ObjectiveTo determine the relative validity of three food frequency questionnaires (FFQs) compared with results from 24-hour dietary recalls for measuring dietary intakes in Guatemalan schoolchildren.DesignA cross-sectional study of primary caregivers (mothers or grandmothers) of 6–11 year-old children. Caregivers completed one of three constructed FFQs to measure the child’s dietary consumption in the last week: FFQ1 did not incorporate portion sizes; FFQ2 provided portion sizes; and FFQ3 incorporated pictures of median portion sizes. During the same week, each caregiver also completed three 24-hour dietary recalls. Results from the FFQ were compared with corresponding results from the 24-hour dietary recalls.SettingSanta Catarina Pinula, peri-urban Guatemala City.SubjectsCaregivers (n = 145) of 6–11 year-old children: 46 completed FFQ1, 49 completed FFQ2, and 50 completed FFQ3.ResultsThe mean values for all nutrients obtained from the 24-hour dietary recall were lower than for those obtained from the FFQs, excluding folic acid in FFQ3, cholesterol and zinc in FFQ2, and cholesterol, folic acid, magnesium, potassium, sodium, and zinc in FFQ1. Energy-adjusted Pearson correlation coefficients ranged from 0.07 (protein) to 0.54 (cholesterol) for FFQ1 and from 0.05 to 0.74 for FFQ2 and FFQ3. Agreement by both methods (FFQ and 24-hour dietary recalls) of classifying children into the same or adjacent quartiles of energy-adjusted nutrient consumption ranged from 62.0% for cholesterol to 95.9% for vitamin B12 across all three FFQs.ConclusionsOur FFQs had moderate to good relative validity in measuring energy and nutrient intakes for 6–11 year-old Guatemalan children. More evidence is needed to evaluate their reproducibility and applicability in similar populations. 相似文献

Most yeast species can ferment sugars to ethanol, but only a few can grow in the complete absence of oxygen. Oxygen availability might, therefore, be a key parameter in spoilage of food caused by fermentative yeasts. In this study, the oxygen requirement and regulation of alcoholic fermentation were studied in batch cultures of the spoilage yeast Zygosaccharomyces bailii at a constant pH, pH 3.0. In aerobic, glucose-grown cultures, Z. bailii exhibited aerobic alcoholic fermentation similar to that of Saccharomyces cerevisiae and other Crabtree-positive yeasts. In anaerobic fermentor cultures grown on a synthetic medium supplemented with glucose, Tween 80, and ergosterol, S. cerevisiae exhibited rapid exponential growth. Growth of Z. bailii under these conditions was extremely slow and linear. These linear growth kinetics indicate that cell proliferation of Z. bailii in the anaerobic fermentors was limited by a constant, low rate of oxygen leakage into the system. Similar results were obtained with the facultatively fermentative yeast Candida utilis. When the same experimental setup was used for anaerobic cultivation, in complex YPD medium, Z. bailii exhibited exponential growth and vigorous fermentation, indicating that a nutritional requirement for anaerobic growth was met by complex-medium components. Our results demonstrate that restriction of oxygen entry into foods and beverages, which are rich in nutrients, is not a promising strategy for preventing growth and gas formation by Z. bailii. In contrast to the growth of Z. bailii, anaerobic growth of S. cerevisiae on complex YPD medium was much slower than growth in synthetic medium, which probably reflected the superior tolerance of the former yeast to organic acids at low pH. 相似文献

A study to determine approximate intakes of vitamin D and sources contributing this nutrient was conducted among 1000 children, aged one week to 5½ years, in two Ontario Health Units in 1963 and 1964. Over 70% of the children obtained daily intakes above the recommended level, 400 I.U. Supplements provided about 60% of the total intake in children aged 7 months to 66 months who consumed 1000-1800 I.U. or more. In the intake range 1-399 I.U., fortified foods supplied 87% of the vitamin D to this age group. Influences of subsequent Food and Drug Directorate regulations, (a) withdrawing vitamin D from four foods used during the survey and (b) the effect of permissive vitamin D fortification of fluid milk products, were examined theoretically, by age and intake level. Programs directed to planning net intakes of 400 I.U. vitamin D, encouraging the use of fortified milk and discouraging the use of vitamin D supplements are described. 相似文献

Introduction
The Choices Programme is an internationally applicable nutrient profiling system with nutrition criteria for trans fatty acids (TFA), saturated fatty acids, sodium, added sugar and for some product groups energy and fibre. These criteria determine whether foods are eligible to carry a “healthier option” stamp. In this paper a nutrient intake modelling method is described to evaluate these nutritional criteria by investigating the potential effect on nutrient intakes.Methods
Data were combined from the 2003 Dutch food consumption survey in young adults (aged 19–30) and the Dutch food composition table into the Monte Carlo Risk Assessment model. Three scenarios were calculated: the “actual intakes” (scenario 1) were compared to scenario 2, where all foods that did not comply were replaced by similar foods that did comply with the Choices criteria. Scenario 3 was the same as scenario 2 adjusted for the difference in energy density between the original and replacement food. Additional scenarios were calculated where snacks were not or partially replaced and stratified analyses for gender, age, Body Mass Index (BMI) and education.Results
Calculated intake distributions showed that median energy intake was reduced by 16% by replacing normally consumed foods with Choices compliant foods. Intakes of nutrients with a maximal intake limit were also reduced (ranging from −23% for sodium and −62% for TFA). Effects on intakes of beneficial nutrients varied from an unintentional reduction in fat soluble vitamin intakes (−15 to −28%) to an increase of 28% for fibre and 17% calcium. Stratified analyses in this homogeneous study population showed only small differences across gender, age, BMI and education.Conclusions
This intake modelling method showed that with consumption of Choices compliant foods, nutrient intakes shift towards population intake goals for the nutrients for which nutrition criteria were defined, while effects on beneficial nutrients were diverse. 相似文献8.
Minerals can enter the food chain through industrial and mining activities. Soil-to-vegetable transfer is higher than soil-to-cereal, but human consumption of metals is attributable to balanced diets containing both vegetables and cereals and drinking water. However, the impact of location on intakes of metals from predominantly cereal-based Indian diets is not clear. Hence, the present study was undertaken in selected Agricultural, Industrial, and Coal Mining Areas (AA, IA, CMA) around the Allahabad District in Northern India to compare transfer of toxic metals, Pb, Cd, Cr and essential metals, Fe, Zn, Cu, Co in soil and water to common crops: cereals (rice, wheat, maize) and vegetables (spinach, potato), and to assess Daily Intake of Metal (DIM) and consequent Health Risk Index (HRI). The overall content of all metals, except Cu, in water, soils, and crops followed the pattern CMA > IA > AA. Transfer factors (TFs) followed the sequence spinach > potato > cereals. Quantitatively, however, cereals contribute maximally to a balanced diet, so DIM and HRI were higher from cereals than vegetables. Even though spinach had the highest TFs, cereals contributed maximally to HRI. CMA had the highest metal content so locally grown cereals contributed significantly to intake of both toxic and essential metals. 相似文献
