兰州鲇与鲇、黄河鲤肌肉品质比较研究   总被引:2,自引:0,他引:2  
为深入探究兰州鲇(Silurus lanzhouensis)肌肉品质特性, 对黄河中兰州鲇、鲇(Silurus asotus)和黄河鲤(Cyrinus carpio)肌肉品质指标进行了测定。结果表明: 兰州鲇肌肉的pH、滴水损失、熟肉率、胶原蛋白、肌原纤维耐折力、黏附性、内聚性、胶黏性、咀嚼性、弹性和回复性等指标与鲇差异不显著(P>0.05), 失水率、肌纤维直径和硬度在二者间差异显著(P<0.05); 兰州鲇肌肉的pH、肌纤维直径、硬度、黏附性、回复性、胶黏性和咀嚼性与黄河鲤差异不显著(P>0.05), 肌肉滴水损失、熟肉率、失水率、胶原蛋白、肌原纤维耐折力、内聚性和弹性在二者间差异显著(P<0.05)。相关性分析表明, 兰州鲇肌肉咀嚼性与硬度呈极正相关, 其关系式为: y=0.3651x+25.339(R=0.97); 回复性与内聚性呈极正相关, 其关系式为: y=0.6279x-0.0929(R=0.91); 胶黏性与硬度呈极正相关, 其关系式为: y=2.4104x-41.155(R=0.97)。对兰州鲇7个质构指标进行了主成分分析, 提取出3个主成分, 累计方差贡献率为96.08%, 其中硬度是影响兰州鲇质构特性的主要因素。黄河中兰州鲇和鲇作为鲇属鱼类中形态十分相似的两个物种, 在肌肉品质特性上既有很大的相似性, 又有一定的不同, 这可能与这两种鱼种质特性的异同有关。  相似文献

Two experiments were conducted. In the first, 25 untrained subjects judged the hardness and chewiness of three different food samples following either 0, 60, 120, or 180 s of adaptive chewing on an experimental gum compound. No effect of the adaptive chewing was found, in spite of observable and self-reported masticatory fatigue induced by the experimental procedures. These data fail to support the prevalent use of procedural limits on the number and temporal spacing of samples in sensory texture studies. In the second experiment, six groups of subjects (n = 107) judged the hardness and chewiness of two series of food samples that varied in physical size (volume). The groups differed in the degree to which cues about the true size differences were made available. Results showed both hardness and chewiness judgments to increase as a function of sample size, independently of subject awareness of the size differences. These data support the use of procedural controls on sample size, but fail to provide evidence of a size constancy phenomenon. A rheological explanation is proposed to account for the observed sensory effect.  相似文献

Effects of different oils on the rheological properties, textural profile, water loss (WL), oil loss (OL) and microstructure of egg-soybean protein isolate (SPI) stabilized emulsion gels were investigated at neutral pH, wherein soybean oil, olive oil and menhaden oil were used to form emulsions. The results showed that viscosity of emulsions progressively increased with the increase of oil content. Similarly, analysis of the rheological behavior of the formulated emulsion gels revealed an increase in the mechanical strength (G’) with the increase in oil concentration, indicating that oil droplets played a significant role in the formation of the gel structure. In addition, at high levels of oil, the hardness and chewiness of emulsion gels were also high, while a slight decrease in springiness and cohesiveness were observed. A linear relationship between hardness and water/oil loss was found, whereas the Pearson correlation suggested that less drainage of water may slow down the outflow of oil. The microstructural images showed a more compact network as a result of the increase of oil content in the formulation. Scarce significant differences were found among emulsion gels formulated with different oil type, suggesting oil composition played a dispensable role on the gelling properties of emulsion gels.

