LW) pig breeds is presented. A total of 488 F2 males issued from six F1 boars and 23 F1 sows, the progeny of six LW boars and six MS sows, were slaughtered at approximately 80 kg live weight and were submitted to a standardised cutting of the carcass. Fifteen traits, i.e. dressing percentage, loin, ham, shoulder, belly, backfat, leaf fat, feet and head weights, two backfat thickness and one muscle depth measurements, ham + loin and back + leaf fat percentages and estimated carcass lean content were analysed. Animals were typed for a total of 137 markers covering the entire porcine genome. Analyses were performed using a line-cross (LC) regression method where founder lines were assumed to be fixed for different QTL alleles and a half/full sib (HFS) maximum likelihood method where allele substitution effects were estimated within each half-/full-sib family. Additional analyses were performed to search for multiple linked QTL and imprinting effects. Significant gene effects were evidenced for both leanness and fatness traits in the telomeric regions of SSC 1q and SSC 2p, on SSC 4, SSC 7 and SSC X. Additional significant QTL were identified for ham weight on SSC 5, for head weight on SSC 1 and SSC 7, for feet weight on SSC 7 and for dressing percentage on SSC X. LW alleles were associated with a higher lean content and a lower fat content of the carcass, except for the fatness trait on SSC 7. Suggestive evidence of linked QTL on SSC 7 and of imprinting effects on SSC 6, SSC 7, SSC 9 and SSC 17 were also obtained.  相似文献

Imprinted genes play important roles in mammalian growth and development. However, reports on imprinted genes are limited in livestock. In this study, the complete ORF containing 289 amino acids of the porcine DLX5 gene was obtained. A C-to-T SNP mutation in exon 1 of the DLX5 gene was used to detect imprinting status with an RT-PCR/RFLP test (using HhaI) in eight heterozygous pigs from a population of Large White × Meishan F1 hybrids. Imprinting analysis showed that the porcine DLX5 gene was maternally expressed in skeletal muscle, fat, lung, spleen, stomach and small intestine, but not imprinted in heart, liver, kidney, uterus, ovary, testicle or pituitary. A PCR–RFLP test was also used to detect the polymorphism in 310 pigs of a Large White × Meishan F2 resource population. The statistical results showed significant association ( P  < 0.01) of the genotypes and fat meat percentage, carcass length, bone percentage, 6–7 rib fat thickness, average backfat thickness, thorax-waist fat thickness and buttock fat thickness.  相似文献

The aim of this study was to test the effect of various dietary protein contents (CP) on the carcass traits and the meat quality of Cinta Senese pigs. A total of 60 Cinta Senese pigs were equally distributed in four dietary groups that were balanced for sex (barrows and gilts) and live weight. The animals in the groups were fed one of four diets (80CP, 100CP, 130CP and 160CP) containing different CP contents (80, 100, 130 and 160 g/kg, respectively). The diets were administered to the pigs during the entire growing–fattening period in a controlled dose of 90 g/kg W0.75, to a maximum of 2.5 kg/day per animal. The duration of the trial was ~250 days, ending when the animals reached the target slaughter weight of 145 kg. The 80CP diet produced fatter carcasses than did the other diets; no differences in carcass composition were found among the animals fed the other three diets (total lean cuts: 57.4%, 61.4%, 60.8% and 61.3% for 80CP, 100CP, 130CP and 160CP diet, respectively). The sample joint composition confirmed the highest fatness and the lowest meatiness of pigs fed 80CP. This same pattern was evident for the composition of the muscle (Longissimus lumborum) containing the largest amount of i.m. fat, and the lowest protein content in the 80CP group. Moreover, the 80CP diet resulted in the lightest and yellowest meat with the highest cooking loss. A principal component analysis of the physical and chemical traits of the meat revealed three first factors that explained 56% of the total variance. Among them, only the intersection of Factor1, which combined mainly lower pH at 24 h postmortem and higher drip loss, cooking loss, lightness and yellowness, with Factor2, which associated higher toughness, higher protein and lower fat content, graphically appeared to discriminate the 80CP diet from the other ones. In conclusion, a diet with 80 g/kg of CP content was inadequate for this local breed, while, in consideration of the cost of protein feed and the need to reduce N pollution, the 100CP diet would be an optimal compromise for the growth–fattening of Cinta Senese pigs.  相似文献

