报道了丁的含肉率及鱼肉生化成分 ,并对其营养价值做了综合评价。丁含肉率达 73 59% ,鱼肉蛋白质含量为 19 73% ,脂肪含量为 1 2 9%。 17种氨基酸总含量为 18 13% ,其中 7种必需氨基酸总量为 7 0 4 %。丁肌肉所含人体必需氨基酸占氨基酸总量的百分比高于WHO FAO提出的标准。必需氨基酸指数为 74 38。  相似文献

Teucrium creticum L. and T. orientale L. var. orientale are two related taxa in Teucrium sect. Teucrium . In this study, the value of anatomical and micromorphological characters for distinguishing between these two taxa is analysed. Transverse sections of the stem, as well as both transverse and surface sections of the leaves were examined anatomically. According to the data obtained, collenchyma and sclerenchyma do grow more in T. creticum than in T. orientale var. orientale . The leaves of T. creticum are hypostomatic and have a characteristic hypodermis, which is under the upper epidermis, as well as abundant spherocrystals in the upper epidermis. The leaves of T. orientale var. orientale are amphistomatic, yet no spherocristals exists in epidermal cells and the hypodermis is absent. The results obtained from studies carried out under scanning electron microscope (SEM) shows that the nutlet micromorphology varies between the two taxa. In both taxa, the nutlet surfaces are reticulate and glandular. Eglandular hairs do occur. However, in T. orientale var. orientale , 20–60 μm long eglandular hairs with scabrid surface occur only along the margins of the nutlets, whereas the ¾ dorsal sides of the nutlets in T. creticum are all covered with 90–500 μm long, smooth-surfaced hairs. Additionally, while the glandular hairs on the nutlets of T. creticum are subsessile, those on the nutlets of T. orientale var. orientale are capitate and distinctly stalked.  相似文献

Teucrium montanum L. and T. polium L. are the two closest Teucrium L. species from sect. Polium (Mill.) Schreb in Turkey. In addition, they are sympatric for some part of their range in Turkey. In this study, comparative anatomical and micromorphological studies of the two species are carried out. They have been investigated by their leaf and stem anatomical features, as well as nutlet micromorphological characteristics. The results of anatomical studies show that the anatomical characters of both taxa are observed to be similar to the general features of the family Lamiaceae anatomy, except for lacking rich collenchyma at the corners. Both taxa are similar in stem anatomy and their leaves exhibit xeromorphy. However, trichome morphology on the stems and the leaves appear to have a taxonomic value in segregation of the two taxa. Light and scanning electron microscope studies on the nutlets also show that nutlet shapes, measures and surface micromorphologies are different in the two species. Whereas nutlet surfaces are bireticulate in both species, the nutlets are larger and primary sculpturing is more distinct in T. polium than in T. montanum. Moreover, the nutlets are oblong to oblong-ovoid and larger in T. polium, but ovoid and smaller in T. montanum.  相似文献

Abstract The chemical composition and the nutritional quality of protein, fatty acids and chitin of adult field cricket Gryllus testaceus Walker were investigated. The adult insect contained: crude protein 58.3 %; fat 10.3 %, chitin 8.7 % and ash 2.96 % on dry matter basis respectively. The essential amino acid profile compared well with FAO/WHO recommended pattern except for cysteine and methionine. The fatty acid analysis showed unsaturated acid of the field cricket to be present in high quantities, and the total percentage of oleic acid, linolic acid and linolenic acid was 77.51%. The chitin content of the insect was 8.7% with a better quality than the commercial chitin that was prepared from shells of shrimp and crab. Therefore the chemical composition of the field cricket indicates the insect to be a good supplement to nutrition for food and feed, even a raw material for medicine.  相似文献

本研究旨在确定油葫芦Gryllus testaceus Walker的主要营养成分和营养价值。研究发现油葫芦体内主要含有蛋白质、脂类和几丁质三类物质,它们的含量(干重比)分别是58.3%,10.3%和8.7%。其中必需氨基酸的含量除了半胱氨酸和蛋氨酸外,非常符合FAO/WHO所确定的人体对氨基酸需求标准。脂肪酸分析显示,不饱和脂肪酸的含量很高,仅油酸、亚油酸和亚麻酸的含量就占总脂肪含量的77.51%。油葫芦的甲壳素含量为8.7%,而且从该虫提取甲壳素/壳聚糖的品质在甲壳素色泽及残留灰分含量、壳聚糖粘度等方面比常规甲壳素原料虾蟹壳的好。因此,油葫芦可以作为很好的食品或饲料添加剂,或医药原料。  相似文献