We studied the possible effects of climatic-geographic factors on the world distribution of the mutant allele for the chemokine receptor gene CCR5, which has a 32-bp deletion (CCR5Delta32) preventing cell invasion by the primary transmitting strain of HIV-1. New data on CCR5 polymorphisms in Russian, Ukrainian, and Moldavian populations are presented. All available data on CCR5Delta32 frequencies in the Old World (number of populations n = 77) were used for construction of a geographical gene map to analyze possible correlations between allele frequencies and eight climatic-geographic parameters. A strong positive correlation was found between the allele frequency and latitude (r = 0.72), a strong negative correlation with annual radiation balance (r = -0.66), and a weaker negative correlation with longitude (r = -0.34). Partial correlations were calculated excluding the influence of latitude. The negative correlation between the allele frequency and annual radiation balance decreased (r = -0.42), but remained large and significant. We propose that the existence of correlations between the cline of CCR5Delta32 frequencies and climatic-geographic parameters provides evidence for a possible effect of either natural environmental factors or large-scale population movements on the distribution of this allele.  相似文献

本研究以预浸泡豆杆为研究对象,研究高温杀菌对预浸泡豆杆中微生物的杀灭效果及其品质的影响,以期获得具有良好感官品质和理化品质的产品。结果表明:当温度≥105℃和时间≥10 min时,样品的菌落总数由初始的8.72×108cfu/g减少到50 cfu/g以内,样品的大肠菌群从1.6×105MPN/g减少到3 MPN/g以内,致病菌均未检出。杀菌温度和杀菌时间对预浸泡豆杆中脂肪含量、pH、弹性影响差异不显著(p>0.05),对水分含量、蛋白质、色差、硬度和咀嚼性影响显著(p<0.05),综合微生物、理化指标、色泽、质构的变化结果,经105℃、15 min和110℃、10 min处理后的预浸泡豆杆既能满足产品卫生要求也可以较好的保留产品原有的品质。  相似文献

采用质地剖面分析(TPA)和穿刺方法,测定3种不同口感质地的5个甜瓜材料(梗硬果肉的P10和3-6、脆酥果肉的417和20-5以及软果肉的Charentais)不同成熟时期果肉硬度、咀嚼性和黏着性以及脆性和平均硬度,评价甜瓜果肉的质地特性;采用组织切片法观察果肉组织细胞的显微结构,并通过Image-pro plus 6.0软件测定细胞大小参数(细胞面积、周长、长度及宽度)和形状参数(细胞纵横比及圆度),明确不同果肉质地类型甜瓜果实成熟过程中果肉细胞显微结构的变化特征,探讨甜瓜细胞形态参数与果肉质地的关系,为甜瓜品质育种提供理论依据。结果显示:(1)梗硬果肉甜瓜(P10和3-6)的果肉细胞较小,排列紧密;脆酥果肉甜瓜(417和20-5)的细胞较大,排列较疏松;软果肉甜瓜(Charentais)的细胞最大,排列极不规则。(2)不同口感甜瓜果肉在成熟期的细胞面积和周长差异显著,与口感呈显著负相关关系;在成熟过程中,甜瓜果肉细胞面积、周长和长度等表现出不同程度的增大,而细胞纵横比和圆度总体表现为下降趋势,即细胞越来越圆。(3)甜瓜果肉的口感与质地及细胞大小参数呈显著或极显著相关关系;细胞大小与黏着性呈显著或极显著正相关关系(0.951*~0.983**),细胞面积与TPA硬度及脆性呈显著负相关关系(分别为-0.910*和-0.926*),长度和宽度与脆性呈显著负相关关系(分别为-0.884*和-0.894*);细胞形状参数中的圆度与黏着性具有显著相关性(0.936*)。研究表明,口感不同的甜瓜果肉具有显著不同的质地和细胞显微结构,且甜瓜果肉口感与其果肉质地及细胞大小密切相关,即细胞越小,甜瓜果肉质地越硬。  相似文献

