Hispanics and non‐Hispanics Americans participated in four sets of studies dealing with health‐oriented foods, with the goal to identify how they respond to food categories relevant in any cuisine. Each study comprised a conjoint analysis using 36 elements followed by a self‐profiling questionnaire to learn more about Hispanic and non‐Hispanic food responses to concepts for four different product categories (morning bread, bottled water, healthful salad dressing and popcorn as a snack). The study identified patterns of preference of marketing statements in the areas of health information, sensory characteristics, emotional benefits and endorsements. Conjoint utility values generated by both Hispanics and non‐Hispanic respondents correlated highly, suggesting that their food attitudes are quite similar for“non‐signature”products despite the differences in their original cuisines.  相似文献

The aim of this study was to investigate whether product label information “produced with organic ingredients” and “stabilization technology” affects consumer acceptability of vegetable soups. Three focus group interviews were preliminarily conducted in order to gain information about the appropriate terminology to use in the next consumer test. In all, 109 subjects were recruited by means of a background questionnaire. They were then divided into three groups according to age, gender and soup preference. Each group evaluated three different types of soup in two phases, first blind and then with information. At the end of the second phase, the participants filled in a conjoint analysis questionnaire. The results demonstrated that if consumers were informed that soup is prepared with organic ingredients, they would improve their acceptability scores, whatever the soup type. Stabilization technology information had no effect. Conjoint results revealed that consumers appreciate soups made with organic legumes and cereals and without seasoning. Consumers are the principal agents of consumption when edible insect cookies are launched into the market; therefore, there is a need for research into consumer perception of this product and the factors that could affect their choice. Therefore, through this study, we aimed to provide such information for the development and launch of edible insect cookies. We investigated the importance of product features of edible insect cookies and the part‐worth of the feature levels while predicting the market share of edible insect cookies that are currently in development. We constructed 16 main and four hold‐out profiles from six product features and 16 levels of features. Following analysis of data collected from 203 of 250 respondents, product features were found to be important in the descending order of “type”, “price”, “size”, “availability of nutrition facts”, “thickness” and “use of edible insects”. When the market share of an edible insect cookie with the optimal combination of product features was analyzed through choice simulation, it had the second‐highest share in the cookie market, thus suggesting a direction for the development of edible insect cookies.  相似文献

ABSTRACT

Meal replacement products including protein bars, shakes and powdered drinks have increased in demand and sales. The objective of this study was to assess the consumer perception of protein content and type and product claims for meal replacement beverages and bars. The impact of exercise frequency on product perception was also investigated. Focus groups were conducted with exercisers and nonexercisers. An adaptive conjoint analysis survey was subsequently developed and conducted (n = 138 consumers, ages 18–35 years). Relative importance of product attributes was determined through a realistic trade‐off scenario. Utility scores were extracted and rescaled by the zero‐centered differences method, and two‐way analysis of variance was conducted to identify the differences between exercise frequency and product attributes. Both groups preferred bars to beverages, and no clear preferences were observed for protein type, which was consistent with focus group results of low knowledge/understanding of specific proteins. All respondents valued the products with low‐fat/fat‐free, calcium, all‐natural, protein, vitamin/mineral, heart health and muscle‐building claims. Exercisers viewed muscle‐building claims as more important than nonexercisers. Nonexercisers viewed heart health, calcium and vitamin/mineral claims as more important than exercisers. Three distinct consumer clusters were identified, and both exercise groups were found in all three clusters, although exercise frequency influenced membership in two of the three clusters (P < 0.05). These findings can be used to develop and market meal replacement products to specific consumer groups while leveraging their specific and unique needs.

PRACTICAL APPLICATIONS

Conjoint analysis provides a useful model of how consumers think during the purchase process and an understanding of the motivation for purchase through the testing of possible claims or product attributes. By applying this method to the purchase process of meal replacement bars and beverages, those in the field of development of these products can benefit from this information by being able to understand the motivation for purchase by the targeted consumer.  相似文献