为研究贺兰山岩羊肌肉组织的营养价值,对其组成成分进行分析。结果表明:雌性岩羊与雄性岩羊肌肉组织在磷、锌、氨基酸和脂肪酸的含量方面有所不同。岩羊肌肉是蛋白质和矿物质的良好来源,尤其是钙、磷和铜。与联合国粮食农业组织(FAO)和世界卫生组织(WHO)推荐的理想蛋白质模型(EAA /TAA 比约40% )相比较,岩羊肌肉蛋白质营养价值很高(其中,雄性EAA /TAA 比为39.3% ,雌雄EAA/ TAA 比为39.2%)。通过计算氨基酸评分和氨基酸化学评分,岩羊肌肉蛋白中缬氨酸为限制性氨基酸,赖氨酸含量很高。此外,岩羊肌肉也是亚油酸和亚麻酸的良好来源。  相似文献

研究利用营养测试方法对日本鳗鲡、欧洲鳗鲡、美洲鳗鲡、花鳗鲡和太平洋双色鳗鲡共5种养殖鳗鲡的含肉率及肌肉营养成分进行了分析比较。结果表明: 5种鳗鲡含肉率61.77%69.22%, 日本鳗鲡和太平洋双色鳗鲡显著高于欧洲鳗鲡和花鳗鲡 (P0.05); 水分含量为62.34%71.80%, 粗蛋白含量为11.31% 18.47%, 脂肪含量为8.62% 24.48%, 灰分含量为0.92%1.06%; 均含有18种氨基酸, 其中包括8种人体必须氨基酸, 总氨基酸含量存在差异, 鲜味氨基酸含量占37.43%38.77%, 必需氨基酸指数(EAAI)为65.2574.77, 其构成比例符合FAO/ WHO的标准, 色氨酸、异亮氨基酸和缬氨酸等氨基酸为限制性氨基酸; 富含磷、钾、铁和锌等多种矿物元素, 日本鳗鲡和花鳗鲡含量最高; 均含有16种脂肪酸, 其中饱和脂肪酸(SFA) 7种, 不饱和脂肪酸(UFA)9种; 脂肪酸中多不饱和脂肪酸(PUFA)和二十二碳六烯酸(DHA)含量较高, 分别占总量的41.92%48.27%和6.63%16.87%。研究结果表明: 5种鳗鲡的肌肉为高蛋白、鲜味氨基酸与必需氨基酸含量高的优质蛋白源; 富含磷、钾、铁、锌等矿物元素, 可作为补充人体矿物质营养的膳食来源; 脂肪酸以不饱和脂肪酸为主, 多不饱和脂肪酸和DHA比值高。因此, 5种鳗鲡具有较高的营养价值且有益人体健康, 均是优良的水产养殖种类。    相似文献

采用常规生化分析方法,测定了油茶(Camellia oleifera Abel.)肉质果、肉质叶基本营养成分,用原子吸收光谱法测定微量元素含量,用高效液相色谱仪测定维生素C的含量,用氨基酸全自动分析仪测定氨基酸的种类,应用模糊识别法和氨基酸比值系数法对油茶肉质果、肉质叶蛋白质营养价值进行了全面评价,并与12种常见热带、亚热带水果进行对照比较。结果表明油茶肉质果、肉质叶富含糖、酸、蛋白质、氨基酸、脂肪。其微量元素和维生素C含量高于一些常见水果。油茶肉质果、肉质叶的必需氨基酸(EAA)占氨基酸总量(TAA)的37%和35%,其蛋白营养价值要优于12种水果。因此,油茶肉质果、肉质叶的营养价值优于一些常见水果,是一种值得开发利用的优质水果。  相似文献

