Stuffed mussel is a traditional food that sold by street venders in various countries. In the present study, samples of stuffed mussels were collected from various places in Ankara. The mussels were analyzed to show the microbiological risks for human health. Thirty samples (600 stuffed mussels in total) were collected periodically and microbiological analyses were performed by standard procedures for Bacillus cereus, Staphylococcus aureus, Escherichia coli, Salmonella sp., Clostridium sp. In terms of Salmonella sp., approximately 50% of samples were not suitable for consumption. Besides, in accordance with Turkish Food Codex Microbiological Criteria Announcement in terms of E. coli 30%, in terms of B. cereus 80%, in terms of S. aureus 76.6%, in terms of Clostridium perfringens 13.3% of these samples were not suitable for consumption. The aim of this study is to discuss the microbiological quality of stuffed mussels as a ready-to-eat food according to Turkish Food Codex (TFC). The result of this investigation indicates that stuffed mussels as a street food may constitute a potential health hazard, depending on contamination level and lack of sanitary practices, and therefore, handling practices should require more attention and improvement.  相似文献

Abstract

The dietary intake of metals, especially lead and cadmium, in some regions of Poland exceeds Provisional Tolerable Weekly Intake (PTWI) allowances established by the Joint FAO/WHO Expert Committee on Food Additives (JECFA). This is mostly due to increased environmental pollution.

The metal(loid)s are mainly transported to the Black Sea via rivers and affect the coastal area where fisheries are intensive. Chamelea gallina (striped venus clam) is the most abundant mollusk species in the Black Sea and used as a bioindicator for monitoring of metal(loid) pollution. In this respect, the concentrations of As, Cd, Cr, Cu, Pb, and Zn in C. gallina collected from 16 different locations along the Black Sea coast (Turkey, Bulgaria, and Russia) were determined and evaluated for the potential human health risk. The results obtained were found to be below the maximum permissible limits indicated in the food safety guidelines. Similarly, the analyzed metal(loid)s did not pose a potential hazard to humans for consumption of the C. gallina, regarding provisional tolerable weekly intake described by the Joint FAO/WHO Expert Committee on Food Additives (JECFA). Moreover, target hazard quotient and hazard index were found to be lower than 1 for not only average consumer but also the consumer who consumed a portion (160 g) once a week. In contrast, consumption of C. gallina could cause health risks for Cd and As in case of increasing portion sizes.  相似文献

Abstract

The oriental fruit moth (OFM) is one of the most serious pests of commercial fruit orchards worldwide. Newly planted peach trees in particular, can be very attractive for mated OFM females for oviposition. Samples of airborne host plant volatiles from intact young peach shoot tips and old leaves of the same potted plants were collected and analyzed with a gas chromatograph-mass spectrometer. Chemicals present in young shoot tips, but not in old leaves, were used for field trials. Moth capture by traps with the synthetic chemicals was compared to that of the standard terpinyl acetate (TA) food trap. The TA food trap caught OFM males and mated females, but tested synthetic chemicals trapped only OFM males. We observed that the mixture of (Z)-3-hexenyl acetate: (E)-β-ocimene: (E)-β-farnesene in proportion 1:2:2 attracted OFM males. Further, 1 mg of (E)-β-ocimene, and that of (E)-β-farnesene also attracted OFM males.  相似文献

When establishing maximum limits, in addition to issues relating to preventive consumer protection and toxicological data on risk assessment, sampling procedures and methods of analysis, as well as economic and political aspects have to be considered. Therefore, various and diverse organizations tend to be involved in the process of establishing maximum limits. Specifically, the following are responsible for the toxicological evaluation of the substances in question: International Programme on Chemical Safety (IPCS), International Agency of Research on Cancer (IARC), Joint FAO/WHO Expert Committee on Food Additives (JECFA), and, within the Commission of the European Communities, the Scientific Committee for Food (SCF). The interests of world-wide trade are looked after by the Codex Alimentarius Commission, the Codex Committee of Food Additives and Contaminants, and the World Trade Organisation, WTO. On the basis of Commission Regulation (EC) no. 315/93, in 2001 the EU has adopted Commission Regulation (EC) no. 466/2001 on contaminants establishing maximum limits for nitrates, heavy metals, 3-monochlor-propan-1,2-diol, and aflatoxins in foods (peanuts, nuts, dried fruits, cereal/cereal products). In February 2002, this Regulation has been completed by Regulation (EC) no. 257/2002 (aflatoxins in cereals), and in March 2002 by Regulation (EC) no. 472/2002 (aflatoxins in spices and ochratoxin A in cereals and dried grapes). Reference is made to other mycotoxins the levels of which in certain foods should be the subject of future regulations.  相似文献

