Since consumers are showing increased interest in the origin and method of production of their food, it is important to be able to authenticate dietary history of animals by rapid and robust methods used in the ruminant products. Promising breakthroughs have been made in the use of spectroscopic methods on fat to discriminate pasture-fed and concentrate-fed lambs. However, questions remained on their discriminatory ability in more complex feeding conditions, such as concentrate-finishing after pasture-feeding. We compared the ability of visible reflectance spectroscopy (Vis RS, wavelength range: 400 to 700 nm) with that of visible-near-infrared reflectance spectroscopy (Vis-NIR RS, wavelength range: 400 to 2500 nm) to differentiate between carcasses of lambs reared with three feeding regimes, using partial least square discriminant analysis (PLS-DA) as a classification method. The sample set comprised perirenal fat of Romane male lambs fattened at pasture (P, n=69), stall-fattened indoors on commercial concentrate and straw (S, n=55) and finished indoors with concentrate and straw for 28 days after pasture-feeding (PS, n=65). The overall correct classification rate was better for Vis-NIR RS than for Vis RS (99.0% v. 95.1%, P<0.05). Vis-NIR RS allowed a correct classification rate of 98.6%, 100.0% and 98.5% for P, S and PS lambs, respectively, whereas Vis RS allowed a correct classification rate of 98.6%, 94.5% and 92.3% for P, S and PS lambs, respectively. This study suggests the likely implication of molecules absorbing light in the non-visible part of the Vis-NIR spectra (possibly fatty acids), together with carotenoid and haem pigments, in the discrimination of the three feeding regimes.  相似文献

The ability to authenticate the feed given to animals from the animal products has become a major challenge for scientists, monitoring bodies and commercial entities alike. This study compared two methods based on the use of the visible reflectance spectrum of the fat to discriminate pasture-fed (P) from stall concentrate-fed (S) lamb carcasses. A total of 307 (143 P and 164 S) Limousine lambs were used over 2 years. Pasture-fed lambs grazed a permanent pasture that was maintained at a leafy, green vegetative stage, and offered ad libitum; they received no supplementation at pasture. Body weight of P lambs when turning out to pasture and at slaughter averaged 9.2 (standard deviation (s.d.) 2.21) kg and 33.2 (s.d. 2.89) kg, respectively. S lambs were fed indoors on an ad libitum diet of commercial concentrate and hay until slaughter at a mean body weight of 33.7 (s.d. 3.62) kg. The reflectance spectrum of perirenal and subcutaneous caudal fat was measured at slaughter and at 24 h post mortem. Plasma carotenoid concentration was measured at slaughter. In method 1, the fat reflectance spectrum data were used at wavelengths between 450 and 510 nm to calculate an index quantifying light absorption by carotenoid pigments. In method 2, a multivariate analysis was performed over the full set of fat reflectance data at wavelengths between 400 and 700 nm. Method 2 yielded a higher proportion of correctly classified lambs compared with method 1 (P < 0.05 to 0.001), except for measurements made at 24 h post mortem on perirenal fat for S lambs. The proportion of lambs correctly classified using method 2 was 87.4% and 92.9% for measurements made on perirenal and caudal fat at slaughter, and 93.9% and 91.0% for measurements made on perirenal and caudal fat 24 h post mortem. Plasma carotenoid concentrations were higher in P lambs than in S lambs (P < 0.001), which led to correct classification of 90.7% of the lambs.  相似文献