Protected designation of origin dry-cured hams are obtained from heavy pigs (slaughtered at about 160 kg of live weight). A specific breeding program designed to improve meat quality for this production has included as key traits the level of intermuscular fat between the leg muscles and ham weight loss during the seasoning period together with a balance between fat and lean cuts. In this study we carried out genome-wide association studies for seven traits used in the genetic merit of Italian Duroc heavy pigs, five related to meat and carcass quality traits (visible intermuscular fat, ham weight loss at first salting, backfat thickness, ham weight and lean cuts), and two related to performance and efficiency traits (average daily gain and feed : gain ratio). A total of 573 performance-tested pigs were genotyped with the Illumina PorcineSNP60 BeadChip and genome-wide association analyses were carried out using the Bayes B approach with the 1 Mb window option of GenSel and random residuals for each of the seven traits. Detected windows were supported by independent single nucleotide polymorphism analyses with a linear mixed model (LMM) approach on the same animals for the same traits. A total of 30 windows identifying different quantitative trait loci (QTL) were detected and among those, 27 were confirmed by LMM in one of these traits. Among the confirmed windows, three QTL were reported for visible intermuscular fat, seven for ham weight loss at first salting and five and four for backfat thickness and lean cut, respectively. A total of eight QTL were detected for the other production traits. No overlapping QTL were reported except for one window on porcine chromosome 10 between lean cuts and ham weight that contained the CACNB2 gene that has been already associated with loin marbling score in other Duroc pigs. Several regions contained genes that have been already associated with production traits in other pig breeds, including Duroc lines, related to fat deposition or muscle structure. This work reports, for the first time, genome-wide association study results for several traits in Italian Duroc heavy pigs. These results will be useful to dissect the genetic basis for dry-cured ham production traits that determine the total genetic merit index of Italian Duroc pigs.  相似文献

Forty-eight Polish Landrace pigs (initially 32.43 ± 0.70 kg live weight) were assigned to a 2 × 2 × 2 factorial arrangement in order to assess the effects of the rearing system (outdoor v. indoor), diet (with corn grain silage v. without corn grain silage) and gender (barrows v. gilts) on performance, carcass traits, meat quality and intramuscular collagen (IMC) characteristics. During the trial period of 14 weeks, each group was housed in a pen of 12 m2, and the outdoor-reared animals had access to a paddock of 24 m2. Pigs were fed a diet computed according to standard requirements and supplied on a basis of 9% of metabolic weight (live weight0.75). Pigs were slaughtered at 110.69 ± 0.85 kg. The rearing system did not significantly affect growth, hot and cold dressing, meat quality of m. longissimus lumborum or IMC. Outdoor pigs had less (P < 0.05) backfat thickness, slightly higher (P = 0.082) lean percent and a meat with lower pH and fat than the conventional system. In light of these results, alternative pig rearing systems with indoor space and free outdoor access could be an interesting production system for the pigs. Compared with the pigs fed diets with corn grain silage, those fed diets without corn had higher (P < 0.05) lean, ham percentage and IMC content, lower (P < 0.05) neck percentage but similar main tissue components of the ham and meat quality. Compared with the gilts, barrows were fatter and showed a meat with different physico-chemical traits, which was slightly more tender and had similar IMC properties.  相似文献

A three-step experimental design has been carried out to add evidence about the existence of the RN gene, with two segregating alleles RN- and rn+, having major effects on meat quality in pigs, to estimate its effects on production traits and to map the RN locus. In the present article, the experimental population and sampling procedures are described and discussed, and effects of the three RN genotypes on growth and carcass traits are presented. The RN genotype had no major effect on growth performance and killing out percentage. Variables pertaining to carcass tissue composition showed that the RN- allele is associated with leaner carcasses (about 1 s.d. effect without dominance for back fat thickness, 0.5 s.d. effect with dominance for weights of joints). Muscle glycolytic potential (GP) was considerably higher in RN- carriers, with a maximum of a 6.85 s.d. effect for the live longissimus muscle GP. Physico-chemical characteristics of meat were also influenced by the RN genotype in a dominant way, ultimate pH differing by about 2 s.d. between homozygous genotypes and meat colour by about 1 s.d. Technological quality was also affected, with a 1 s.d. decrease in technological yield for RN- carriers. The RN genotype had a more limited effect on eating quality. On the whole, the identity between the acid meat condition and the RN- allele effect is clearly demonstrated (higher muscle GP, lower ultimate pH, paler meat and lower protein content), and the unfavourable relationship between GP and carcass lean to fat ratio is confirmed.  相似文献

