目的:检测中国不同地区普通和富硒猪肉、鸡肉、鱼肉中总硒含量,为评估居民硒摄入量以及指导富硒产业发展提供依据。方法:2017年7—9月采集中国10个地区代表城市普通和富硒样品共516份,采用原子荧光光谱法测定总硒含量。结果:普通和富硒产品中,鱼肉总硒含量最高,其次猪肉,鸡肉与猪肉接近;西安三种产品总硒水平最高,克山和安康总硒水平最低。富硒产品与普通相比,猪肉和鸡肉总硒水平显著提高,富硒鱼肉略高于普通鱼肉。结论:鱼肉是很好的居民膳食硒来源,但富硒作用不显著;富硒猪肉和鸡肉产业发展不平衡,亟需制定相应的科学技术与国家相关标准。  相似文献

调查了广州市常见食物中的硒含量.结果表明:动物性食品内脏、水产品、蛋类和羊肉等食品中的硒含量最为丰富(>150.0μg.kg-1);谷物与豆类中的硒含量相近(46.5~98.3μg.kg-1);蔬菜(15.8μg.kg-1)和水果(4.97μg.kg-1)中硒含量均较低;菌类在植物性食品中的硒含量最高(46.0μg.kg-1).广州市居民硒摄入量为98.5μg.d-1.其中,动物性食品占总硒摄入量的73.7%;植物性食品占26.3%;水产品和猪肉均占22.0%以上;大米占17.2%.广州市食品中的硒含量和居民每日硒摄入量能满足人体生理需要.  相似文献

硒是一种重要的微量元素,在低浓度时对生物有益,但高浓度时呈现与重金属类似的毒性。植物作为人体硒摄入的主要来源,其硒代谢对于植物硒积累乃至人体硒营养水平十分重要。研究植物硒吸收、代谢和积累机理能指导富硒粮食的生产,是解决人体硒摄入不足/超量问题的有效途径。本文在阐述土壤硒含量、形态、生物有效性及分布的基础上,综述了植物对硒的吸收、代谢机理的研究进展,并讨论了农业生物强化以及遗传育种生物强化等两种硒生物强化的实践方法,以及利用硒生物强化缓解重金属毒性减少积累;最后,提出了植物硒代谢及硒生物强化研究的前沿问题,以期为改善人体硒营养水平提高人体健康状况提供理论和实践依据。  相似文献

2020年,科学家在新型冠状病毒肺炎的治疗过程中发现,治疗效果与患者体内的硒和叶酸水平有一定相关性。这说明提高人体内硒和叶酸含量的膳食方案,可以有效地增加人体免疫能力来应对病毒性疾病的冲击。通过膳食保障人体硒和叶酸的摄入是植物营养强化的主要任务之一,但目前硒和叶酸的复合营养强化工作鲜见报道。综述了硒和叶酸这两种微量营养素在抗病毒治疗中的机制、以及硒和叶酸在植物中的应用前景,为提升营养品质、创制富含硒和叶酸的营养强化植物提供理论支撑。  相似文献

Type I 5′-deiodinase was recently characterized as a selenocysteine-containing enzyme in humans and other mammals. Up to now, the effect of selenium (Se) supplementation on thyroid hormone metabolism in humans has only been reported in the very peculiar nutritional environment of Central Africa, where combined severe iodine and Se deficiency occurs. In this study, a group of phenylketonuria subjects with a low selenium status, but a normal iodine intake were supplemented with selenium to investigate changes in their thyroid hormone metabolism. After 3 wk of selenium supplementation (1 μg/kg/d), both the concentrations of the prohormone thyroxine (T4) and the metabolic inactive reverse triiodothyronine (rT3) decreased significantly. Clinically, the phenylketonuria subjects remained euthyroid before and after selenium supplementation. The individual changes of plasma Se and glutathione peroxidase activity were closely associated with individual changes of plasma T4 and rT3.  相似文献

The selenium content of infant formulae varies as a result of differences in the amount of intrinsic selenium compounds. Manufacturers have been gradually changing the protein profile of infant formulae to reflect human milk contents more closely. Because of these variations in infant formula composition and their potential impact on selenium content, this trace element was analysed with regard to the different protein sources.