Considering the additional market value of pasture meat, many authentication methods were developed to discriminate it from meat produced in conventional systems. The visible reflectance spectroscopy technique has proved its efficiency under European conditions and breeds. The present study tested the reliability of this method to discriminate between pasture-fed (P) and stall-fed (S) lambs under North African conditions and investigated the effect of feeding system (FS) (P v. S) and breed (Barbarine; Queue Fine de l’Ouest; and Noire de Thibar) on weight and colour of perirenal, subcutaneous and caudal fat. A total of 18 P and 18 S lambs were used with 6 P and 6 S lambs for each breed. The colour and the reflectance spectrum of different fat tissues were measured. The FS affected weights of all fat tissues and all colour parameters of perirenal and subcutaneous fat (P ≤ 0.01); it almost affected redness and yellowness of caudal fat (P ≤ 0.05; P ≤ 0.01). In all adipose tissues, lightness was higher and both redness and yellowness were lower for S lambs than P lambs. The breed affected weight, lightness and redness of perirenal fat and weight and redness of subcutaneous fat with significant interaction with FS for subcutaneous fat data. To discriminate P lambs from S lambs, the reflectance spectrum of perirenal, subcutaneous and caudal fat at wavelengths between 450 and 510 nm (Method 1, M1) or at wavelengths between 400 and 700 nm using partial least squares discriminative analysis as a classification method (Method 2, M2) were used. M2 yielded to a higher proportion of correctly classified lambs compared with M1 (P = 0.001). The proportion of correctly classified lambs using M2 was 76.4, 75.0 and 80.0% for perirenal, subcutaneous and caudal fat for P lambs and 83.3, 76.4 and 100.0% for S lambs. Despite lower reliability in comparisons to European researches, this study confirmed the efficiency of visible reflectance spectroscopy technique applied on perirenal fat in feeding systems authentication under North African conditions and spotted the caudal fat as a new support for better classification of fat-tailed breeds.  相似文献

Excessive flavour in lamb meat is undesirable for consumers and can prompt purchase resistance. Volatile indoles responsible for off-flavours accumulate more in the fat of lambs on pasture than on grain and are enhanced when lambs graze alfalfa. Here, we investigated whether barley supplementation of lambs grazing alfalfa influences meat sensory quality. Using three groups of 12 male Romane lambs, we compared three feeding regimes: alfalfa grazing (AG), alfalfa grazing + daily supplementation with barley (29 g/kg live weight0.75, AGS) and stall feeding with concentrate and hay (SF). As some of the compounds involved in meat sensory traits may act as dietary biomarkers, we also investigated potential implications for meat authentication. Although barley represented 38% of the diet in AGS lambs, it did not offer any advantage for animal average daily gain or parasitism level. Animal performance, carcass weight and fatness did not differ between feeding regimes. Dorsal fat firmness tended to be greater in AG than AGS and greater in AGS than SF. Skatole and indole concentrations in perirenal and dorsal fat were lower in SF lambs than in AG and AGS lambs (P<0.01 to P<0.0001), but did not differ between AG and AGS lambs. Yellowness, chroma and hue angle of perirenal fat were lower in SF lambs than in AG and AGS lambs (P<0.001), but did not differ between AG and AGS lambs. Absolute value of the mean integral for both perirenal fat and subcutaneous caudal fat (AVMIPF and AVMISC), quantifying the intensity of light absorption by carotenoids in perirenal and subcutaneous caudal fat, respectively, were lower in SF lambs than in AG and AGS lambs (P<0.0001 for both comparisons), but did not differ between AG and AGS lambs. Meat colour was unaffected by the treatment. We confirm that lambs grazing alfalfa accumulate high levels of volatile indoles in their fat, but we show that barley supplementation to lambs grazing alfalfa is not effective in reducing fat volatile indoles concentration and excessive odour/flavour in the meat. We also confirm that both perirenal fat skatole concentration and AVMIPF are of interest for discriminating lambs that grazed alfalfa from lambs that were stall-fed, and we show that they are not effective for discriminating supplemented from non-supplemented grazing lambs.  相似文献

Lambs grazing alfalfa or white clover are prone to flavour taint which can be an impediment to consumer acceptance. Here we investigated whether condensed tannin (CT)-rich sainfoin pellet supplementation of lambs grazing alfalfa influences meat sensory quality. Using three groups of 18 male Romane weaned lambs, we compared three feeding regimes: alfalfa grazing (AF), alfalfa grazing + daily supplementation with CT-rich sainfoin pellets (15 g dry matter (DM)/kg live weight, AS) and stall feeding with concentrate and grass hay indoors (SI). We also investigated the potential interest of sainfoin pellet supplementation for controlling digestive parasitism. The sainfoin pellets contained 42 g of CT/kg of DM and they represented on average 36% of the diet in AS lambs. Skatole and indole were detected in most of the AF and AS lambs, whereas in very few SI lambs. Skatole and indole concentrations in perirenal and dorsal fat were lower in the AS lambs than the AF lambs (P < 0.025 to P < 0.001), but the intensity of ‘animal’ odour and ‘animal’ flavour of the chops did not differ between both forage-grazing groups. Longissimus thoracis et lumborum muscle lightness was lower in the AF and AS lambs than the SI lambs (P < 0.001) with the other muscle colour coordinates being unaffected by the treatment and between-treatment group differences in muscle colour coordinates remaining constant throughout the 9-day display period. Subcutaneous fat colour coordinates were not influenced by the treatment. The number of individual anthelmintic drenches necessary to keep nematode faecal egg count below a threshold of 550 eggs/g of faeces was lower in the AS than the AF lambs (0.94 per lamb v. 1.63 per lamb; P < 0.001). Faecal oocyst count was lower in the AS than the AF lambs for the first measurement made 56 days after the beginning of the experiment (P < 0.001) and was not significantly different between both forage-grazing groups thereafter. The use of CT-rich sainfoin pellets to supplement lambs that are concurrently grazing alfalfa reduced fat volatile skatole and indole concentrations and delayed the onset of both helminth and coccidian infections.  相似文献

