Geography and Similarity of Regional Cuisines in China   总被引:1,自引:0,他引:1  
Food occupies a central position in every culture and it is therefore of great interest to understand the evolution of food culture. The advent of the World Wide Web and online recipe repositories have begun to provide unprecedented opportunities for data-driven, quantitative study of food culture. Here we harness an online database documenting recipes from various Chinese regional cuisines and investigate the similarity of regional cuisines in terms of geography and climate. We find that geographical proximity, rather than climate proximity, is a crucial factor that determines the similarity of regional cuisines. We develop a model of regional cuisine evolution that provides helpful clues for understanding the evolution of cuisines and cultures.  相似文献

From Disgust to Desire: Changing Attitudes toward Beringian Mushrooms. Separated by national borders and the International Dateline, the native communities inhabiting the Bering Strait regions of Russia and Alaska share a common natural environment, myriad cultural similarities, and long-standing social ties. Their subsistence diets also are similar, except that wild mushrooms are revered on the Russian side of the Bering Strait (Chukotka) and are feared and avoided in Alaska. This paper explores the origins of this dietary difference and probes the social dimensions of food and cuisine with respect to the culinary utilization of wild mushrooms.  相似文献

Nations reverberate with the conundrums of unity and difference. Studies of food provide an effective way to understand this paradox as food indexes both rituals of the nation as national cuisine yet links with myriad and variable performances as it is grown, cooked and eaten. National foods enhance ethnic nationality in newly independent, increasingly authoritarian Uzbekistan where the focus is on national cuisine in part because of deprivation, rather than abundance. National cuisine is vulnerable to differences within a nation, because in the shared and embodied practices surrounding food, people make emotion-based evaluations of the nation-state. Uzbek governmental policies result in poverty, limited food production, little global food, and repression of pure Islamic practices, regions, and minority ethnic groups.  相似文献

Any national cuisine is a sum total of its variety of regional cuisines, which are the cultural and historical identifiers of their respective regions. India is home to a number of regional cuisines that showcase its culinary diversity. Here, we study recipes from eight different regional cuisines of India spanning various geographies and climates. We investigate the phenomenon of food pairing which examines compatibility of two ingredients in a recipe in terms of their shared flavor compounds. Food pairing was enumerated at the level of cuisine, recipes as well as ingredient pairs by quantifying flavor sharing between pairs of ingredients. Our results indicate that each regional cuisine follows negative food pairing pattern; more the extent of flavor sharing between two ingredients, lesser their co-occurrence in that cuisine. We find that frequency of ingredient usage is central in rendering the characteristic food pairing in each of these cuisines. Spice and dairy emerged as the most significant ingredient classes responsible for the biased pattern of food pairing. Interestingly while individual spices contribute to negative food pairing, dairy products on the other hand tend to deviate food pairing towards positive side. Our data analytical study highlighting statistical properties of the regional cuisines, brings out their culinary fingerprints that could be used to design algorithms for generating novel recipes and recipe recommender systems. It forms a basis for exploring possible causal connection between diet and health as well as prospection of therapeutic molecules from food ingredients. Our study also provides insights as to how big data can change the way we look at food.  相似文献

Increasingly more studies are raising concerns about the increasing consumption of meat and the increasing amount of crops (cereals and oilseeds in particular) used to feed animals and that could be used to feed people. The evolution of this amount is very sensitive to human diets and to the productivity of feed. This article provides a 2050 foresight on the necessary increase in crop production for food and feed in three contrasting scenarios: diets with no animal products; current diets in each main region of the world; and the average diet of developed countries extended to the whole world. We develop empirical aggregate production models for seven world regions, using 43 years and 150 countries. These models realistically account for the contribution of feed from food plants (i.e. plants that would be edible for humans) and of grassland to animal products. We find that the amount of edible crops necessary to feed livestock in 2050 is between 8% and 117% of today's need. The latter figure is lower than that in comparable foresight studies because our models take into account empirical features occurring at an aggregate level, such as the increasing share of animal production from regions using less crop product per unit of animal product. In particular, the expected increase in animal production is estimated to occur mostly in Sub-Saharan Africa and Asia, where the amount of feed from food crops required per unit of animal product proves to be lower than that in other areas. This 117% increase indicates that crop production would have to double if the whole world adopted the present diet of developed countries.  相似文献