Food consumption, digesta retention time, and food preference were measured for captive whooping cranes fed pelleted diets. The basal commercial diet was compared to four mixtures containing 70% basal and 30% of one of four important winter foods for the whooping crane: blue crab (Callinectes sapidus), wolfberry fruit (Lycium carolinianum), live oak acorn (Quercus virginiana), or common Rangia clam (Rangia cuneata). Because captive birds would not eat whole foods, we were prevented from direct food preference tests. Food passed through the gut rapidly, with almost complete elimination within 7 hr. There was some indication that retention time was shorter for the low fiber and high ash and calcium clam diet. Cranes ate less wolfberry feed (g/day) than the other feeds, and all birds ate less wolfberry feed on the day it was first fed, compared to basal diet the previous day. Birds ate more low energy feed than high energy feed. Due to combined effects of low energy content, lower metabolizable energy coefficients, and reduced feed consumption, less energy was assimilated for study diets than basal diet. Apparent shorter retention times for some diets containing whooping crane foods may partly explain lower digestibilities and metabolizable energy of winter whooping crane foods compared to commercial crane diet. Purpose

Limiting exposure to potentially toxic chemicals in food packaging can lead to environmental impact trade-offs. No available tool, however, considers trade-offs between environmental impacts of packaging systems and exposure to potentially toxic chemicals in food packaging. This study therefore explores the research needs for extending life cycle impact assessment (LCIA) to include exposure to chemicals in food packaging.

Methods

The LCIA framework for human toxicity was extended for the first time to include consumer exposure to chemicals in food packaging through the product intake fraction (PiF) metric. The related exposure pathway was added to LCIA without other modifications to the existing toxicity characterization framework used by USEtox®, i.e., effect factor derivation. The developed method was applied to a high impact polystyrene (HIPS) container case study with the functional unit of providing 1 kg of yogurt in single servings. Various exposure scenarios were considered, including an evidence-based scenario using concentration data and a migration model. Human toxicity impact scores in comparative toxic units (CTUh) for the use stage were evaluated and then compared to human toxicity impact scores from a conventional LCIA methodology.

Results and discussion

Data allowed toxicity characterization of use stage exposure to only seven chemicals in HIPS out of fourty-four identified. Data required were the initial concentration of chemicals in food packaging, chemical mass transfer from packaging into food, and relevant toxicity information. Toxicity characterization demonstrated that the combined CTUh for HIPS material acquisition, manufacturing, and disposal stages exceeded the toxicity scores related to consumer exposure to previously estimated concentrations of the seven characterizable chemicals in HIPS, by about two orders of magnitude. The CTUh associated with consumer exposure became relevant when migration was above 0.1% of the European regulatory levels. Results emphasize missing data for chemical concentrations in food contact materials and a need to expand the current USEtox method for effect factor derivation (e.g., to consider endocrine disruption, mixture toxicity, background exposure, and thresholds when relevant).

Conclusions

An LCIA method was developed to include consumer exposure to chemicals in food packaging. Further study is required to assess realistic scenarios to inform decisions and policies, such as circular economy, which can lead to trade-offs between environmental impacts and potentially toxic chemicals in packaging. To apply the developed method, data regarding occurrence, concentration, and toxicity of chemicals in food packaging are needed. Revisiting the derivation of effect factors in future work could improve the interpretation of human toxicity impact scores.

Chemicals present in contaminated soils generally exhibit altered bioavailability compared to other vehicles used in studies of chemical toxicity. Methods used to assess the bioavailability of soil-borne chemicals have generally been modified versions of methods that are widely used in biomedical research. Oral and dermal bioavailability of semivolatile organic chemicals and metals in soil has been assessed by a variety of in vivo and in vitro methods. Due to variations in metabolism and excretion of different chemicals, approaches to measuring bioavailability must be selected with an understanding of disposition of the chemical being studied. Standard methods need to be modified due to constraints associated with doses relevant to environmental concentrations, the need to reflect weathering behavior in soils over time, and the need to generate data applicable to human health risk assessments. Estimates of relative bioavailability for chemicals in soil can be used directly to modify exposure estimates. Application of bioavailability data in a site-specific risk assessment requires regulatory acceptance of the data. Acceptance of the data will generally be dependent on either the use of a validated test method or a careful scientific review of the test method employed. A process for validating newly developed alternative toxicity methods for routine use developed by the Interagency Coordinating Committee on the Validation of Alternative Methods provides relevant guidance for assessing in vitro methods, but method validation should not be the only litmus test for inclusion of bioavailability data in risk assessments.  相似文献