The development of analytical methods to verify the production system of meat products requires the identification of biomarkers that can trace the product's origin, and secondly the factors that govern the deposition of these markers in animal tissue need to be defined. In this study, 2,3-octanedione, skatole and terpenes were selected as biomarkers, and their deposition was investigated in bull calves reared under three different strategies. All of the animals were reared indoors until approximately 150 days of age. They were suckled twice a day by their mothers, and both calves and cows had free access to cocksfoot hay. Then the first two groups of animals were kept indoors, suckled by their mothers twice a day and received either cocksfoot hay (HL) or freshly cut-green herbage (GL) and a limited quantity of concentrate. The third group of calves (PH) was kept on pasture with their mothers and offered concentrate ad libitum. The pasture supporting the PH animals was highly diversified, containing several terpene-rich plant species, whereas the herbage for the GL animals contained no species known to be aromatic. Perirenal and subcutaneous adipose tissues were analysed for volatile compounds. The perirenal fat was found to be more responsive to the treatment and a more reliable substrate than the subcutaneous adipose tissue. Higher levels of 2,3-octanedione (P < 0.05) were found in PH and GL than in HL fat (6.56, 6.51 and 5.77 area arbitrary units, respectively, in perirenal fat), confirming the ability of this molecule to trace green herbage feeding. Skatole was detected in the perirenal and subcutaneous fat of all the animals. Animals receiving high concentrate level (PH group) presented lower (P < 0.05) skatole values (5.83 area arbitrary units in perirenal fat) than animals receiving low concentrate level (HL and GL groups, 6.23 and 6.71 area arbitrary units, respectively, in perirenal fat). Terpenoids, and especially sesquiterpenes, were found at higher levels and diversities in the PH than in the GL and HL animals. Two monoterpenoids allowed group discrimination considering perirenal or subcutaneous fat without distinction, whereas 11 and 5 sesquiterpenoids from perirenal and subcutaneous fat, respectively, allowed it.  相似文献

The 'Organic' product label guarantees a production process that avoids the use of synthetic fertilisers, pesticides and hormones and minimises recourse to pharmaceuticals or veterinary drugs; however, the product's quality remains an issue that needs to be addressed in response to consumer demand. Consequently, this study was conducted to compare the sensory and nutritional qualities of meat and carcasses from pasture-fed lambs reared organically (O) or conventionally (C). Mean lamb growth profile was kept similar between the two treatments to avoid confounding effects with lamb age or weight at slaughter. The experiment was conducted over 3 years (2005 to 2007) with 12 O and 12 C lambs each year. The O and C treatments differed in the level of on-pasture mineral N fertilisation inducing a higher proportion of white clover in the organic pasture than the conventional pasture. Lambs were slaughtered when they attained a fat class of 2 to 3, and carcass and meat quality were evaluated. Lambs were slaughtered at an average weight and age of 35.3 kg and 156 days in the O treatment, respectively, and 35.2 kg and 155 days in the C treatment, respectively. Sensory evaluation indicated that loin chops from the O treatment had a higher level of abnormal fat odour compared with the C treatment. Carcasses from the O treatment had a softer subcutaneous fat one among 3 years (2007) compared to the C treatment. These results are probably due to a higher proportion of white clover in the diet. Organically reared lambs did offer the slight advantage of muscle fatty acid containing a higher level of stearic acid, which may have positive effects in the prevention of cardiovascular disease in humans. This may be the result of a higher rumen bio-hydrogenation of C18:3n-3 due to differences in the botanical composition between the O and the C pasture. Production system had no effect on the colour characteristics of the meat and subcutaneous fat, except lightness of subcutaneous dorsal fat, which was slightly higher in the O lambs. There were no differences between O and C lambs in terms of colour stability and lipid oxidation of the meat during the 6-day refrigerated storage under gas-permeable film.  相似文献