Polysarcosine having sulfhydryl groups attached to both ends was synthesized by the NCA method and its air-oxidation was investigated in aqueous solution with cupric-ion or ferric-ion catalysts. Air-oxidation was also conducted for a polysarcosine having one terminal sulfhydryl group. The product of the air-oxidation was fractionated by gel chromatography. The product analysis of the fully oxidized monofunctional polymer showed that the sulfhydryl groups were converted into disulfide bonds exclusively. There was no evidence for the interchange between two disulfide linkages or between a disulfide linkage and a sulfhydryl group during the air-oxidation. The analysis of the products from the bifunctional polysarcosine showed that they were composed of a series of cyclic “monomer,” “dimer,” “trimer,” and higher “oligomers.” The cyclic structure was characterized by the larger elution volume in the gel chromatogram than that for a linear homologue having the same molecular weight. The weight fraction of each cyclic oligomer was determined by gel chromatography. The fraction of cyclic monomer F1 decreased monotonously with increasing the chain length. Smaller values of F1 were observed with cupric-ion catalyst than with ferric-ion catalyst. The dependence of F1 on the polymer concentration was much smaller than that expected from a simple competition mechanism between intra- and intermolecular reactions. These results indicate that the choice between intra- and intermolecular reactions is governed by the mode of the coordination of sulfhydryl groups to transition metal ions.  相似文献

Objectives:

Eating behaviors and obesity are complex phenotypes influenced by genes and the environment, but few studies have investigated the interaction of these two variables. The purpose of this study was to use a gene‐environment interaction model to test for differences in children's food acceptance and body weights.

Design and Methods:

Inherited ability to taste 6‐n‐propylthiouracil (PROP) was assessed as a marker of oral taste responsiveness. Food environment was classified as “healthy” or “unhealthy” based on proximity to outlets that sell fruits/vegetables and fast foods using Geographic Information Systems (GIS). The cohort consisted of 120 children, ages 4‐6 years, recruited from New York City over 2005‐2010. Home address and other demographic variables were reported by parents and PROP status, food acceptance, and anthropometrics were assessed in the laboratory. Based on a screening test, children were classified as PROP tasters or non‐tasters. Hierarchical linear models analysis of variance was performed to examine differences in food acceptance and body mass index (BMI) z‐scores as a function of PROP status, the food environment (“healthy” vs. “unhealthy”), and their interaction.

Results and Conclusion:

Results showed an interaction between taster status and the food environment on BMI z‐score and food acceptance. Non‐taster children living in healthy food environments had greater acceptance of vegetables than taster children living in healthy food environments (P ≤ 0.005). Moreover, non‐tasters from unhealthy food environments had higher BMI z‐scores than all other groups (P ≤ 0.005). Incorporating genetic markers of taste into studies that assess the built environment may improve the ability of these measures to predict risk for obesity and eating behaviors. Host resistance and parasite virulence are influenced by multiple interacting factors in complex natural communities. Yet, these interactive effects are seldom studied concurrently, resulting in poor understanding of host‐pathogen‐environment dynamics. Here, we investigated how the level of opportunist pathogen virulence, strength of host immunity and the host condition manipulated via diet affect the survival of wood tiger moth Parasemia plantaginis (Arctidae). Larvae from “low cuticular melanin” and “high cuticular melanin” (considered as low and high pathogen resistance, respectively) selection lines were infected with moderately and highly virulent bacteria strains of Serratia marcescens, while simultaneously manipulating host diet (with or without antibacterial compounds). We measured host survival and food preference before and after infection to test whether the larvae “self‐medicate” by choosing an anti‐infection diet (Plantago major, i.e., plantain leaf) over lettuce (Lactuca sativa). “High melanin” larvae were more resistant than “low melanin” larvae to the less virulent strain that had slower growth and colonization rate compared with the more virulent strain. Cuticular melanin did not enhance survival when the larvae were infected with the highly virulent strain. Anti‐infection diet enhanced survival of the “high melanin” but not the “low melanin” hosts. Survival was dependent on family origin even within the melanin selection lines. Despite the intrinsic preference for lettuce, no evidence of self‐medication was found. These results demonstrate that the relative benefit of host cuticular melanin depends on both diet and pathogen virulence: plantain diet only boosted the immunity of already resistant “high melanin” hosts, and cuticular melanin increased host survival only when infected with moderately virulent pathogen. Moreover, there was considerable variation in host survival between families within both melanin lines suggesting genetic basis for resistance. These results indicate that although melanin is an important predictor of insect immunity, its effect on disease outcomes greatly depends on other interacting factors.  相似文献