Teucrium andrusi, described by Post from Mardin province, Turkey, was synonimized with T. paederotoides in the flora of Turkey. According to the records in the flora of Turkey T. paederotoides was a steno‐endemic species, only known from the type locality in Gaziantep and from Mardin province. Specimens of T. paederotoides s.l. were collected from both localities and a detailed comparison of the plants from Gaziantep with those from Mardin revealed that the two populations were sufficiently distinct from each other to be recognised as separate species. Thus, T. andrusi Post is reinstated from the synonymy with T. paederotoides. Teucrium andrusi is morphologically different from T. paederotoides s.s. in terms of its general indumentum, leaf margin, bract and calyx shape, corolla colour and nutlet macro–micromorphology. It can be anatomically distinguished from T. paederotoides s.s. by stoma type, stomatal distribution on the leaf surface, crystal content in the cells and cuticula thickness. Ecological data related with the accompanying species also support species status for T. andrusi. While the two taxa are very similar in pollen and nutlet morphology, trichome density on the nutlets are different.  相似文献

为比较不同种石斛的氨基酸组成差异,作出营养评价,使用氨基酸自动分析仪检测6种石斛的氨基酸含量,分析其必需氨基酸组成成分,并通过计算氨基酸评分(AAS)、化学评分(CS)及氨基酸比值系数分(SRCAA)等非生物指标进行营养评价。结果表明:石斛中氨基酸种类齐全、营养丰富,均含有被检测的17种氨基酸。6种石斛氨基酸总量存在差异,介于3.58%~8.09%。必需氨基酸组成总含量介于42.62%~47.23%之间,明显高于WHO/FAO模式值(35.00%),其中,化学评分显示其限制氨基酸均为半胱氨酸和蛋氨酸。6种石斛药用氨基酸含量相差较大(2.24%~5.37%),其中蜻蜓石斛含量最高,为含量最低细叶石斛的2.40倍,但在总氨基酸中所占的比例基本一致(60.96%~66.47%)。对6种石斛进行聚类分析可分为4类,其中杓唇石斛、叠鞘石斛、细叶石斛可视为高品质蛋白质种。综上所述,石斛氨基酸具有重要的营养价值,6种石斛氨基酸差异显著。该结果可为石斛营养价值评价、品种选育及药用开发提供理论指导。  相似文献

选用7个叶菜型甘薯品种,测定分析了茎尖中氨基酸含量及组成。结果表明:甘薯茎尖的E/T值变幅为37.22%~39.60%,E/N值变幅为0.59~0.66,符合理想蛋白质的要求;各种人体必需氨基酸占氨基酸总量的相对含量大部分符合1973年FAO/WHO修订的人体必需氨基酸模式谱,仅蛋氨酸+半胱氨酸中度缺乏;在全部18种氨基酸中,以半胱氨酸、蛋氨酸、色氨酸的变异系数最大,其他15种氨基酸的变异系数较小。  相似文献

Ant-dispersed plants usually produce seeds with appendages (elaiosomes) as reward for ants. Plants that produce high-quality elaiosomes benefit because ants preferentially disperse their diaspores. We therefore hypothesized that seeds and elaiosomes differ in chemical composition in ways that make elaiosomes of high nutritional quality for ants, capable of providing essential dietary components that explain the increased fitness and higher gyne production documented for colonies with elaiosome consumption. To test the hypothesis we analysed the content and composition of lipids, amino acids, soluble carbohydrates, proteins and starch in seeds and elaiosomes of 15 central European ant-dispersed plants. After separating the different fractions, total lipids were determined gravimetrically, fatty acids and soluble carbohydrates were detected by gas chromatography (GC) and GC–mass spectrometry, free amino acids by an amino acid analyser while starch and protein were analysed photometrically. Seeds accumulated high molecular weight compounds such as proteins and starch, whereas elaiosomes accumulated more easily digestible low molecular weight compounds such as amino acids and monosaccharides. Analysis of similarities and similarity percentages analysis demonstrated that the composition of fatty acids, free amino acids and carbohydrates differed markedly between elaiosomes and seeds. The most important difference was in total amino acid content, which was on average 7.5 times higher in elaiosomes than in seeds. The difference was especially marked for the nitrogen-rich amino acid histidine. The availability of essential nutrients and, in some species, the higher nitrogen content in elaiosomes suggest that their nutritional value for larvae plays a key role in this interaction. 采用酸水解法,测定美洲大蠊中氨基酸的种类和含量,并对其进行营养评价。结果表明:美洲大蠊含有17种氨基酸(色氨酸被水解破坏而未检出),总氨基酸质量分数为43.14%,其中药效氨基酸占总量的55.43%,呈味氨基酸占总量的20.28%,其氨基酸配比较为合理:E/(E+N)=0.35,E/N=0.55,与WHO/FAO提出的参考蛋白模式接近。美洲大蠊中氨基酸种类齐全,含量丰富,富含必需氨基酸和药效氨基酸,具有很高的食用、药用价值,有较好的开发潜力。  相似文献