The objective of the study was to determine genetic parameters for growth and carcass traits in Mukota pigs, maintained on a fibrous diet. Records (n = 1961) were obtained from a population housed at the University of Zimbabwe Farm (Harare, Zimbabwe) between January 1998 and August 2003. Backfat thickness was measured at 50 and 75 mm (K5 and K7.5), respectively. Carcass length (CL) was measured from the anterior edge of the first rib to the pubic bone using a measuring tape. Variance components were estimated using a model that accounted for direct, common environmental litter and maternal genetic effects, using average information restricted maximum likelihood. Heritability estimates for average daily gain from birth to weaning (ADGW) and average daily gain from weaning to 12 weeks (ADG1) were 0.15 and 0.27, respectively. Maternal genetic effects accounted for 2.6% of variation for ADG1. Heritability for average daily gain from 12 weeks to slaughter (ADG2) was 0.20. Common environmental litter effects accounted for 18% of phenotypic variance for cold dressed mass (CDM). Heritability estimates for CDM and CL were 0.32 and 0.62, respectively. Maternal genetic effects accounted for 10.5% of variance in CL. Heritability estimates for K5 and K7.5 were 0.64 and 0.40, respectively. The CDM was positively genetically correlated to K5, but negative to K7.5. The K5 and K7.5 had a high genetic correlation (0.88). Genetic correlations between ADGW and K5, K7.5 and CL were 0.30, 0.05 and 0.35, respectively. The existence of sufficient genetic variation makes genetic improvement for many growth and carcass traits in the Mukota breed possible through effective selection methods.  相似文献

为了挖掘新的猪肉品质及胴体性状的候选基因,揭示猪肉质及胴体性状的遗传机制,文章将丙酸代谢通路作为候选通路,将通路内基因与猪肉质及胴体性状进行关联分析。实验采用37头三元杂交商品猪作为研究对象,首次针对丙酸通路中7个基因的36个SNP位点利用SNaPshot方法进行基因分型,分别用最小二乘模型及MB-MDR模型与肉质及胴体性状进行关联分析。结果发现,基因PCCB、MUT、MCEE及ACSS2上的4个SNP位点分别与肌内脂肪含量、背膘厚等性状显著相关(P<0.05),ACSS2与猪脂肪含量显著相关;MCEE及MUT与猪的背膘厚显著相关;PCCB基因与脂重显著相关。通过MB-MDR方法检测到多个SNP位点具有互作效应,并与背膘厚、水分含量、脂肪含量显著相关(P<0.05)。另外,丙酸代谢通路中的基因间的互作效应对猪肉品质有显著影响。  相似文献

群落的格局和动态是群落牛态学和生态系统生态学研究中的基础问题,也是揭示群落结构和功能的核心问题。为了深入了解生态系统的结构与功能,研究啮齿动物群落格局在人为不同干扰下的动态特征,特别是研究荒漠区的脆弱生态系统中啮齿动物群落格局在人为不同干扰下的动态特征,是揭示人为干扰下荒漠生态系统结构和功能变化特征的基础。2002~2004年在内蒙古阿拉善典型荒漠区,选择了4种不同干扰条件的生境,分别为禁牧区、过牧区、轮牧区和开垦区,研究了人为不同干扰下啮齿动物群落格局的变动趋势,应用典型相关方法分析了啮齿动物群落与植物群落在不同干扰条件下的相互关系。结果表明,在两种观察尺度域上(标志样地和线路样地)动物群落变量与植物群落变量的相关关系表现为:动物群落变量与植物群落变量中的草本关系最为突出,在分析的两个尺度的8个样地中,除标志样地的过牧区外,其它7个样地均与草本关系密切,且绝大多数样地动物群落变量与草本的盖度和地上生物量呈负相关关系。这说明荒漠生态系统中,在4种干扰条件下,草本的特性,特别是草本的盖度和地上生物量对啮齿动物群落格局及其动态变化起到关键作用,其值越大,啮齿动物群落组成种的丰富度(数量)和生物量就越小。就同一种干扰条件下的两种尺度域上的情况看,动物群落和植物群落的相关性较突出的特点是:在禁牧区和开垦区,喜湿的种类(黑线仓鼠和草原黄鼠)与植被的相关性显著,在轮牧区和过牧区,喜旱的种类(小毛足鼠和三趾跳鼠)与植被的相关性显著,且均与草本呈负相关关系。  相似文献