This study assessed the meaning of just‐about‐right (JAR) categories when used with a 5‐point intensity scale. The panelists comprised both consumer and in‐house respondents. The JAR categories have various meanings as perceived by the respondents: “prefer product,”“very good,”“I like the product,”“like it very much,”“highly favorable,”“high acceptability,”“desirable like the product,”“best for the situation” and “correct.” Thus, the JAR meanings invoke preference and acceptability. This article presents two additional analyses to help the product tested. One method of analysis divides below‐JAR deviation from the above‐JAR deviation, with standard statistical procedures applied in each data set. The second method introduces the signal‐to‐noise ratio statistic for analyzing the relation of JAR to overall liking. Both analytic methods provide new ways to look at the JAR data, especially with respect to hedonics and product improvement.  相似文献

The main purpose of this paper is to explore the opportunities for fresh Nostoc sphaeroides (N. sphaeroides) to be applied to 3D food printing. N. sphaeroides is rich in nutrients and its paste possesses shear thinning properties. It was found the product obtained by 3D food printing with fresh N. sphaeroides had poor printability and was easy to collapse. In this study, we compared the addition of different potato starch (2%, 4%, 6% and 8%) to the characteristics of 3D printing of the N. sphaeroides gel system. The results obtained from the rheological analysis showed that the 6% potato starch added to of N. sphaeroides gel can be utilized for 3D food printing. The addition of potato starch increased the viscosity of the mixture so the printed lines were not easily broken, and the “self-supporting ability” of the material itself was enhanced to maintain a good shape without collapse. Texture profile analysis also showed that the 6% starch added printed product had the best gumminess parameter. In order to get a better printed product, the effects of printing parameters (nozzle diameter (Dn), extrusion rate (Vd) and nozzle moving speed (Vn)) on material printing performance and product formability was tested. When Dn, Vd, Vn were = 1.2 mm, 20 mm3/s, 25 mm/s, respectively, the printed product was having similar to the target product, with less breakage and less the changing of shape. Overall results show that 3D printing technology is a rising method for producing N. sphaeroides-based new products.

We report the vegetative proliferation and new phenomenon of "secondary proliferated inflorescences" In the grass Ischaemum barbatum Retz, as determined by anatomical analysis of prepared sections of inflorescences. Leaves and shoots could be developed from the original splkelets of Inflorescences and plantlets developed when these shoots were transplanted to moist soil. "Secondary proliferated Inflorescences" is the first name here because some inflorescences that developed inadequacy are grown from the splkelet on the mother Inflorescence. Our investigation showed that this form of vegetative proliferation and secondary proliferated inflorescences development of L barbatum has arisen following late autumn fires of the previous year. It Is suggested that the sudden onset of a fire could lead to a hormone Imbalance or a chemical induction, which results in ephemeral vegetative proliferation even secondary proliferated inflorescences development in wild populations.  相似文献

The eco-footprint analysis of tourism is one of the most up-to-date and effective methods used to analyze the environmental effects of tourism. This study constructs a model to calculate the ecological footprint (EF) of tourism itinerary products by using a component approach, rudimentarily exploring the calculation methods for EF which target necklace-like tourism itinerary products and base tourist trips. By applying the model to calculate and analyze an “8-day tour of Shangri-La”, a typical tourism itinerary product, results of this study suggest that: (a) Tourism is a kind of life style with tremendous ecological consumption, that is, per capita EF that tourists produce in the course of travel is more than the one that local people produce in their daily life in tourist source areas, and it also exceeds the per capita EF that local people produce in their daily life in tourist destination; (b) According to the component approach, EF of tourism itinerary products is broken down into 7 components, among which “Transport”, “Food”, “Waste” and “Accommodation” play important roles; (c) There exist significant differences in ecological efficiency between different departments of tourism; the travel and entertainment sectors maintain a relatively high ecological efficiency, while the food and lodging departments have relatively low ecological efficiency.  相似文献

The Journal of Race Development [JRD], published out of Clark University in the United States between 1910 and 1919, aimed, in its founder's words, “to present … the important facts which bear upon race progress, and the different theories as to the methods by which developed peoples may most effectively aid the progress of the undeveloped”. Its basic premise was that scientific knowledge could harness racial or civilizational “evolution” and turn it into “development”. This article examines that project, the conceptual apparatus that the JRD's writers and editors brought to bear on it, and how racial ideas informed their conceptions of development and progressive social change through elite scientific and political intervention. Central to this project was an organic notion of “civilization” in which “nature” and “culture” did not so much overlap as flow seamlessly one into the other.  相似文献

