类胡萝卜素 (Carotenoids)是一类重要的植物色素 ,在自然界中 ,广泛存在于各种植物中 ,在动物及微生物中也有发现。类胡萝卜素种类很多 ,其中包括人们所熟知的 α-胡萝卜素、β-胡萝卜素、番茄红素等。到目前为止 ,已经鉴定的类胡萝卜素分子共有 6 0 0多种 ,其中具有重要生物学功能的约有 50几种。类胡萝卜素是类异戊二烯化合物 ,由尾 -尾相连的2个二十碳单位构成四十碳的分子母体碳架 ,并从中衍生出许多不同的化合物。类胡萝卜素分子最显著的结构特征是分子中含有由不同数目的双键或单键的长链所构成的中央分子区域 ,形成 1个共轭体系。多…  相似文献

The carotenoid compositions of Phormidium persicinum, P. luridum, P. faveolarum and Anabaena flos-aquae have been studied, both quantitatively and qualitatively. β-Carotene is the major carotenoid in all species. The xanthophylls comprise zeaxanthin, echinenone, canthaxanthin and the furanoid mutatochrome. Phormidium persicinum lacks glycosidic carotenoids. Myxoxanthophyll (myxol-2′-rhamnoside) and a 4-ketomyxol-2′-methylpentoside (tentatively 4-keto-myxoxanthophyll) are present in the other species. These distribution patterns are compared with those observed in other blue-green algae and some correlations with taxonomy are apparent.  相似文献

In 1996, the first documented outbreak of salmonellosis associated with the consumption of peanut butter was reported. This study was undertaken to determine survival characteristics of high (5.68 log10 cfu g(-1)) and low (1.51 log10 cfu g(-1)) inocula of a five-serotype mixture of Salmonella in five commercial peanut butters and two commercial peanut butter spreads. Populations in samples inoculated with 5.68 log10 cfu g(-1) and stored for 24 weeks at 21 or 5 degrees C decreased 4.14-4.50 log10 cfu g(-1) and 2.86-4.28 log10 cfu g(-1), respectively, depending on the formulation. The order of retention of viability was: peanut butter spreads > traditional (regular) and reduced sugar, low-sodium peanut butters > natural peanut butter. Differences in rates of inactivation are attributed to variation in product composition as well as size and stability of water droplets in the colloidal matrix, which may influence nutrient availability. With the exception of natural peanut butter, products initially inoculated with 1.51 log10 cfu of Salmonella g(-1) (32 cfu g(-1)) were positive for the pathogen after storage for 24 weeks at 5 degrees C. At 21 degrees C, however, with the exception of one peanut butter spread, all products were negative for Salmonella after storage for 24 weeks. Post-process contamination of peanut butter and spreads with Salmonella may to result in survival in these products for the duration of their shelf life at 5 degrees C and possibly 21 degrees C, depending on the formulation.  相似文献

Carotenoids are isoprenoid molecules that are widespread in nature and are typically seen as pigments in fruits, flowers, birds and crustacea. Animals are unable to synthesise carotenoids de novo, and rely upon the diet as a source of these compounds. Over recent years there has been considerable interest in dietary carotenoids with respect to their potential in alleviating age-related diseases in humans. This attention has been mirrored by significant advances in cloning most of the carotenoid genes and in the genetic manipulation of crop plants with the intention of increasing levels in the diet. The aim of this article is to review our current understanding of carotenoid formation, to explain the perceived benefits of carotenoids in the diet and review the efforts that have been made to increase carotenoids in certain crop plants.  相似文献

The main carotenoid of Flavobacterium strain R1560 has been identified as (3R,3R)-zeaxanthin. Also present were small amounts of 15-cis-phytoene, phytofluene, -carotene (7,8,7,8-tetrahydro-, -carotene plus 7,8,11,12-tetrahydro-, -carotene), neurosporene, lycopene, -zeacarotene, -carotene, -carotene, -cryptoxanthin, rubixanthin, 3-hydroxy--zeacarotene and several apo-carotenals. Zeaxanthin production was inhibited by nicotine (10 mM), and lycopene and rubixanthin accumulated. The biosynthesis of zeaxanthin is discussed in terms of pathways and also of half-molecule reaction sequences. The presence of zeaxanthin may be a characteristic of a group of Flavobacterium species, and may thus be useful in the taxonomic classification of these organisms.  相似文献

Some of the exceptional compounds shown at the conference cannot be reproduced in this proceeding since they have not yet been published. The recent availability of laser pulses with 10-20 fs duration, tunable throughout the visible and near infrared wavelengths, has facilitated the investigation, with unprecedented temporal resolution, into the very early events of energy relaxation in carotenoids [Science 298 (2002) 2395; Synth. Metals 139 (2003) 893]. This has enabled us to clearly demonstrate the existence of an additional intermediate state, Sx, lying between the S2 (1(1)Bu+) and S1 (2(1)Ag-) states. In addition, by applying time-resolved stimulated Raman spectroscopy with femtosecond time resolution, it has also been shown that vibrational relaxation in electronic excited states plays an important role in these interconversions. In this mini-review, we describe briefly the current understanding of Sx and the other intermediate excited states that can be formed by relaxation from S2, mainly focusing attention on the above two topics. Emphasis is also placed on some of the major remaining unsolved issues in carotenoid photochemistry.  相似文献
