In this study, we characterize the shear and extensional rheology of dilute to semidilute solutions of cellulose in the ionic liquid 1-ethyl-3-methylimidazolium acetate (EMIAc). In steady shear flow, the semidilute solutions exhibit shear thinning, and the high-frequency complex modulus measured in small amplitude oscillatory shear flow exhibits the characteristic scaling expected for solutions of semiflexible chains. Flow curves of the steady shear viscosity plotted against shear rate closely follow the frequency dependence of the complex viscosity acquired using oscillatory shear, thus satisfying the empirical Cox-Merz rule. We use capillary thinning rheometry (CaBER) to characterize the relaxation times and apparent extensional viscosities of the semidilute cellulose solutions in a uniaxial extensional flow that mimics the dynamics encountered in the spin-line during fiber spinning processes. The apparent extensional viscosity and characteristic relaxation times of the semidilute cellulose/EMIAc solutions increase dramatically as the solutions enter the entangled concentration regime at which fiber spinning becomes viable.  相似文献

The viscoelastic properties of Aeromonas (A) gum in water were investigated by using the Rheometric Scientific ARES controlled strain rheometer. An intrinsic viscosity of 8336 ml/g was obtained according to the Fuoss-Straus equation. The effect of salt concentration on intrinsic viscosity revealed that the A gum exists as semiflexible chain. Typical shear-thinning (pseudoplastic) behavior was observed at concentrations higher than 0.52%. The zero shear viscosity (eta(0)) increased with increasing polysaccharide concentration (c) showing a gradient of approximately 1.0, 2.9 and 4.8 in different concentration domains. The critical concentrations c* and c**, at which the transitions from a dilute solution of independently moving chains to semidilute and then concentrated domains occurred, were determined roughly to be 1.2% and 3.5%. The results from dynamic experiments revealed that the A gum solution shows characteristics of polymer solutions without any evidence of gel-like character. All the results from steady and dynamic tests suggest that the A gum is a non-gelling polysaccharide. The temperature dependence of apparent viscosity was described by Arrhenius equation and the flow activation energy was estimated to be 45.2 kJ/mol, which is independent on polymer concentration.  相似文献

The perception of sweetness and flavour were studied in viscous solutions containing 50 g/l sucrose, 100 p.p.m. iso-amyl acetate and varying concentrations of three hydrocolloid thickeners (guar gum, lambda-carrageenan and hydroxypropylmethyl cellulose). Zero-shear viscosity of the samples ranged from 1 to 5000 mPas. Perception of both sweetness and aroma was suppressed at thickener concentrations above c* (coil overlap concentration, the point at which there is an abrupt increase in solution viscosity as thickener concentration is increased). Sensory data for the three hydrocolloids was only loosely correlated with their concentration relative to c* (c/c* ratio), particularly above c*. However, when perceptual data were plotted against the Kokini oral shear stress (tau), calculated from rheological measurements, data for the three hydrocolloids aligned to form a master-curve, enabling the prediction of flavour intensity in such systems. The fact that oral shear stress can be used to model sweetness and aroma perception supports the hypothesis that somatosensory tactile stimuli can interact with taste and aroma signals to modulate their perception.  相似文献

The rheological properties of aqueous solutions of guar gum (GG) and hydroxyethyl guar gum (HEG) have been investigated. The flow properties of these polysaccharide solutions were studied at the shear rate in the range 1.5–1310s−1 using a Rheotest-2 viscometer. The flow of these polysaccharide solutions was described by equation of state based on Cross model. The basic rheological parameters, like zero shear rate viscosity (ηo), elasticity modulus (Go) and relaxation time (glo) were calculated using simple and established relations. Master viscosity curves indicated that the molecular weight distribution of native guar gum has been changed by hydroxyethylation under specified reaction conditions. The effect of concentration and temperature on ηo and λo has been studied, and the relations among these were established by simple equations.  相似文献

The rheological properties of aqueous solutions of hydroxyethyl guar gum, a synthetic derivative of guar gum, have been studied under continuous and oscillatory shear flow conditions. Data obtained from both experimental techniques were satisfactorily fitted according to Cross-type models. The effect of polymer concentration, molecular weight and temperature on the rheological behavior of hydroxyethyl guar gum systems have been investigated and discussed in terms of rheological parameters like the zero-shear viscosity η0 and the characteristic times λ and λ′.  相似文献

The shear and extensional viscosity characteristics have been compared for hyaluronan and two samples of a cross-linked derivative, hylan, of different molecular weights. While shear thinning behavior was observed for all systems in shear flow, strain thickening was observed in extensional flow for the relatively dilute systems. However, there was a progressive transition to shear thinning behavior as the polymer concentration was increased. It is evident from the results that the shear flow techniques alone provide an incomplete picture of the rheological properties of these materials and that extensional flow characteristics are potentially dominant. For example, at relatively high deformation rates of 500 s1 and above, our results show that the extensional viscosities of aqueous solutions of the various polymers are at least two orders of magnitude greater than their corresponding shear flow viscosities. The incremental differences in viscosity with concentration increased with increasing molecular mass of the polymers and were greater in exensional flow than shear flow. These results demonstrate that the dynamic network structure formed by the higher molecular mass hylans offer potentially better physical and mechanical properties for viscosupplementation of diseased osteoarthritis joints compared with the parent hyaluronan.  相似文献

Carbamoylethylation of guar gum was carried out with acrylamide in presence of sodium hydroxide under different reaction conditions. Variables studied were concentration of sodium hydroxide, acrylamide, guar gum as well as reaction temperature and time. The nitrogen content, carboxyl content and total ether content were determined. Rheological properties of carbamoylethyl guar gum solutions showed non-Newtonian pseudoplastic behavior regardless of the %N. At a constant rate of shear, the apparent viscosity of carbamoylethyl guar gum solutions decreases with the increase in %N of the product.  相似文献