Objective: To test the hypothesis that low‐income African‐American preschool children would have a higher BMI if their mothers reported greater “restriction” and “control” in feeding and if mothers reported that children showed greater “food responsiveness” and “desire to drink.” In addition, to test whether higher maternal “pressure to eat” would be associated with lower child BMI. Research Methods and Procedures: A questionnaire was completed by 296 low‐income African‐American mothers of preschool children. It assessed three constructs on maternal feeding strategies (“restriction,” “pressure to eat,” and “control”) and two on child eating behaviors (“food responsiveness” and “desire to drink”). Children's BMI was measured, and mothers’ BMI was self‐reported. Results: The mean (standard deviation) BMI z‐score of the children was 0.34 (1.5), and 44% of the mothers were obese (BMI ≥30 kg/m2). Only maternal “pressure to eat” had a significant overall association with child BMI z‐score (r = ?0.16, p < 0.01). Both maternal “restriction” and “control” were positively associated with children's BMI z‐score in the case of obese mothers (r = 0.20, p = 0.03 and r = 0.24, p = 0.007, respectively), but this was not so in the case of non‐obese mothers (r = ?0.16, p = 0.05 and r = ?0.07, p = 0.39, respectively). Discussion: Among low‐income African Americans, the positive association between maternal restriction and control in feeding and their preschoolers’ BMI was limited to obese mothers. Relations between parent feeding strategies and child weight status in this population may differ on the basis of maternal weight status.  相似文献

Since 1989, effects of biotic interactions including predation and herbivory have been examined in a replicated experimental study in a north‐central Chilean semiarid thorn scrub community. Strong responses of small mammals and plants to El Niño Southern Oscillations (ENSO) have also been documented suggesting that “bottom‐up” factors related to high rainfall are important. To simulate increased primary productivity effects on small mammals, ad lib rabbit pellet additions were initiated in mid‐1997 on unfenced grids near the experimental complex. Following the 1997 El Niño event with three times normal precipitation, numbers of small mammals during pre‐addition months and the first treatment year were similar on control and food addition grids. During the second year (1998–1999), a period of severe drought, food additions had significant positive effects on numbers of two predominantly herbivorous “core” (resident) species, Octodon degus and Phyllotis darwini, and an omnivorous “quasi‐core” (resident but highly fluctuating) species, Akodon olivaceus; however, all three species declined towards the end of the second treatment year. Two “opportunistic” (temporarily resident) species, Abrothrix longipilis (an insectivore) and Oligoryzomys longicaudatus (a granivore), showed no responses to food additions. An insectivorous marsupial, Thylamys elegans (also a “core species”), had significantly lower numbers on food addition grids. Changes in body weight distributions and proportions of reproductive individuals particularly in O. degus indicate in situ responses. Whereas no differences in residency, numbers of stations visited, and trappability were observed, energy compensation ratios greater than one suggest significant immigration in the second year. Thus, food additions elicited strong responses by herbivorous/omnivorous “core” and “quasi‐core species” whereas they had no effects on “opportunistic species”. These results reinforce the view that “bottom‐up” factors influencing food availability exert prevailing control on numerically important small mammal species by temporarily increasing carrying capacity, and that “top‐down” factors (i.e., biotic interactions) become important when small mammal numbers are at or near their carrying capacity. Spatial dynamics may be important in explaining declines of species populations exhibiting initially positive responses to food additions.  相似文献

银杏大蚕蛾Caligula japonica是亚洲东部的特有种, 既是一种重要的林业害虫, 也是一种珍贵的野生蚕类资源。为了揭示银杏大蚕蛾地理种群间的内在联系, 测定了我国分布的12个地理种群的线粒体细胞色素氧化酶C亚基I(COI)基因部分序列(GenBank登录号: FJ358506-FJ358517), 对地理种群间的序列变异和遗传分化进行了分析。结果表明: 银杏大蚕蛾地理种群间的COI序列同源性高达99%~100%, 显示出比较小的遗传差异。序列对准后从供试COI序列中仅鉴定出9个变异位点和6个单元型, 其中3种是共享单元型。系统发育分析结果表明种群间已经按地理位置形成了一定的地理格局, AMOVA分析显示北方组和南方组之间已经具有明显的遗传分化(FST=0.478, P<0.001)。综合分析, 我们认为北方组和南方组之间的遗传分化可能与差异巨大的生态条件有关。研究结果为银杏大蚕蛾的种群遗传学和生态学研究提供了一个基本的分子生物学线索。  相似文献