The main objective of this study is to find associations between site characteristics (topographic, and soil physical and chemical properties) and soybean [Glycine max (L.) Merr.] plant performance (e.g. yield, canopy development) occurring at a field scale. The study took place in an Illinois production field in the 2000 and 2001 seasons. These associations were studied with canonical correlation analysis (CCA) followed by a spatial analysis of the resulting canonical variables with semivariography. The CCA discovered several significant associations between site characteristics. The first pair of canonical variables had a correlation coefficient of 0.76. The site characteristics most consistently correlated with the first pair of canonical variables were organic matter (OM) (r = 0.64 and 0.51 for the 2000 and 2001 seasons, respectively), pH (r = 0.39 and 0.51 for the 2000 and 2001 seasons, respectively), and deep electrical conductivity (ECD) (r = 0.53 and 0.49 for the 2000 and 2001 seasons, respectively). Site variables soil phosphorous (P) and soil potassium (K) were inconsistently correlated with the site characteristics canonical variable. These results indicate that site variables related to soil water retention are more consistently associated with soybean performance than site variables related to soil fertility. The plant performance characteristic most correlated with the soybean performance canonical variable were NDVIN (r = 0.76 and 0.72 for the 2000 and 2001 seasons, respectively), SPAD (r = 0.70 and 0.47 for the 2000 and 2001 seasons, respectively), and yield (r= 0.44 and 0.58 for the 2000 and 2001 seasons, respectively). The variables NDVIN, yield, ECD are obtained with sensors and thus they can be easily used at a production field scale. The common spatial structures in pairs of the canonical variables confirm the relationship between site properties and soybean performance, proving their potential in the demarcation of uniform areas within production fields. This approach can be used to explore soil plant relationships in other field studies.  相似文献

The present study was carried out to examine whether a relationship between bovine major histocompatibility complex (BoLA) class I alleles and carcass traits or reproductive performance exists in Braunvieh and Fleckvieh A1 (artificial insemination) bulls. The influence of BoLA class I (BOLA-A) alleles on deregressed breeding values for net growth rate, carcass index and thigh volume was assessed in Braunvieh crosses and Fleckvieh bulls with a gene substitution model. The reproductive traits: non-return rate and interval between first and last insemination of daughters (female fertility), as well as non-return rate of inseminated cows (male fertility), were only investigated in Fleckvieh animals. No influence of the BOLA-A region on the traits evaluated could be demonstrated. An improper, i.e. less restrictive analysis would have led to spurious results.  相似文献

The objective of this study was to quantify the genetic associations between a range of carcass-related traits including wholesale cut weights predicted from video image analysis (VIA) technology, and a range of pre-slaughter performance traits in commercial Irish cattle. Predicted carcass cut weights comprised of cut weights based on retail value: lower value cuts (LVC), medium value cuts (MVC), high value cuts (HVC) and very high value cuts (VHVC), as well as total meat, fat and bone weights. Four main sources of data were used in the genetic analyses: price data of live animals collected from livestock auctions, live-weight data and linear type collected from both commercial and pedigree farms as well as from livestock auctions and weanling quality recorded on-farm. Heritability of carcass cut weights ranged from 0.21 to 0.39. Genetic correlations between the cut traits and the other performance traits were estimated using a series of bivariate sire linear mixed models where carcass cut weights were phenotypically adjusted to a constant carcass weight. Strongest positive genetic correlations were obtained between predicted carcass cut weights and carcass value (min rg(MVC) = 0.35; max rg(VHVC) = 0.69), and animal price at both weaning (min rg(MVC) = 0.37; max rg(VHVC) = 0.66) and post weaning (min rg(MVC) = 0.50; max rg(VHVC) = 0.67). Moderate genetic correlations were obtained between carcass cut weights and calf price (min rg(HVC) = 0.34; max rg(LVC) = 0.45), weanling quality (min rg(MVC) = 0.12; max rg(VHVC) = 0.49), linear scores for muscularity at both weaning (hindquarter development: min rg(MVC) = −0.06; max rg(VHVC) = 0.46), post weaning (hindquarter development: min rg(MVC) = 0.23; max rg(VHVC) = 0.44). The genetic correlations between total meat weight were consistent with those observed with the predicted wholesale cut weights. Total fat and total bone weights were generally negatively correlated with carcass value, auction prices and weanling quality. Total bone weight was, however, positively correlated with skeletal scores at weaning and post weaning. These results indicate that some traits collected early in life are moderate-to-strongly correlated with carcass cut weights predicted from VIA technology. This information can be used to improve the accuracy of selection for carcass cut weights in national genetic evaluations.  相似文献