The aims of this study were to determine the selenium content in infant formulae sold commercially in Spain, to estimate a daily dietary intake for infants fed on formulae and to compare with the selenium provided by Spanish breast milk samples used as a reference. We have also identified certain trace elements added to formulae which interact with selenium according to the type and protein matrix of the infant formulae.

Selenium concentration was determined by inductively coupled plasma atomic emission spectrometry (ICP-AES) with a hydride generator.

The selenium concentrations in human milk and infant formulae determined in this study are similar to those found by other researchers in different countries. The daily selenium intake from the formulae studied was estimated according to the recommended doses from the manufacturers. The theoretical selenium intake of nursed infants has been studied in relation to the Recommended Dietary Allowance (RDA: 10 μg Se/day) and the specific recommendations for infant formula nutrient contents (10–35 μg Se/L) set by the Expert Panel of Life Sciences Research Office (LSRO) of the American Society for Nutritional Sciences.

According to our results, on an overall view, infants fed on the studied infant formulae have an intake between basal and normative requirements. This might be considered as providing an adequate selenium supply. However, the intake of selenium provided by several formulae included in this research did not reach the RDA for the first month of neonate life.  相似文献

The present study examined the effect of fertilization with sodium selenite on the selenium content of tea and the nutritional function of Se-enriched tea. Selenium content of tea leaves was increased up to 0.36 g g–1 by the application of sodium selenite to soil at 0.5 and 1.0 kg Se ha–1. Application by a Se-enriched organic manure at a rate of 0.5 kg Se ha–1 provided a higher biological availability of selenium for plant uptake compared with a similar amount of sodium selenite. Foliar spray of sodium selenite at 50–100 g Se ha–1 increased the selenium content to 0.32–1.45 g g–1 in tea leaves sampled at the 8–26 days after spraying. Selenium content in the blood and liver, glutathione peroxidase activity in blood of rats were significantly enhanced by feeding of an extracted solution of Se-enriched tea leaves and sodium selenite. Glutathione peroxidase activity in liver of rats fed with Se-enriched tea was higher than that fed with sodium selenite, indicating that the selenium in Se-enriched tea leaves is a more effective Se source than sodium selenite. Increasing the Se level in food products through the application of a selenium fertilizer is a safe, effective and feasible means of increasing the selenium intake of human and animals in low selenium areas of China.  相似文献

Despite different geological features the Nordic countries are generally selenium-poor areas. In each country various factors such as food importation and life-style determine the selenium (Se) intake. Due to an extremely low Se intake in the 1970s in Finland, 0.025 mg/day, an official decision was made in 1984 to supplement multinutrient fertilizers with Se in the chemical form of sodium selenate. Almost all fertilizers used in Finland since 1985 have contained Se. Currently all crop fertilizers contain 15 mg Se/kg. Finland is still the only country to take this country-wide measure.In a national monitoring programme, sampling of cereals, basic foodstuffs, feeds, fertilizers, soils, and human tissues has been carried out annually since 1985 by four governmental research organizations. Sampling of foods has been done four times per year and human blood has been obtained annually from the same (n = 60) adults. The accuracy of analyses has been verified by annual interlaboratory quality control. During this programme the selenium concentration of spring cereals has increased on average 15-fold compared with the level before the Se fertilization. The mean increase in the Se concentration in beef, pork and milk was 6-, 2- and 3-fold. In terms of Se, organically grown foods of plant origin are generally comparable to products produced before the Se supplementation of fertilizers. Milk from organically fed cows is 50% lower in Se than the usual milk. The average dietary human intake increased from 0.04 mg Se/day/10 MJ in 1985 to a present plateau of 0.08 mg Se/day/10 MJ, which is well above the current nutrition recommendations. Foods of animal origin contribute over 70% of the total daily Se intake. The mean human plasma Se concentration increased from 0.89 μmol/L to a general level of 1.40 μmol/L that can be considered to be an optimal status. The absence of Se deficiency diseases and a reference population have made conclusions on the impact on human health difficult. However, the rates of cardiovascular diseases and cancers have remained similar during the pre- and post-supplementation indicating medical and life-style factors to be much stronger determinants than Se. The nationwide supplementation of fertilizers with sodium selenate is shown to be effective and safe in increasing the Se intake of the whole population. Dietary selenium (Se) can be supplemented from organic or inorganic sources and this may affect Se metabolism and functional outcome such as antioxidative status and immune functions in dairy cows. A feeding trial was performed with 16 Holstein-Friesian dairy cows fed with a total mixed ration (0.18 mg Se/kg dry matter (DM)) either without Se supplement (Control, n = 5), or with Se from sodium selenite (Group SeS, n = 5) or Se yeast (Group SeY, n = 6). In Groups SeS and SeY, the Se supplementation amounted to an additional intake of 4 mg Se and 6 mg Se/d during gestation and lactation, respectively. The effect of both Se sources was characterised by milk Se and antioxidant levels, and the phenotyping and functional assessment of phagocytic activity of milk immune cells. Se yeast has been found to increase (p ≤ 0.001) the milk Se and antioxidant levels markedly compared to the control group. The experimental treatment did not affect the immune parameters of the cows. Lymphocyte subpopulations and phagocytosis activity of neutrophilic granulocytes were affected neither by the Se intake nor by the two different dietary supplements. It can be concluded that sodium selenite and Se yeast differ considerably in their effects on antioxidant status in dairy cows. However, the basal dietary Se concentration of 0.18 mg/kg DM seemed to be high enough for the measured immune variables.  相似文献