The effect of price information on hedonic and use intention responses to a chocolate bar was investigated in the absence and presence of a health claim related to energy, satiety value and cholesterol content. First, Finnish students (n = 79) tasted and rated blind three chocolate bars (one regular, two containing functional ingredients). Second, one group (“Informed,” n = 40) evaluated the samples with the health claim and price information, the other group (“Control,” n = 39) as a regular bar with price information only. A separate focus group (n = 6) interview was conducted to obtain further views of the claim and samples. Neither the health claim nor the price affected pleasantness ratings, while the increasing price significantly reduced the likelihood of buying and preferred frequency of eating the chocolate bar in both groups. Price affected the likelihood of buying more strongly among females than among males, and involvement with chocolate bars affected the likelihood of buying in the control, but not in the informed group. The focus group interview indicated that healthfulness might be irrelevant for chocolate products. Overall, price heavily affected the likelihood of buying the target product, but price and the health claim were incapable of altering hedonic responses to it.  相似文献

“Solid-substrate” fermentation developed in the Orient is a very useful fermentation method. It is presently used to produce a variety of foods, beverages and related products. Solid-substrate fermentation products utilizing fungi including soy sauce, miso and tempe, ontjom, sake, and bread have been produced for centuries at the home and village level. They are examples of economical methods of preserving and improving the flavor, texture and nutritive values of cereal/legume substrates. “Solid-substrate” fermentation is also applied to animal products such as milk to produce Roquefort and Camembert cheeses which diversify the food flavors available to man “Solid-substrate”fermentation has certain advantages. The substrate is concentrated; the product can be extracted with relatively small quantities of solvent; the product can be easily dehydrated; moisture level can be controlled favoring the desired organisms; enzyme concentration is generally higher than is submerged fermentation; product concentration is generally higher than in submerged cultures; it is the only technique that yields true mushroom fruiting bodies and it can be used not only for production of crude enzyme concentrates (koji) but also for raising the protein content of high starch substrates. It also can be used to increase the content of vitamins at low cost. Disadvantages of “solid-substrates”from the modern industrial processing view point are the greater difficulty of handling solid substrate and the greater difficulty of controlling the fermentation parameters, temperature, pH and oxygen, and rate of microbial growth compared with liquid submerged fermentations.  相似文献

Within-species variation in animal body size predicts major differences in life history, for example, in reproductive development, fecundity, and even longevity. Purely from an energetic perspective, large size could entail larger energy reserves, fuelling different life functions, such as reproduction and survival (the “energy reserve” hypothesis). Conversely, larger body size could demand more energy for maintenance, and larger individuals might do worse in reproduction and survival under resource shortage (the “energy demand” hypothesis). Disentangling these alternative hypotheses is difficult because large size often correlates with better resource availability during growth, which could mask direct effects of body size on fitness traits. Here, we used experimental body size manipulation in the freshwater cnidarian Hydra oligactis, coupled with manipulation of resource (food) availability to separate direct effects of body size from resource availability on fitness traits (sexual development time, fecundity, and survival). We found significant interaction between body size and food availability in sexual development time in both males and females, such that large individuals responded less strongly to variation in resource availability. These results are consistent with an energy reserve effect of large size in Hydra. Surprisingly, the response was different in males and females: small and starved females delayed their reproduction, while small and starved males developed reproductive organs faster. In case of fecundity and survival, both size and food availability had significant effects, but we detected no interaction between them. Our observations suggest that in Hydra, small individuals are sensitive to fluctuations in resource availability, but these small individuals are able to adjust their reproductive development to maintain fitness.  相似文献

In Europe, since the 1990s, food safety crises have heightened public concerns about and distrust towards the agro-food sector, making consumers wary of genetically modified (GM) foods. The application of gene technology to agricultural production has become a highly controversial scientific, political and social issue due to the uncertainty about the potential risks and benefits from GM food consumption. In this regard, public views influence consumers' demands and hence determine the future of this technology's development. Biotechnology proponents attribute the current consumer resistance to GM foods to the lack of tangible benefits for the consumers with higher functional properties. Thus, this paper estimates consumers' preferences regarding GM foods by simulating a market for GM functional cornflakes in southern Spain using the conjoint analysis method. Additionally, market segmentation was performed using a cluster analysis and the consumers' profile differences for each segment were identified. The main results indicate that consumers prefer the GM-free food; nonetheless, the market segmentation distinguishes a potential market niche for GM foods and indicates that businesses can develop strategies to target these segments. Therefore, the marketing strategies implemented in southern Spain should be focused on the health functional claims of second generation GM food.  相似文献