Newsom Davis and Stagg studying the interrelationship of the volume and time components of individual breaths in healthy resting man described a significant correlation between mean tidal volume (VT) and inspiratory time (TI) r = 0.704. The correlation between mean TI and expiratory time (TE) was lower, r = 0.381. Evaluation of these relationships and of the power spectral density of the breathing pattern was the aim of the present study. For breath by breath analysis we calculated power spectral density and cross correlations of VT, TI and TE. We found a significant correlation between VT and TI in 9 patients with global respiratory insufficiency (RI) (mean r = 0.52) and 7 patients with partial RI (mean r = 0.56). The correlation between TI, TE was lower, in 9 patients with global RI (mean r = 0.21) and 7 patients with partial RI (mean r = 0.35). The results of both groups did not differ from healthy subjects in power spectral density of the breathing pattern and in correlations of VT and TI as well as TI and TE.  相似文献

Recent studies have shown that body size is a heritable trait phenotypically correlated with several fitness components in wild populations of the cactophilic fly Drosophila buzzatii. To obtain further information on size-related variation, heritabilities as well as genetic and phenotypic correlations among size-related traits of several body parts (head, thorax and wings) were estimated. The study was carried out on an Argentinean natural population in which size-related selection was previously detected. The genetic parameters were estimated using offspring-parent regressions (105 families) in the laboratory G2 generation of a sample of wild flies. The traits were also scored in Wild-Caught Flies (WCF). Laboratory-Reared Flies (LRF) were larger and less variable than WCF. Although heritability estimates were significant for all traits, heritabilities were higher for thorax-wing traits than for head traits. Phenotypic and genetic correlations were all positive. The highest genetic correlations were found between traits which are both functionally and developmentally related. Genetic and phenotypic correlations estimated in the lab show similar correlation patterns (r = 0.49; TP = 0.02, Mantel's test). However, phenotypic correlations were found to be typically larger in WCF than in LRF. The genetic correlation matrix estimated in the relatively homogeneous lab environment is not simply a constant multiplicative factor of the phenotypic correlation matrix estimated in WCF. Using inductively coupled plasma mass spectrometry (ICP-MS) based analytical procedures, the concentration of several trace elements (Mn, As, Pb, Co, Ni, Cu, Zn and Se) was determined in human milk samples collected from a group of healthy lactating Portuguese women (n=44), both on the 2nd day postpartum (i.e., colostrum; n=34) and at 1 month postpartum (i.e., mature milk; n=19). Blood samples (n=44), collected on the 2nd day after parturition, were also analyzed for the same trace elements. No major correlations were observed between the levels of the analyzed trace elements in blood and colostrum samples. All the studied elements, except for Co, Pb and Ni, showed a significant trend for a decrease in concentration in milk during the first month of lactation. This trend was more pronounced for Zn and Se, whose levels decreased to approximately 23% and 44% of their initial mean concentration, respectively. With the exception of Co (r=0.607) and Zn (r=0.487), no significant correlations were observed when comparing the levels of each trace element between samples of colostrum and mature milk. Several inter-element correlations were found within each type of milk sample. The most significant were: (i) Se vs Cu (r=0.828) and Se vs Co (r=0.605) in colostrum samples and (ii) Ni vs Pb (r=0.756), Ni vs Mn (r=0.743) and Se vs Co (r=0.714) in mature milk samples. An inverse correlation between Zn and Se was also found in both types of milk sample; however, it only reached statistical significance for mature milk (r=-0.624).  相似文献

Genetic parameters for apple (Malus x domestica) fruit external traits (fruit size, ground colour, proportion of over colour and attractiveness) and sensory traits (firmness, crispness, texture, juiciness, flavour, sugar, acidity and global taste) were estimated using 2,207 pedigreed genotypes from breeding programmes in six European countries. Data were scored for 3 years and four periods during storage. Analyses were performed with a restricted maximum likelihood method using VCE 5.1.2 software. Heritability estimates ranged from medium to high for instrumental traits. Genetic correlations between firmness and sugar were medium and low between firmness and acidity. Sensory traits showed low to high heritability, acidity and flavour being, respectively, the most and the less heritable. Global taste was strongly correlated with texture, juiciness, and flavour and relatively less correlated with crispness and acidity. Sensory sugar and acidity showed highly negative correlations whereas their instrumental measurements showed low and increasing positive correlations from harvest to 4 months post-harvest. Sugar exhibited a higher sensory/instrumental divergence. Conversely, instrumental and sensory firmness were highly correlated. Fruit external characteristics had medium heritability. Fruit attractiveness had highest and lowest correlations with fruit size and ground colour, respectively. Best linear unbiased predictors of breeding values were computed for all genotypes with the software PEST. The results were analysed with regard to the dynamic and the reliability of genetic parameters according to the scoring dates. Original issues of the study and the importance of the obtained results for efficient designs of further apple fruit quality breeding programmes were discussed.  相似文献