The ecology of small rodent food selection is poorly understood, as mammalian herbivore food selection theory has mainly been developed by studying ungulates. Especially, the effect of food availability on food selection in natural habitats where a range of food items are available is unknown. We studied diets and selectivity of grey-sided voles (Myodes rufocanus) and tundra voles (Microtus oeconomus), key herbivores in European tundra ecosystems, using DNA metabarcoding, a novel method enabling taxonomically detailed diet studies. In order to cover the range of food availabilities present in the wild, we employed a large-scale study design for sampling data on food availability and vole diets. Both vole species had ingested a range of plant species and selected particularly forbs and grasses. Grey-sided voles also selected ericoid shrubs and tundra voles willows. Availability of a food item rarely affected its utilization directly, although seasonal changes of diets and selection suggest that these are positively correlated with availability. Moreover, diets and selectivity were affected by availability of alternative food items. These results show that the focal sub-arctic voles have diverse diets and flexible food preferences and rarely compensate low availability of a food item with increased searching effort. Diet diversity itself is likely to be an important trait and has previously been underrated owing to methodological constraints. We suggest that the roles of alternative food item availability and search time limitations for small rodent feeding ecology should be investigated.

We reared larvae of three generalist insect species on plants occurring in their habitats. Individuals of each species were kept either on mixed diets, or on each plant species separately. We measured food plant preference in the mixed-diet group and compared insect performance on single plants to the performance on the mixed diet. For all three insect species, food choice within the mixed-diet groups was non-random and delivered the best overall performance, thus fulfilling the criteria for self-selected diets. When a single diet was as good as the mixed diet for one particular aspect of performance (Adenostyles alliariae and Petasites albus for Miramella alpina; A. alliariae for Callimorpha dominula), it was never the most preferred food plant in the mixed-diet treatment. Whether the benefit achieved by mixing diets is due to nutrient complementation or toxin dilution, we argue that there is no easy way to distinguish between the two hypotheses on the basis of consumption and performance measurements, as has previously been proposed. From the interpretation of utilisation plots, the ANCOVA equivalent of nutritional indices, we were able to gain insight into where in the sequence from ingestion to growth (preingestive, predigestive or postdigestive) single diets caused differences from mixed diets. The elements of this control system which were influenced by single diets varied considerably, both within and between insect species. No food plant was toxic or deterrent to all experimental insect species; a food plant that caused consumption effects (preingestive) for one insect species could be dealt with metabolically (postdigestive) by another; different food plants could cause behavioural effects (preingestive), metabolic effects (postdigestive), or a combination of both effects, all within the same insect species. However, one generality did emerge: once a food was ingested, further growth-relevant effects occurred metabolically (postdigestive) rather than via differential egestion (digestibility). Here we present evidence of phytoliths preserved in carbonised food deposits on prehistoric pottery from the western Baltic dating from 6,100 cal BP to 5750 cal BP. Based on comparisons to over 120 European and Asian species, our observations are consistent with phytolith morphologies observed in modern garlic mustard seed (Alliaria petiolata (M. Bieb) Cavara & Grande). As this seed has a strong flavour, little nutritional value, and the phytoliths are found in pots along with terrestrial and marine animal residues, these findings are the first direct evidence for the spicing of food in European prehistoric cuisine. Our evidence suggests a much greater antiquity to the spicing of foods than is evident from the macrofossil record, and challenges the view that plants were exploited by hunter-gatherers and early agriculturalists solely for energy requirements, rather than taste.  相似文献

Mice allowed to choose between diets containing tannin or saponin did not experience food intake depression, weight loss or high faeces weight to food weight ratios. Diets containing tannin produced all these effects and saponin diets resulted in weight losses and high faeces to food ratios. Mice provided with diets containing both tannin and saponin in predetermined proportions experienced weight losses similar to, or greater than, those of mice fed diets containing either toxin alone. Urinary glucuronide production by mice provided with a choice of tannin and saponin diets was less than that of mice feeding on diets containing either tannin or saponin alone. Simultaneous consumption of tannin and saponin (in the right proportions) may promote chemical interactions that inhibit the toxins' absorption from the intestinal tract. This type of interaction is likely to have influenced the evolution of herbivore feeding behaviour.  相似文献