To investigate the selenium status during long-term dietary supply of selenium yeast, 30-day-old male rats were fed for 379 days a methionine-adequate low-selenium diet supplemented with 0.2 mg Se/kg (selenium-adequate diet) or 1.5 mg Se/kg (high-selenium diet) in the form of selenium yeast that contained 60% of the element as l-selenomethionine. Their selenium load was determined at several intervals by neutron activation analysis of the selenium concentrations in the main selenium body pools, skeletal muscle and liver. After 64 days the tissue selenium concentrations plateaued in both groups and then stayed at that level. Compared with the selenium-adequate group, elevated tissue selenium concentrations were found in the high-selenium group, but the increase by a factor of 3.5 in the muscle and by a factor of 2.3 in the liver was smaller than the 7.5-fold increase in the selenium intake. In the selenium-adequate group about 50% of the muscle selenium and 30% of the liver selenium and in the high-selenium group about 85% of the muscle selenium and 70% of the liver selenium were estimated to be present in non-selenoprotein forms. During selenium depletion the liver glutathione peroxidase activity in the high-selenium group remained unaffected for 4 weeks and then decreased more slowly than that in the selenium-adequate group. From these results it can be concluded that selenium incorporated from the selenium yeast diet into non-selenoprotein forms can serve as an endogenous selenium source to maintain selenoprotein levels in periods of insufficient selenium supply.  相似文献

Current trends in biogeochemical research in the former USSR are exemplified for the trace element selenium (Se). Vast regions of the former USSR are low in Se, giving rise to selenium deficiency diseases in animals and to Kaschin-Beck disease in humans, whereas isolated high-Se regions are comparatively rare. The Se content of plants depends on geological soil-type and secondary processes such as weathering and leaching. In general, a direct correlation between the Se content of feedstock and of the blood in animals is observed, whereas corresponding data for humans remain to be accumulated.  相似文献

This review presents the possible pathwaysinvolving selenium in E. coli. To assess the levels of daily dietary intake of selenium (Se) among the general Chinese population, a series of field surveys were conducted in the 1990s. Samples of 24-h duplicates of foods were collected from 500 participants (300 in 6 cites and 200 from 4 villages). Se levels were determined by microwave digestion followed by inductively coupled plasma-mass spectrometry (ICP-MS), and the measurements were compared with FCT (Food Composition Tables)-based estimates. The average daily intake of Se was 69.2 μg/d (79.9 and 53.1 μg/d in urban and rural areas, respectively) by instrumental determination and 35.1 μg/d (36.7 and 32.7 μg/d) by FCT-based estimation. As the distribution of Se should be uneven within China, the FCT-based estimation is of a limited value and the ICP-MS determination of Se is more accurate and reliable when evaluating the nutritional status of local people. Taking ICP-MS-based values, Se intakes were lower in rural areas than in urban areas, and the intakes of about half of the people in rural areas were less than the Recommended Daily Allowance (RDA) in China of 50 μg/d. The low intake might be resulted from difference in the types of food consumed. Thus, the dietary intake of Se basically meets the recommended RDA in most of urban areas, but insufficiency may be still a nutritional and public health problem in some rural areas.  相似文献