Pasture-feeding in lambs has been associated with dark-coloured meat and high meat contents of volatile indoles (skatole and indole), which may be responsible for sensory defects. The risk of off-flavours is even higher when lambs graze alfalfa, because it is particularly rich in rapidly degradable proteins. Here, we investigated whether a short concentrate stall-finishing period in lambs that previously grazed alfalfa influences meat sensory quality traits. We compared three feeding treatments, using three groups of 10 male Romane lambs: grazing alfalfa (A), stall-feeding with concentrate and straw (S), and stall-finishing with concentrate and straw for 21 days after previously grazing alfalfa (AS). During stall-feeding, the concentrate was given at a level adjusted to achieve a similar growth pattern in all treatment groups, and the length of the trough was sufficient for all lambs to have access to the feeds at the same time. Lamb live weight and age at slaughter, and carcass conformation and fatness were similar for all treatment groups. Perirenal fat skatole content was lower in AS and S lambs than in A lambs (P < 0.001 and P < 0.05, respectively), and not significantly different between AS and S lambs. Perirenal fat indole and dorsal fat skatole concentrations were lower in AS lambs than in A lambs (P < 0.05 and P < 0.005, respectively), the other pairwise comparisons being not significant. There was no treatment effect on dorsal fat indole content. Longissimus et lumborum muscle colour coordinates differed between pasture-fed and stall-fed lambs, with a lower lightness (P < 0.005) and greater redness and hue angle (P < 0.001 and P < 0.01, respectively) in pasture-fed lambs, but muscle colour coordinates did not differ between A and AS lambs. A 21-d concentrate-based stall-finishing period in lambs previously raised on alfalfa pasture therefore markedly reduced fat indoles concentrations compared to lambs grazed on alfalfa until slaughter but did not change meat colour.  相似文献

Carotenoid pigments signature in the fat using visible reflectance spectroscopy has shown high potential for distinguishing pasture-fed (P) from stall concentrate-fed (S) lamb carcasses. However, a recent study demonstrated a between-breed variability in the digestive and metabolic fate of carotenoids pigments. The present study was therefore designed to investigate the extent to which this between-breed variability may affect the reliability of diet authentication using visible spectroscopy of the fat. We used 1054 male lambs from three breeds (Romane (ROM), Ile-de-France (OIF) and Limousine (LIM)). The breed-feed breakdown was 148 P and 258 S ROM, 102 P and 92 S OIF and 168 P and 286 S LIM lambs. The reflectance spectrum of perirenal fat was measured at 24 h postmortem at wavelengths between 400 and 700 nm. We quantified light absorption in the 450 to 510 nm area by calculating a traceability index (AVMI450 to 510) considered as an indicator of the carotenoid concentration in the fat (method 1) and we performed a multivariate analysis over the full set of reflectance data between 400 and 700 nm (method 2). The reliability of method 1 proved very variable across breeds, with a percentage of correctly classified lambs reaching 95.3%, 90.5% and 79.4% in ROM, LIM and OIF lambs, respectively. Despite these between-breeds differences, the threshold of the linear discriminant analysis performed on AVMI450 to 510 was fairly similar between breeds; when all the data for the three breeds were pooled, the threshold cut-off value was 224 units and the method correctly classified 90.2% of the 1054 lambs. Using the full range of reflectance data (method 2) enabled to significantly increase the proportion of correctly classified lambs for both OIF and LIM breeds, but not for ROM breed. It enabled to correctly classify 96.1%, 94.5% and 94.8% of the ROM, LIM and OIF lambs. The reliability of the discrimination was not significantly different when pooling all lambs for the three breeds than when using a breed-specific database (93.9% and 95.2%, respectively).  相似文献