Feeding specializations such as herbivory are an often cited example of convergent and adaptive evolution. However, some groups such as lizards appear constrained in the evolution of morphological specializations associated with specialized diets. Here we examine whether the inclusion of plant matter into the diet of omnivorous lacertid lizards has resulted in morphological specializations and whether these specializations reflect biomechanical compromises as expected if omnivores are constrained by functional trade-offs. We examined external head shape, skull shape, tooth structure, intestinal tract length and bite performance as previous studies have suggested correlations between the inclusion of plants into the diet and these traits. Our data show that omnivorous lacertid lizards possess modifications of these traits that allow them to successfully exploit plant material as a food source. Conversely, few indications of a compromise phenotype could be detected, suggesting that the evolution towards herbivory is only mildly constrained by functional trade-offs.  相似文献

1. Species diversities of some insect lineages have been attributed to differentiation of feeding habits among species. Our objective was to determine variation in diet composition among harpaline ground beetle species occurring in a riverside grassland. 2. We examined the diet compositions of 14 species from six genera in the spring and 10 species from two genera in the autumn. We performed measurements of nitrogen and carbon stable isotope ratios in consumers and in their potential food items, and estimated relative contributions of different food items with two mixing models, IsoSource and MixSIR. 3. IsoSource and MixSIR software gave similar results, but IsoSource tended to calculate higher contributions of principal food items and smaller percentile ranges than MixSIR. Among harparine beetle species, there were diverse food utilisation patterns among four food categories (detritivorous invertebrates, herbivorous invertebrates, C3 plants, and C4 plants). Detritivores comprised the main diets of abundant harpaline species in the spring, whereas abundant harpaline species in the autumn were primarily herbivores feeding on C4 plants, or omnivores feeding on herbivorous invertebrates and C3 plants. Seasonal changes in food use were related to seasonal changes in the abundance of each food resource. 4. Mixing model analysis of stable isotope ratios is a convenient and effective method for roughly estimating diets of many species with diverse food habits (such as ground beetles). This method can contribute to determining the trophic relationships of related insects in one ecosystem.  相似文献

Summary Overlap in the diets of 14 species of grasshoppers on mixed-grass prairie in northeastern Colorado was estimated by microscopic examination of crop contents. Food availability estimates, taken by a weight-estimate method, facilitated the determination of food preferences. Two cases of high overlap in diets and period of habitat occupancy occurred between species which consumed equal or almost equal numbers of different foods (foodniche breadth) and had almost identical foraging behavior. The first case occurred early in the season between Xanthippus corallipes and Arphia conspersa with foodniche breadths of 14 and 11, respectively. The second case occurred later in the season between Amphitornus coloradus and Trachyrhachys kiowa both of which have foodniche breadths of 6. The amount of movement between plants while feeding was equal or almost equal in both cases, thus we observed high dietary overlap between species with equal ecological efficiencies. Dietary overlap between the 14 grasshopper species decreased as foodniche dimensions increased and the grasshopper population as a whole utilized each food resource approximately proportional to its relative abundance. Factors influencing the interpretation and importance of dietary overlap in this study included 1. non-synchronous life cycles, 2. seasonal changes in diets and food preferences, 3. complexity of the food resources, 4. variations in foodniche dimensions among grasshopper species, and 5. variations in diets between males and females within a species. Our findings agree with MacArthur and Levins theory that the number of competing species which can coexist is proportional to the total range of the environment divided by the niche breadth of the species.  相似文献

For many animals, notably herbivores, plants are often an inadequate food source given the low content of protein and high content of C-rich material. This conception is mainly based on studies on ectotherms. The validity of this conception for endotherms is unclear given their much higher carbon requirements for maintenance energy metabolism than ectotherms. Applying stoichiometric principles, we hypothesized that endotherms can cope with diets with much higher (metabolizable) carbon to nitrogen ratios than ectotherms. Using empirical data on birds, eutherian mammals, marsupials and reptiles, we compiled and compared measurements and allometric equations for energy metabolism as well as nitrogen requirements. Our analysis supports our hypothesis that plants, and especially their leaves, are generally sufficiently rich in nitrogen to fulfil protein demands in endotherms, at least during maintenance conditions, but less so in ectotherms. This has important implications with respect to community functioning and the evolution of endothermy.  相似文献

We show how evolutionary dynamics can alter the predictions of classical models of the effects of nutrient enrichment on food webs. We compare an ecological nutrient-plant-herbivore food-chain model without evolution with the same model, including herbivore evolution, plant evolution, or both. When only herbivores are allowed to evolve, the predictions are similar to those of the ecological model without evolution, i.e., plant biomass does not change with nutrient addition. When only plants evolve, nutrient enrichment leads to an increase in the biomass of all compartments. In contrast, when plants and herbivores are allowed to coevolve, although these two classical patterns are common, a wide variety of other responses is possible. The form of the trade-offs that constrain evolution of the two protagonists is then critical. This stresses the need for experimental data on phenotypic traits, their costs and their influence on the interactions between organisms and the rest of the community.  相似文献