Fungi comprise a major part of the diet of many animals. Even so, the nutritional value of fungi has been much debated, with some arguing that fungi are nutritionally poor. However, the chemical composition of fungi and of the biology of the animals that eat them are not well understood, particularly in reference to amino acid (AA) composition of fungi and digestibility of fungal protein. We analysed fibre, total nitrogen (N), available N, and AA contents and measured in vitro digestibility of a wide range of epigeous and hypogeous fungi collected in Australia and the USA to test three hypotheses: (i) fungi are nutritionally poor because they contain few nutrients or are otherwise of low digestibility, (ii) fungi vary substantially in their nutritional composition; and (iii) animals can counter this variable quality by eating diverse taxa. Resultant data indicate many fungi are a reasonable source of AAs and digestible nitrogen. However, they vary highly between species in AA content, and the protein has a poor balance of digestible AAs. This helps explain why many mycophagous animals eat a wide array of fungi and often have digestive strategies to cope with fungi, such as foregut fermentation. Another common strategy is to supplement the diet with high quality protein, such as insect protein. Accordingly, evaluating nutritional value of fungi requires consideration of physiology of the animal species and their whole diet.  相似文献

以诺丽果和16种海南常见热带水果为材料,对比分析了氨基酸含量及组成。结果表明:诺丽果含有18种氨基酸,种类齐全。其氨基酸总量、人体必需氨基酸含量和儿童必需氨基酸含量均居第1位。诺丽果的E/T值为37.13%,E/N值为0.59,符合理想蛋白质的要求。诺丽果中各种人体必需氨基酸,Val、Ile、Leu、Phe+Tyr、M et+Cys、Thr的含量占氨基酸总量的比例,与1973年FAO/WHO修订的人体必需氨基酸含量模式谱基本一致,仅Lys中度缺乏。诺丽果中鲜味类、芳香族、甜味类氨基酸含量居第1位。  相似文献

The nutritional quality of seed proteins from cereals, such as wheat and rice, is comparatively low due to its deficency in lysine and some essential amino acids. In this research extensive varieties of plant seed samples were collected and screened by analysis of amino acid composition. Three lysing-rich species which contain more than 6.7% of lysine in total seed proteins were found. 31 kinds of proteins were purified from a species which contains 7.9% of lysine using the modified methods of IEF and SDS electrophoresis. One protein with PI 6.1 and 18 kD was identified which contains 11.4% of lysine and was rich in threonine, valine and isoleucine. This is the first example of the protein which could complement several limiting amino acids of wheat or rice. Further research on the structural gene encoding this protein would have great potential value for improvement of protein quality of these cereals.  相似文献

Summary The reserve protein composition of 22 Phaseolus species has been studied. The non-sulphur-containing amino acids were present at values higher than those suggested for animal (and human) nutrition, but the sulphur-containing amino acids, with some exceptions, were under the minimum accepted requirement. However, taking into account the variability in the percentages of methionine and cystine, as well as the cystine/methionine ratio, it is concluded that the genus Phaseolus has a theoretical possibility for synthesizing a reserve protein with a balanced sulphur-containing amino acid content. An accession from Mexico of the species Ph. phyllanthus possesses a protein characterized by a high sulphur-containing amino acid content (3,84%). The possible utilization of this species in breeding for legume protein quality is suggested. Some observations about the percentage of arginine in wild and cultivated forms of Ph.