ABSTRACT

The objectives of the present study were to quantify the deposition of carotenoids and tocopherols in the tissues of suckling lamb and to use the levels of those compounds to trace the maternal feeding. Twenty suckling lambs were raised with their dams in vegetative-stage pastures, and 19 suckling lambs were stalled indoors with dams that received hay ad libitum, until the lambs reached 10–12 kg. The lambs’ weekly intake of carotenoids and tocopherols was estimated from the milk production of the ewes and the carotenoid and tocopherol content of the milk. Samples of the subcutaneous and perirenal fat, longissimus thoracis muscle, and liver of the suckling lambs were collected at 24 h after slaughter. The pasture-raised lambs had greater intake of lutein than their indoor counterparts throughout the suckling period (p < 0.05), more retinol during the second and third weeks of the suckling period (p < 0.05), and more α-tocopherol during the first three weeks of the suckling period (p < 0.05), being similar thereafter. The pasture-raised lambs, when compared to the lambs raised indoors, had greater lutein content in the muscle and liver (p < 0.001), retinol and α-tocopherol content in all tissues (p < 0.001) and muscle and liver γ-tocopherol content (p < 0.05). The maternal feeding could be accurately predicted from the carotenoid and tocopherol content of whole lamb carcasses and muscle tissue but not from those of ewes’ milk, lamb liver tissue or lamb fat deposits.  相似文献

This study was conducted to investigate the pattern of plasma carotenoid concentration (PCC) in lambs switching from a low to a high dietary carotenoid level. A total of 12 Romane lambs were individually penned indoors and fed a low dietary carotenoid level for 23 days (period 1) and then a high dietary carotenoid level for 15 days (period 2). At the beginning of period 2, the lambs were 15 weeks old and weighed 29.9 kg (s.d. 2.7) on average. Lambs were fed daily (dry matter) 0.558 kg alfalfa pellets, 0.181 kg straw and 0.181 kg barley. Plasma content of total carotenoids was measured daily in period 2 by spectrophotometry. PCC (μg/l) varied with the animal (P < 0.001) and with time elapsed since the beginning of alfalfa distribution (P < 0.001). Mean PCC was 8 μg/l (s.d. 3.3) at the beginning of period 2, then increased curvilinearly with the time elapsed since the beginning of alfalfa distribution. As early as 24 h on the alfalfa diet, PCC was already higher than before the switch (P < 0.001). Mean PCC continued to increase until day 6 on average and reached a plateau thereafter. We propose a monomolecular function to model this pattern, the equation obtained on the mean data being: PCC = 97 (s.e. 2.2) × (1−exp(−0.3378 (s.e. 0.0282)×d)), where r2 = 0.997, r.s.d. = 4.47, n = 15 and d = day. The percentage of variance explained by the model ranged between 95.9% and 99.2%, depending on the animal. The parameters of the monomolecular function varied among animals, confirming the interindividual variability in animal response. Plateau for PCC was reached slightly earlier for the six lambs with the lowest values of the asymptote than for the six lambs with the highest values of the asymptote.  相似文献

A 131-day rotational grazing experiment was conducted in the summer autumn of 2007/2008 to compare effects of feeding condensed tannin (CT)-containing willow (Salix spp.) fodder blocks (i.e., silvopastoral system) or perennial ryegrass (Lolium perenne)/white clover (Trifolium repens) control pasture upon the immune response to gastrointestinal nematode parasite infection in Romney weaned lambs. Groups of lambs (n = 40) were allocated to either willow fodder blocks or control pasture; half of each group (n = 20) were regularly-drenched with anthelmintic at approximately 21 day intervals, whilst the remaining 20 weaned lambs were not drenched unless pre-determined faecal nematode egg counts (FEC) were reached, when all weaned lambs in that group were drenched with anthelmintic (i.e., trigger-drenching). Metabolizable energy and CT concentrations were higher in willow fodder versus pasture herbages. Weaned lambs grazing willow fodder blocks had lower live weight gain (92 g/day) and carcass weight (14.4 kg) than those grazing control pasture (134 g; 15.3 kg), with no effect of anthelmintic drenching. Regular anthelmintic treatment maintained similar and low FEC up to day 82, which then increased, whilst trigger-drenched lambs grazing willow fodder blocks had higher FEC than lambs grazing control pasture on three out of eight occasions. As judged by faecal larval cultures, grazing willow fodder blocks reduced the relative proportions of abomasal-dwelling parasites (Haemonchus contortus and Teladorsagia spp.). Trigger-drenched willow fodder block-fed sheep had higher platelet, eosinophil, total white blood cell and lymphocyte counts, greater CD21+ and greater γδ (Gamma Delta) TCR+ (T cell receptor) lymphocyte subsets than control pasture-fed sheep, and higher plasma levels of Immunoglobulin A (IgA) specific for carbohydrate larval antigen (CarLa) on day 105 (P<0.001). None of these parameters were affected by grazing treatment in regularly-drenched lambs. Higher immunological measurements in trigger-drenched lambs grazing willow fodder blocks could be due to higher larval intake and/or to the effects of secondary compounds in willow fodder blocks priming the immune system. Further research is required to separate these effects.  相似文献

