The suitability of stevioside as a sweetener in peach juice was investigated. Comparison between stevioside and sucrose in terms of sweetness, sweet and bitter aftertastes were determined both in water and peach juice. The results demonstrated that 160 mg/L of stevioside may replace 34 g/L of sucrose in juice, with a 25% decrease in calories, without affecting the sensory characteristics of the product. Synergistic and inhibitory effects between sucrose and stevioside were also monitored at different stevioside concentration. A new juice formulation sweetened with a binary mixture of stevioside (160 mg/L) and sucrose (56 g/L) was not significantly different in terms of desirability from a reference product sweetened with 9% sucrose.  相似文献

Physical activity induces changes in the endocrine system. Previous data indicated that changes in insulin secretion and the tissue response to this hormone are very important for energy metabolism. It is believed that they are accompanied by changes in lipid metabolism, but factors contributing to this process are still disputed. The aim of this study was to assess interactions among insulin sensitivity, thyroid function, a bone turnover marker and serum lipid profile in young physically active men. Eighty-seven physical education students, aged 18-23 years, participated in the study. We measured serum levels of glucose, lipids, insulin, thyroid-stimulating hormone (TSH), osteocalcin and anthropometric parameters. Insulin sensitivity was determined using homeostatic model assessment for insulin resistance (HOMA-IR). The median value of HOMA-IR (1.344) was used to divide the study population into Group A (above the median) and Group B (below the median). Men from both groups did not differ in anthropometric parameters or in daily physical activity. Triglycerides (TG), total cholesterol (TC) and high-density lipoprotein cholesterol (HDL-C) levels were higher in Group A (P < 0.05). TSH and osteocalcin levels were similar in males with different HOMA-IR. Multiple regression analysis for TSH and osteocalcin showed that in Group A these hormones had no effect on plasma lipoproteins. However, in Group B they significantly determined the variation of plasma TC and low-density lipoprotein cholesterol (LDL-C) levels (in about 28% and 29%, respectively). We concluded that TSH and osteocalcin are involved in determination of a more healthy lipid profile at a certain level of insulin sensitivity.  相似文献

Amer. Jour. Bot. 48(2): 154–159. Illus. 1961.—Gametophytes grow rapidly under the highest intensity white fluorescent light used, 400 ft.-c. Growth is correspondingly less at 220 and 28 ft.-c., and at the lowest light intensity the gametophytes are markedly longer than wide. One percent sucrose added to the medium reverses the growth limitation imposed by low light intensity and produces a morphology comparable to that found under higher intensities. Sucrose does not sustain heterotrophic growth in total darkness, but permits growth if the gametophytes are given low dosages of red light. The differential sensitivity to sucrose or Aspartame in water was studied over the course of 90 min sessions, using a sequential method. The assessors had not eaten since 9 a.m. and the sessions began at 12 noon. Two factors were studied: water ingestion and solid sucrose ingestion every 5 min. The ingestion of water had no effect on discriminative sensitivity. However, the ingestion of solid sucrose had an effect; it maintained discriminant ability in contrast to the protocol without ingestion. The reason for this effect of sucrose is not known; it might be metabolic, hedonic or perhaps something else.  相似文献

Sections from both dark- and light-grown seedlings of 11 species were used to test responses to IAA (indoleacetic acid), sucrose, and an inhibitor prepared from cabbage seedlings. Variability among species was great; however, results indicate that many species, light-grown as well as dark-grown, could prove useful in bioassays and probably should be investigated. Although elongation of segments from high-intensity-light-grown cabbage and cucumber hypocotyls and oat coleoptiles had essentially stopped by the time of cutting, their growth and response to IAA as sections were considerable. Neither oat coleoptile nor pea internode sections can be considered representative because of differences in responses to sucrose, of dark-grown sections to light, and to an inhibitor prepared from cabbage. Sucrose generally did not stimulate and even inhibited response of most hypocotyls to IAA. Sucrose was absorbed by sections, increasing final dry weight while not affecting elongation. Sucrose reduced the rate of respiratory decay in cabbage and sunflower, but IAA did not affect respiration. Changes in length and fresh weight of cucumber hypocotyl sections were comparable.  相似文献

油菜花蜜腺由2枚侧蜜腺和2枝中蜜腺组成,其基本结构类似。在蜜腺发育过程中,产蜜组织细胞内的内质网、高尔基体、质体和线粒体以及液泡都发生有规律变化。泌蜜前,细胞器的数量增加。其中,质体内积累淀粉,此过程与蜜腺内初皮部的分化并和线粒体的增加相关。泌蜜时,内质网数量增多,并产生小泡.小泡向质膜移动。泌蜜后,细胞液泡化,细胞器数量减少,细胞萎缩。根据观察结果分析,其原蜜汁来源于韧皮部,转运至产蜜组织细胞的质体、内质网和高尔基体内加工成蜜汁,最后通过胞吐和渗透相结合的方式泌出。  相似文献

The aim of this work was to set up the sensory profile and consumer preference test of three different Mozzarella cheeses (from full-fat cow milk, from low-fat cow milk and from full-fat water buffalo milk). The most remarkable difference in composition was the fat content. Nine commercial Mozzarella cheeses (three for each type) were evaluated in triplicate by a trained panel consisting of 10 assessors. Six Mozzarella cheeses (two for each type) out of the nine samples were selected and used for the preference test by 105 consumers. The three different Mozzarella cheeses were sensorially well differentiated. A good discrimination between the Mozzarella cheeses was obtained using the internal preference map method. The combination of cluster analysis and internal preference mapping has lead to a deeper understanding of consumer liking for Mozzarella cheeses.  相似文献

比较了四组乙型肝炎血源疫苗不同剂量和不同免疫途径的免疫效果。每组对象为6~7岁儿童30~50人。每人三剂疫苗,程序为 0、1和6个月。其中10μg肝注组免疫三针后1个月和3年,抗HBs阳住率均为100%;而3μg肌注组仅为78%和40%;5μg肌注组和3μg皮内接种组的抗-HBs阳性率在89%~100%之问。免疫后18个月做抗-HBs相对定量,各组mIU/ml的GMT由高到低依次为10μg肌注组、3μg皮内组、5μg肌注组和3μg肌注组。由此可见,对学龄前HBV标志阴性的儿童进行免疫,在各组中以10μg疫苗肌注效果最佳,而3μg肌注无实用价值。如考虑到疫苗费用,则5μg肌注或3μg皮内注射也不失为可取的方法。  相似文献

TEMPORAL STUDY OF SUCROSE AND FRUCTOSE RELATIVE SWEETNESS   总被引:2,自引:0,他引:2  
Time-Intensity (T-I) and Gustatory Reaction Time (GRT) methodologies were used to study the relative sweetness of sucrose and fructose at 25C. Eleven panelists evaluated nine concentrations (5 to 45%, w/v) of sucrose and fructose by T-I and seven parameters were determined. Higher values were obtained for fructose at 25, 30 and 35% for Maximum Intensity; at 35, 40 and 45% for the Area Under the Curve; at 40 and 45% for Time to decline the Intensity to half of its maximum value and at 45% for Rate of Increase. Ten subjects evaluated seven concentrations (3 to 15%, w/v) of sucrose and fructose by the GRT procedure. Fructose had shorter GRT than sucrose at 3 and 4.5%. Thus, fructose at 25, 30 and 35%, has a more intense and at 40% more persistent sweetness than sucrose and is detected earlier than sucrose at concentrations near gustatory threshold.  相似文献