While trying to achieve their nutritional requirements, foraging herbivores face the costs of plant defenses, such as toxins. Teasing apart the costs and benefits of various chemical constituents in plants is difficult because their chemical defenses and nutrient concentrations often co-vary. We used an approach derived from predator–prey studies to quantitatively compare the foraging response of a free-ranging mammalian herbivore, the swamp wallaby (Wallabia bicolor), through three feeding trials with artificial diets that differed in their concentrations of (1) the terpene 1,8-cineole, (2) primary constituents (including nitrogen and fiber), and (3) both the terpene and the primary constituents. Applying the giving-up density (GUD) framework, we demonstrated that the foraging cost of food patches increases with higher dietary cineole concentration and decreases with higher dietary nutrient concentration. The effect of combined differences in nutrients and cineole concentrations on GUD was interactive, and high nutrient food required more cineole to achieve the same patch value as low nutrient food. Our results indicate that swamp wallabies equate low nutrient, poorly defended food with high nutrient, highly defended food, providing two contrasting diets with similar cost–benefit outcomes. This behavior suggests that equal concentrations of chemical defenses provide nutrient-poor plants with relatively greater protection as nutrient-rich plants. Nutrient-rich plants may therefore face the exacerbated problem of being preferred by herbivores and therefore need to produce more defense compounds to achieve the same level of defense as nutrient-poor plants. Our findings help explain the difference in anti-herbivore strategy of nutrient-poor and rich plants, i.e., tolerance versus defense.  相似文献

We used genetic and stable isotope analysis of hair from free-ranging black bears (Ursus americanus) in Yosemite National Park, California, USA to: 1) identify bears that consume human food, 2) estimate the diets of these bears, and 3) evaluate the Yosemite human–bear management program. Specifically, we analyzed the isotopic composition of hair from bears known a priori to be food-conditioned or non-food-conditioned and used these data to predict whether bears with an unknown management status were food-conditioned (FC) or non-food-conditioned (NFC). We used a stable isotope mixing model to estimate the proportional contribution of natural foods (plants and animals) versus human food in the diets of FC bears. We then used results from both analyses to evaluate proactive (population-level) and reactive (individual-level) human–bear management, and discussed new metrics to evaluate the overall human–bear management program in Yosemite. Our results indicated that 19 out of 145 (13%) unknown bears sampled from 2005 to 2007 were food-conditioned. The proportion of human food in the diets of known FC bears likely declined from 2001–2003 to 2005–2007, suggesting proactive management was successful in reducing the amount of human food available to bears. In contrast, reactive management was not successful in changing the management status of known FC bears to NFC bears, or in reducing the contribution of human food to the diets of FC bears. Nine known FC bears were recaptured on 14 occasions from 2001 to 2007; all bears were classified as FC during subsequent recaptures, and human–bear management did not reduce the amount of human food in the diets of FC bears. Based on our results, we suggest Yosemite continue implementing proactive human–bear management, reevaluate reactive management, and consider removing problem bears (those involved in repeated bear incidents) from the population. © 2012 The Wildlife Society.  相似文献

2006年11月-2007年12月,对云南云龙县龙马山滇金丝猴(Rhinopithecus bieti)冬季食性进行了研究.采用粪便显微组织学分析技术分析龙马山滇金丝猴冬季采食植物的种类组成和比例,并测定了该猴群主要取食的15种植物(包括两种松萝科植物)(取食食物百分比>1%)和次要取食的10种植物(取食食物百分比<1%)的化学成分.研究结果表明,龙马山滇金丝猴冬季取食的植物共计26科45种,其中云龙箭竹、长松萝、花松萝、实竹、空心箭竹分别占19.78%、10.28%、8.37%、4.93%、4.46%,是滇金丝猴冬季主要取食的植物种类,占取食植物的47.99%.木本植物和草本植物的叶是滇金丝猴的主要食物,在冬季食物中所占百分比最高,达75%.冬季滇金丝猴比较喜欢采食P/F值较高、单宁含量较低的食物,其主要食物比次要食物含有较高的P/F值和较低的单宁(P<0.05).  相似文献