Currently, consumers are increasingly interested in obtaining high-quality and healthy lamb meat. Compared to grain-based diets, dietary forage legumes such as alfalfa and condensed tannin (CT)-rich sainfoin increase the levels of polyunsaturated fatty acids (PUFAs) that are beneficial for health in lamb meat thanks to their high content in PUFA and/or their impact on ruminal biohydrogenation. However, they can therefore adversely affect its oxidative stability. Thus, the impact of dietary forage legumes on lamb longissimus thoracis (LT) muscle FA composition and their stability to peroxidation was studied in 36 Romane lambs grazing alfalfa (AF; n = 12) or alfalfa plus daily supplementation with CT-rich sainfoin pellets (AS; n = 12; 15 g DM/kg BW, 42 g CT/kg DM) or stall-fed concentrate and grass hay indoors (SI; n = 12). Lambs were slaughtered at a mean age of 162 ± 8.0 days after an average experimental period of 101 ± 8.1 days. Forage legumes-grazing lambs outperformed SI lambs in LT nutritional quality, with more conjugated linoleic acids and n-3 PUFAs, especially 18:3n-3, eicosapentaenoic and docosahexaenoic acids (P < 0.001), and thus lower n-6 PUFA/n-3 PUFA and 18:2 n-6/18:3 n-3 ratios (P < 0.001). Peroxidizability index was higher (P < 0.001) in LT muscle of forage legumes-grazing lambs. Concurrently, two endogenous antioxidant enzyme activities, superoxide dismutase and glutathione peroxidase, were, respectively, similar and lower (P < 0.001) for forage legumes-grazing compared with SI lambs. A lower vitamin E level in SI lambs compared with forage legumes-grazing lambs (1.0 v. 3.8 mg/g, P < 0.001) could explain that malondialdehyde content, a marker of lipid oxidation intensity, was 0.63 µg/g in SI after 8 days in aerobic packaging conditions, whereas it remaining steady at 0.16 µg/g in forage legumes-grazing lambs. Dietary forage alfalfa thus improved FA composition of lamb LT muscle and their stability to oxidation when compared to SI lambs. However, supplementation of alfalfa-grazing lambs with CT-rich sainfoin pellets did not affect the nutritional quality of LT muscle FAs.  相似文献

Digestibility, N retention and energy values of isoproteic rations containing 10% alfalfa hay and a concentrate mixture (16% CP) with 0, 15, 30, 45, 60 and 90% citrus pulp, were determined with 13 wethers. In a second experiment, 18 growing lambs (13.5 kg initial weight) were used to determine the values previously cited when fed on rations (16% CP) containing 0, 30 and 60% citrus pulp.Digestibility coefficients of the various feed fractions were not altered when citrus pulp was added to the diet except that for the ADF fraction which increased (P < 0.01). Organic matter and fibre digestibility were affected by age, the maximum figures being obtained with mature animals; metabolizable and digestible energy values followed a similar trend. Retention of N was inversely related to level of citrus pulp and age.Three growth trials were carried out in which daily gains, feed efficiency, dressing percentage and ruminal keratosis were studied in 108 lambs divided into groups of three and starting the experiment at an average weight of 15 kg. The animals were fed on diets containing 0–60% citrus pulp in the concentrate and 10–15% alfalfa hay. The parameters were not altered significantly up to 30% incorporation of citrus pulp, but if higher quantities were added the animal response was poorer.  相似文献