The degree of dental wear was measured in 41 mandibular first molars from red deer of known age (range 2–18 years). The calculated wear indices were positively correlated with age ( r = 0.780, P < 0.001). In the same sample, significant ( P < 0.001) differences in hardness (determined by microhardness testing) were observed between enamel and coronal dentine as well as between outer and inner enamel and dentine, respectively. In animals belonging to the same age group (three-year-olds, n = 11), a negative correlation ( r = -0.830, P = 0.0016) was found between wear index and maximum mean enamel hardness. In a sample of five specimens from this age group, a negative correlation ( r = -0.918, P = 0.028) between maximum calcium concentration of enamel (measured by electron microprobing) and wear index was also recorded. We concluded that the intensity of enamel mineralization had a decisive effect on the degree of dental wear. Measuring of enamel hardness and subsequent modification of wear scores or indices is therefore recommended for future studies on the relationship between age and the degree of dental attrition in deer.  相似文献

The objective of this study was to investigate the usefulness of an array of statistical techniques to describe relationships between instrumental data and non‐oral sensory texture profiling scores by using a range of model processed cheese analogs as example. Pairwise correlation, used as an exploratory tool, showed no significant correlation for flexibility and greasiness with any individual instrumental parameter. Stepwise regression, principal component regression and partial least squares regression were used to generate models for firmness, stickiness and curdiness of the analogs studied. No models could be generated for flexibility and greasiness, and models for rubberiness had poor quality of fit compared with the other sensory attributes. In general, firmness, stickiness and curdiness were satisfactorily modeled by using chemical data and small deformation rheological parameters. Compression data (large deformation), often used in correlation studies regarding the texture of cheese, did not necessarily lead to better correlation results in comparison with other instrumental parameters used in this research.  相似文献

To improve the quality and functionality and increase the utilization of silver carp (Hypophthalmichthys molitrix) muscle, three groups of silver carp sausages inoculated with the combinations of Staphylococcus xylosus-12 with Lactobacillus plantarum-15, Pediococcus pentosaceus-ATCC33316, and Lactobacillus casei subsp. casei-1.001, and a batch without any starter (control) were prepared. During the 48 h fermentation at 30°C, silver carp sausages inoculated with mixed starter cultures resulted in a rapid pH decrease, suppression in the growth of Enterobacteriaceae, Pseudomonas, yeasts and molds, and exhibited higher texture profiles (hardness, gumminess, springiness, and chewiness) and whiteness than the control (P < 0.05). The changes in non-protein nitrogen (NPN), free amino acid and SDS-PAGE indicated severe hydrolysis of muscle protein occurred during fermentation. Polyunsaturated fatty acids were higher in quantity in sausages with cultures compare to the control. No significant differences for taste, texture, and appearance were found among batches with mixed starters. The sausage inoculated with the combination of Lactobacillus plantarum-15, S. xylosus-12, and Lactobacillus casei subsp. casei-1.001 (S-PXC) gained highest scores for flavor and overall acceptability. There was an apparent positive correlation (r = 0.87) between the NPN and the overall acceptability in sausages, whereas pH value showed a significantly negative correlations (r = –0.89 to −0.99, P < 0.05) with taste, flavor, texture, appearance, and overall acceptability.  相似文献