In order to improve foal carcass quality, it is necessary in particular to improve the carcass dressing percentage and tissue composition. Thus, it is important to establish relationships between grading systems and these parameters. This research was conducted to study the effect of slaughter age (13 v. 26 months) and finishing feed (standard v. linseed feed) on carcass characteristics such as subcutaneous fat colour plus classification of foals for the degree of fatness and conformation. For this study, 46 foals of crossbred genotype (Galician Mountain×Burguete) were used. Finishing feed did not affect any parameter, whereas slaughter age influenced all parameters (P<0.05). The oldest foals had higher carcass measurements, 13% more of meat, 4% more of bone, 12% more of fat, and 4% and 9% bigger fore- and hindquarter, respectively. Consequently, bigger valuable prime cuts were obtained. Nevertheless, the meat : bone ratio was very similar for both 13- and 26-month-old foals (2.88). Most of 26-month-old foals were classified in ‘E’ (Extra) and ‘5’ (Complete fat cover) categories of conformation and degree of fatness. Most of the carcasses showed subcutaneous fat described as yellowish-white irrespective of age or diet. A regression model found that conformation (36%) and degree of fatness (33%) in live animals was positively linked with carcass tissue composition. It is therefore suggested that producers aim for older slaughter ages than 13 months and that the foal meat industry establishes grading systems to predict carcass quality. Further studies should be necessary to find the optimal slaughter age to obtain carcasses in the best categories of degree of fatness and conformation. New studies should be recommended to improve the meat : bone ratio of foal carcasses as it estimates the aptitude for meat production.  相似文献

Excessive softness is a serious defect of dry cured hams which seems related to high activity of lysosomal cysteine proteinases, such as cathepsin B, in fresh pork muscles a few days after slaughtering. As it has been shown that cathepsin B activity has a moderate heritability in Italian Large White pigs we started a candidate gene approach to identify the gene(s) that affect(s) this parameter. Here, we studied two candidate genes: cathepsin B (CTSB) and cystatin B (CSTB). We amplified and sequenced porcine DNA fragments for these two genes that were used to identify polymorphisms by SSCP and polymerase chain reaction-restriction fragment length polymorphism (PCR-RFLP) analysis. Four and two alleles were detected at the CTSB and CSTB loci, respectively. Sequencing of the CSTB alleles showed a missense mutation that changes a codon for aspartic acid into a codon for asparagine in exon 3 of the gene. Allele frequencies for the two loci differed among the pig breeds studied (Large White, Landrace, Duroc, Belgian Landrace, Hampshire, Piétrain, Meishan, Cinta Senese, Casertana, Calabrese and Nero di Sicilia). Linkage, somatic cell hybrid panel and radiation hybrid panel analyses assigned CTSB to porcine chromosome (Sscr) 14 and CSTB to Sscr 13. The markers identified at the CTSB and CSTB loci were used in association studies with several traits of economic importance including parameters that may indicate the suitability of pig meat to produce dry-cured hams. Significant associations were observed between CTSB and back-fat thickness and between CSTB and average daily gain. In this study, cathepsin B activity was not associated with the polymorphisms identified at the CTSB and CSTB loci.  相似文献