The objectives of the two experiments were to determine the respective effects and interactions of diet type (grass v. maize diets) and physical activity (grazing v. zero grazing) on lipogenic enzyme activities and adipose cell size in subcutaneous, perirenal and intermuscular adipose tissues and on plasma metabolites and hormones in Charolais steers. After weaning, the steers were assigned to two (Experiment 1, n = 24) or three (Experiment 2, n = 24) groups, with steers in Experiment 1 grazed grass or indoors maize-silage-fed and steers in Experiment 2 grazed grass, indoors cut grass- or indoors maize-silage-fed. Both experiments lasted for 23 months. All grass-fed animals were fed grass silage during the two winter seasons. During the two summer seasons, steers fed on grass were rotationally grazed on a perennial rye-grass pasture while steers fed on cut grass were fed indoors on freshly cut grass alone. Steers fed on maize silage were fed maize silage indoors during the entire experiment. All animals were reared for similar body weight and growth rates and slaughtered at the same age (31 to 32 months). Activities of lipogenic enzymes were significantly lower in the three adipose tissue sites of steers fed cut grass compared with maize silage, although there were less-marked effects in intermuscular adipose tissue. Plasma insulin and glucose concentrations were also lower in steers fed cut grass whereas plasma leptin concentration was similar. As body fat content was not affected by nutritional treatment, it is suggested that the decrease in potential lipogenic activity was associated with the nature of the diet and not to differences in available net energy. In other respects, grazed grass compared with eating cut grass did not affect lipogenic enzyme activities but decreased plasma leptin concentrations in the older steers and increased plasma non-esterified fatty acids and glucose concentrations without affecting adipose tissue weight and adipose cell size.  相似文献

Abstract Differences between diet and tissue isotope values known as trophic shifts (Δδ13C and Δδ15N) occur during digestion and assimilation of consumed food. Consideration of trophic shifts is essential when using stable isotopes for dietary reconstruction but has received little attention for cervids. Therefore, our purpose was to determine C and N trophic shifts in tissues of captive white-tailed deer (Odocoileus virginianus) fed corn and alfalfa in known amounts over a 4-month period. Antler has also received limited consideration for use in dietary reconstruction, thus, we analyzed tissue to expose variation among locations along the main beam and between antler components. We collected antler, hair, red blood cells (RBCs), and serum at the end of the feeding trial and analyzed them to determine C (δ13C) and N (δ15N) isotope values. Trophic shifts occurred between diet and all tissues for both isotopes with mean Δδ13C = 1.19 ± 2.23% and Δδ15N = 4.93 ± 0.74%. Antler trophic shifts were greater than those in all other tissues for δ13C, whereas antler and RBCs shared similar trophic enrichment over diet but differed from hair and serum for Δδ15N. Trophic shift values were significantly related to diet in hair and serum for δ13C and antler and RBCs for Δδ15N. Isotope values for antler core and periphery plus antler locations along the main beam did not vary. Antler collagen significantly varied from whole antler for δ13C but not δ15N. Our findings provide mean trophic shift values by tissue that can be used for dietary reconstruction in the study and management of cervids.  相似文献

The aim of this study was to evaluate the effect of different inclusion levels of semi-purified glycerine in the diet of feedlot lambs on feeding behaviour, nutrient intake and digestibility, carcass characteristics, meat quality and in vitro degradability. Thirty-two Dorper × (Texel × Suffolk) crossbred intact male lambs (22.2 ± 5.51 kg) were fed glycerine (90% purity) at 0, 120, 240 or 360 g/kg dry matter (DM) in a total mixed ration with a roughage to concentrate ratio of 40:60 for 84 d. In vitro degradability was not affected by glycerine supplementation. Feeding behaviour and digestibility of DM, crude protein and fibre and production performance were similar among treatments. Ether extract digestibility was lower at the highest inclusion level. Glycerine level had no effect on ruminal pH, carcass characteristics and meat quality, except for subcutaneous fat thickness which was lower for lambs fed glycerine at 240 and 360 g/kg DM. Scores for unpleasant taste, unpleasant odour, succulence and softness of meat were not affected by dietary glycerine level. These data suggest that there are no adverse effects on carcass quality and performance when semi-purified glycerine is provided up to 360 g/kg DM in the diet of growing lambs fed a forage to concentrate ratio of 40:60.  相似文献