These studies sought to investigate quantitative relationships between the complex composite structure and mechanical properties of tendon. The isolated mouse tail tendon fascicle was chosen as an appropriate model for these so-called "structure-function" investigations. Specifically, collagen fibril diameters and mechanical properties were measured in fascicles from immature (3 week) control, adult (8 week) control, and adult (8 week) MovI3 transgenic mice. Results demonstrated a moderate correlation between mean fibril diameter and fascicle stiffness (r = 0.73, p = 0.001) and maximum load (r = 0.75, p < 0.001), whereas a weak correlation with fascicle modulus (r = 0.39, p = 0.11) and maximum stress (r = 0.48, p = 0.04). An analysis of pooled within-group correlations revealed no strong structure-function trends evidenced at the local or group level, indicating that correlations observed in the general structure-function analyses were due primarily to having three different experimental groups, rather than significant correlations of parameters within the groups.  相似文献

Using the principles of reaction kinetics, we constructed a model for the handling of immune complexes and the pathogenesis of SLE immune complex disease. The model incorporates rate constants for complement- and Fc-mediated clearance, parameters for autoantibody, complement and immune complex levels, and scores for clinical disease activity. The model assumes that complement fixation by immune complexes is a prerequisite for complement-mediated clearance and that disease activity results from immune complex deposition. To test the relationships derived, data from 32 lupus patients were analyzed and the predictions were compared with actual findings. The model predicts a low correlation coefficient between disease activity and immune complex levels (found, r = 0.25, p greater than 0.1). The model also predicts a poor correlation between disease activity and impaired Fc-mediated clearance in patients with normal complement levels (found, r = 0.10, p greater than 0.1), but a high correlation coefficient between disease activity and impaired Fc-mediated clearance in patients with hypocomplementemia (found, r = 0.61, p less than 0.001). In patients with normal complement levels, the model predicts a good correlation between anti-DNA antibody and immune complex levels (found, r = 0.71, p less than 0.001), whereas hypocomplementemic patients should have a good correlation between anti-DNA to CH50 ratios and immune complex levels (found, r = 0.73, p less than 0.001). The model predicts that disease activity should correlate better with the product of the anti-DNA to CH50 ratio and the rate constant for Fc-mediated clearance than with any single parameter (found, r = 0.85, p less than 0.0001). These significant correlations, which were predicted by the model, suggest that complement-mediated mechanisms are the first line of host defense against immune complex-induced injury, that the efficiency of complement opsonization plays a central role, and that both abnormal complement- and Fc-receptor function leads to active renal disease in SLE.  相似文献

Recently, high-throughput technologies have been made available which allow the measurement of a broad spectrum of glycomics and lipidomics parameters in many samples. The aim of this study was to apply these methods and investigate associations between 46 glycan and 183 lipid traits measured in blood of 2041 Europeans from three different local populations (Croatia - VIS cohort; Sweden - NSPHS cohort; Great Britain - ORCADES cohort). N-glycans have been analyzed with High Performance Liquid Chromatography (HPLC) and lipids with Electrospray Ionization Tandem Mass Spectrometry (ESI-MS/MS) covering sterol lipids, glycerolipids, glycerophospholipids and sphingolipids in eight subclasses. Overall, 8418 associations were calculated using linear mixed effect models adjusted for pedigree, sex, age and multiple testing. We found 330 significant correlations in VIS. Pearson's correlation coefficient r ranged from -0.27 to 0.34 with corresponding p-values between 1.45 × 10(-19) and 4.83 × 10(-6), indicating statistical significance. A total of 71 correlations in VIS could be replicated in NSPHS (r = [-0.19; 0.35], p = [4.16 × 10(-18); 9.38 × 10(-5)]) and 31 correlations in VIS were also found in ORCADES (r = [-0.20; 0.24], p = [2.69 × 10(-10); 7.55 × 10(-5)]). However, in total only 10 correlations between a subset of triantennary glycans and unsaturated phosphatidylcholine, saturated ceramide, and sphingomyelin lipids in VIS (r = [0.18; 0.34], p = [2.98 × 10(-21); 1.69 × 10(-06)]) could be replicated in both NSPHS and ORCADES. In summary, the results show strong and consistent associations between certain glycans and lipids in all populations, but also population-specific correlations which may be caused by environmental and genetic differences. These associations point towards potential interactive metabolic pathways.  相似文献