Quantitative microbiological risk assessment is a very new and unique scientific approach able to link, for the first time, data from food (in the farm-to-fork continuum) and the various data on human disease to provide a clear estimation of the impact of contaminated food on human public health. The Food and Agriculture Organization of the United Nations (FAO) and the World Health Organization (WHO) have recently launched risk assessment studies of a number of pathogen-food commodity combinations (Salmonella in eggs and in broiler chickens, Listeria monocytogenes in ready-to-eat foods, Campylobacter in broiler chickens, Vibrio in seafood) to be used to lower the risk associated with these food-borne diseases and ensure fair practices in the international trade of food. The FAO/WHO Listeria risk assessment was undertaken in part to determine how previously developed risk assessments done at the national level could be adapted or expanded to address concerns related to L. monocytogenes in ready-to-eat foods at an international level. In addition, after initiation of the risk assessment, the risk assessors were asked by the Codex Committee on Food to consider three specific questions related to ready-to-eat foods in general, which are: (1). estimate the risk for consumers in different susceptible populations groups (elderly, infants, pregnant women and immunocompromised patients) relative to the general population; (2). estimate the risk for L. monocytogenes in foods that support growth and foods that do not support growth under specific storage and shelf-life conditions; (3). estimate the risk from L. monocytogenes in food when the number of organisms ranges from absence in 25 g to 1000 colonies forming units per gram or milliliter, or does not exceed specified levels at the point of consumption. To achieve these goals, new dose-response relationships and exposure assessments for ready-to-eat foods were developed. Preliminary data indicate that eliminating the higher dose levels at the time of consumption has a large impact on the number of predicted cases.  相似文献

Comprehensive screening data on the treatability of 32 organic chemicals in soil were developed. Of the evaluated chemicals, 22 were phenolic compounds. Aerobic batch laboratory microcosm experiments were conducted using two soils: an acidic clay soil with <1% organic matter and a slightly basic sandy loam soil containing 3.25% organic matter. Loss rates were determined for the 32 chemicals with each soil and were higher in the basic soil. The loss rates were compared with chemical structure. Chlorophenols with chlorine substituted in the meta‐position had greater half‐lives and lower loss rates. Chemicals with a nitro group substituted in the phenol ring appeared to have a lower loss rate.  相似文献

In the western Baltic Sea (WBS), whiting Merlangius merlangus is the main piscivorous fish together with cod Gadus morhua. In the present study, we investigate the growth and food consumption rates of WBS M. merlangus and compare the growth rates of males and females with those of M. merlangus in the North Sea (NS). Food consumption rates are estimated directly from sampled stomach contents in the WBS using a gastric evacuation rate model and indirectly by using a static energy‐budget model together with the growth rates. The results indicate that male and female M. merlangus in the WBS have similar feeding and growth strategies, while in the NS M. merlangus show more pronounced differences in food consumption and growth dynamics between the sexes. Female WBS M. merlangus grow significantly slower than their conspecifics in the NS, but there is no significant difference for males. Sexual size dimorphism is seen in both areas, but for M. merlangus in the WBS the difference is less pronounced. Food consumption rates in the WBS differ between seasons, with the lowest food intake in the first 2 quarters of the year and the highest in the 3rd quarter. No differences in consumption rates were seen between males and females, which could be related to the more similar growth pattern seen for M. merlangus in the WBS.  相似文献

Food consumption of newt tadpoles caught during July and August was estimated as C=34W1·11±0·12 where C is food consumption in milligrams wet weight/day and W is the live weight in grams. Well-fed tadpoles assimilated the food with an efficiency of 90–6%, but at low rates of feeding, the efficiency fell. Gross growth efficiency was about 35 % at maximum rations.  相似文献