The objective of this study was to compare carcass and meat quality between Barbarine lambs raised on rangelands and those reared indoors. A total of 24 weaned male lambs (23.2 kg) were allotted into two groups. The first group (GS) grazed pasture dominated by natural shrubs and was supplemented with 100 g of concentrate. The second group (HS) received oat hay and 200 to 300 g supplement of the same concentrate in order to obtain the same average daily gain (ADG) as the GS group. Six lambs from each group were slaughtered. Lambs to be slaughtered were randomly identified at the beginning of the trial. Carcass traits (offals percentage, dressing percentage, cuts yield, tissue composition, fatness and conformation) were determined; pH and meat and fat color were measured. Samples from longissimus lumborum were collected to analyze fatty acid composition. The GS group was characterized by a higher offals percentage, associated with higher lungs, heart, liver and kidney percentage. Carcass dressing percentage defined as the rate between hot carcass weight and empty BW was lower by 3.4% in the GS group. No differences were observed for carcass meat yield and carcass and leg compactness. Shoulder bone percentage of the GS group was higher, without differences in fat and lean percentages. Fat thickness, kidney and tail fats were lower in the GS lambs. However, intramuscular fat content was not affected. Percentages of saturated fatty acids and polyunsaturated fatty acids (PUFA) were not modified, whereas levels of n-3 and long n-3PUFA (EPA, DPA and DHA) as well as Δ5 desaturase plus Δ6 desaturase index were higher for the GS group. Thrombogenic and atherogenic indexes were not altered. No significant effects were observed for meat pH, meat and fat color. Despite having the same ADG, lambs from the GS group were less fatty, and their meat was richer in beneficial fatty acids.  相似文献

The objectives of this study were to investigate the effects of fish oil supplementation on performance and muscle fatty acid composition of hill lambs finished on grass-based or concentrate-based diets, and to examine the interaction with selenium (Se) status. In September 2006, 180 entire male lambs of mixed breeds were sourced from six hill farms after weaning and finished on five dietary treatments: grazed grass (GG), grass +0.4 kg/day cereal-based concentrate (GC), grass +0.4 kg/day cereal-based concentrate enriched with fish oil (GF), ad libitum cereal-based concentrate (HC) and ad libitum fish oil-enriched concentrate (HF). Within each treatment, half of the lambs were also supplemented with barium selenate by subcutaneous injection. At the start of the trial, the proportion of lambs with a marginal (<0.76 μmol/l) or deficient (<0.38 μmol/l) plasma Se status was 0.84 and 0.39, respectively. Compared with control lambs, GG lambs treated with Se had higher (P < 0.01) plasma Se levels, whereas erythrocyte glutathione peroxidase activity was higher (P < 0.01) for Se-supplemented lambs fed diets GG and GF. However, Se supplementation had no effects on any aspect of animal performance. Fish oil increased (P < 0.05) levels of 22:5n-3 and 22:6n-3 in the Longissimus dorsi of HF lambs but otherwise had no effect on the health attributes of lamb meat. There were no significant effects of fish oil on dry matter intake, animal performance or lamb carcass characteristics. Daily carcass weight gain (CWG; P < 0.001), carcass weight (P < 0.01) and conformation score (P < 0.01) increased with increasing concentrate inputs. Lambs fed concentrate-based diets achieved a higher mean CWG (P < 0.001), dressing proportion (P < 0.001) and carcass weight (P < 0.011), and were slaughtered up to 8.3 days earlier (P < 0.05) and at 1.2 kg lower (P < 0.05) live weight than pasture-fed lambs. However, carcasses from grass-fed lambs contained lower levels of perinephric and retroperitoneal fat (P < 0.05), and had less fat over the Iliocostalis thoracis (P < 0.001) and Obliquus internus abdominis (P < 0.05). Meat from grass-fed lambs also had lower levels of 18:2n-6 and total n-6 fatty acids compared with those finished indoors. The results of this study demonstrate that fish oil supplementation has some benefits for the health attributes of meat from lambs fed concentrate-based diets but not grass-based diets. Supplementing Se-deficient lambs with barium selenate will improve Se status of lambs fed zero-concentrate diets, but has no additional benefit when lambs are already consuming their daily Se requirement from concentrates or when fish oil-enriched diets are fed.  相似文献