Food consumption and digestion of male and female dugongs (Dugong dugon) was examined by analyzing long-term (1979–1998) feeding records at Toba Aquarium (Japan). Throughout all captive feeding periods, dugongs consumed eelgrass (Zostera marina) and showed steady increases in feed consumption with a consistent weight gain of 42–45?kg a year. The daily consumption of male and female dugongs increased from 10–15?kg to 23–26?kg of fresh eelgrass, accounting for approximately 14 and 7% of their body weight at one and seven years old, respectively. Both dugongs had a marginal dry matter digestibility of over 90%. Food consumption varied between seasons and individuals. There were major reductions (P<0.05) in consumption by the male in November and January and by the female in August and September. The seasonal reductions in food consumption coincided with high digestibility of eelgrass.  相似文献

The effect of parasitism byHyposoter didymator (Thunb.) [Hym.: Ichneumonidae] on food consumption and utilization bySpodoptera litura (Fb.) [Lep.: Noctuidae] was studied for seven days, during which the parasitoid completed its larval development. Food consumption, weight gained and faeces produced were significantly less in parasitized larvae than in unparasitized larvae after the 4th day following parasitization. Approximate digestibility was higher in parasitized larvae after the 2nd day following parasitization. Efficiency of conversion of ingested and digested food into body weight was greater in unparasitized larvae after the 2nd day of parasitization. There seems to be a definite immediate advantage to the crop on releasing the parasitoid due to the reduced consumption of food. This resembles the alarm response found in ostariophysan fishes, darters, and at least one other gobiid. Objective: The influence of dairy product consumption on food intake and appetitive sensations was explored in a cross‐over design study with individuals who were habitually low (<1 serving/d) or high (>3 servings/d) dairy consumers. Research Methods and Procedures: Fifty‐eight participants were required to eat one portion of dairy each day (low dairy) or three portions of dairy each day (high dairy) for 7 days. After a 7‐day washout period, the opposite treatment condition was completed. Food intake and appetitive ratings were measured on each day of the treatment periods. Results: During the high‐dairy period, participants consumed 209 kcal/d more than during the low dairy period (p < 0.05). There were no significant differences in subjective appetite ratings. Habitual dairy use did not influence either the appetitive or dietary findings. Discussion: These data indicate that increasing dairy consumption may lead to increased energy intake, which could potentially cause weight gain.  相似文献

Synopsis The relationships between food availability, consumption and growth were analyzed from the onset of feeding to an age of 90 days in three cyprinid species. Fish were held at 20 ± 0.5° C and given two (three) constant rations of approximately 30, (40) or 100% dry body weight (dbw) ind-1 day-1. Food consisted of living zooplankton, the size of which correlated with fish size. At high food densities consumption rates decreased rapidly with fish size in all three species. At reduced rations, fish consumed most of the food offered until they were larger than 10 mg dbw. In all species and at each feeding level daily rations consumed increased allometrically with body size. Respiration rate, expressed as routine metabolic rate differed insignificantly between the three species. At high ration levels, growth rates of small bleak, Alburnus alburnus, were distinctly lower than those of roach, Rutilus rutilus, and blue bream, Abramis ballerus. At low food supply all three species grew at similar rates. Assimilation efficiency at low food conditions was approximately twice that of the well-fed groups. If the caloric equivalents of oxygen consumption as measured in well-fed fish are applied to fish fed at low rations their energy budgets do not balance. This indicates the limitations of fish larvae in the partitioning of energy for growth or activity at such conditions.  相似文献

Laboratory scale experiments were conducted in order to assess the potential effect of Bacillus thuringiensis‐corn leaf material on the parasitized herbivore Chilo partellus Swinhoe (Lepidoptera: Crambidae) and on its parasitoid Cotesia flavipes (Cameron) (Hymenoptera: Braconidae). Food consumption and relative consumption rate of parasitized hosts exposed to Bt‐corn leaf‐material were strongly reduced compared to the control. The number of hosts allowing parasitoid larvae to complete their development was also reduced in the Bt group. Moreover, the fresh weight of parasitoid pupae and the dry weight of parasitoid adults was lower than in the control. Only in the Bt group, were strong negative correlations found between food intake by the host, and the number of parasitoid cocoons. Strong positive correlations were also only found in the Bt group, between food intake and parasitoid development time. As effects of Bt on the oviposition behaviour of C. flavipes could be excluded, differences between the Bt group and the control could only be due to the effect of Bt toxin on the parasitoid larva developing inside the host. Whenever food consumption can be measured, the methods used in this study are proposed as a model for future risk assessments on different types of insect‐resistant transgenic plants, herbivores, parasitoids, and predators.  相似文献