Single actin filaments were analyzed in solutions ranging from dilute (0.2 microgram/ml), where filaments interact only with solvent, to concentrations (4.0 mg/ml) at which F-actin forms a nematic phase. A persistence length of approximately 1.8 microns and an average length of approximately 22 microns (Kaufmann et al., 1992) identify actin as a model for studying the dynamics of semiflexible polymers. In dilute solutions the filaments exhibit thermal bending undulations in addition to diffusive motion. At higher semidilute concentrations (1.4 mg/ml) three-dimensional reconstructions of confocal images of fluorescently labeled filaments in a matrix of unlabeled F-actin reveal steric interactions between filaments, which account for the viscoelastic behavior of these solutions. The restricted undulations of these labeled chains reveal the virtual tube formed around a filament by the surrounding actin. The average tube diameter <a> scales with monomer concentration c as <a> varies; is directly proportional to c-(0.5 +/- 0.15). The diffusion of filaments in semidilute solutions (c = (0.1-2.0) mg/ml) is dominated by diffusion along the filament contour (reptation), and constraint release by remodeling of the surrounding filaments is rare. The self-diffusion coefficient D parallel along the tube decreases linearly with the chain length for semidilute solutions. For concentrations > 2.5 mg/ml a transition occurs from an isotropic entangled phase to a coexistence between isotropic and nematic domains. Analysis of the molecular motions of filaments suggests that the filaments in the aligned domains are in thermal equilibrium and that the diffusion coefficient parallel to the director D parallel is nearly independent of filament length. We also report the novel direct observation of u-shaped defects, called hairpins, in the nematic domains.  相似文献

A membrane-covered polarographic oxygen electrode was used to measure oxygen diffusion coefficients in aqueous polyelectrolyte solutions of xanthan gum, sodium alginate, and sodium carboxymethylcellulose (CMC). In sodium alginate solutions, dilute xanthan solutions, and solutions containing more than 0.3 wt % CMC, oxygen diffusion coefficients decrease with increasing polymer concentrations. Interestingly, in dilute CMC solutions and concentrate xanthan solutions containing more than 0.5 wt % xanthan gum, oxygen diffusion coefficients increase with increasing polymer concentrations, and values exceeding that in pure water are generally observed.  相似文献

The extensional viscosity and the steady shear viscosity of sodium type hyaluronan (NaHA) in water with sodium chloride and/or sucrose and in DMSO solvent were measured. The extensional viscosities for HA in aqueous solution (0.05, 0.1, 0.3 w/v%) were constant at lower extensional rates, and then became strain thinning above a critical extensional rate. However, on adding sodium chloride, the extensional viscosity decreased and became strain thickening at higher extensional rates. Sodium ions shield the electrostatic repulsion between carboxyl residues of HA molecules and constrict the coil dimensions. The strain thickening of HA solution in the presence of sodium chloride at higher extension rates is due to the coil stretching. The addition of sucrose increased the extensional viscosity and shifted the critical extensional rate to lower strain rates. With increasing strain (shear) rates, extensional (shear) viscosities for HA aqueous solutions remained constant up to a critical extension (shear) rate; but they showed no plateau and decreased linearly in DMSO. It is clear that molecular interaction of HA in DMSO is stronger than that in aqueous solution. This should be attributed to the different conformations of HA in DMSO and in aqueous solutions.  相似文献

The concentration (c) and shear rate (γ) dependence of viscosity (η) has been studied for a wide range of random coil polysaccharide solutions, and the following striking generalities are observed:
1. 1. The transition from dilute to concentrated solution behaviour occurs at a critical concentration , when ‘zero shear’ specific viscosity (ηsp) ≈ 10. ηsp varies as c1.4 for dilute solutions, and as c3.3 for concentrated solutions.
2. 2. The shear rate dependence of viscosity, and frequency dependence of dynamic (oscillatory) viscosity are closely superimposable.
3. 3. Double logarithmic plots of against (where η0 is ‘zero shear’ viscosity, and is the shear rate at which ) are essentially identical for all concentrated solutions studied, and thus the two parameters η0 and completely define the viscosity at all shear rates of practical importance.
Departures from points 1 and 2, but not 3, are observed for concentrated solutions of locust bean gum, guar gum, and hyaluronate at low pH and high ionic strength and are attributed to specific intermolecular associations (‘hyperentanglements’) of longer timescale than non-specific physical entanglements.  相似文献

The dependence of the dynamic viscoelastic parameters of carboxymethylcellulose (CMC), xanthan gum, and guar gum solutions on the angular frequency (ω) was compared with that of their viscosity (μ) on the shear rate (γ). In addition, the effect of these rheological properties on the maximum velocity through the pharynx, V max, as measured by the ultrasonic pulse Doppler method, was investigated. The CMC and guar gum solutions examined were taken as a dilute solution and a true polymer solution, respectively. The xanthan gum solution was taken as a weak gel above 0.5% and a true polymer solution below 0.2%. The maximum velocity, V max, of the thickener solutions correlated well with μ, the dynamic viscosity η′, and the complex viscosity η*, especially those measured at γ or ω of 20–30 s?1 (or rad/s) and above, suggesting that μ, η′, and η* are suitable indexes for care foods of the liquid type for dysphagic patients.  相似文献

The effect of starch composition and concentration on the rheological properties of starch in a mixed solvent, water–DMSO, was investigated in dynamic shear and extensional mode. High amylose corn starch containing 70% amylose and 30% amylopectin, common corn starch containing 25% amylose and 75% amylopectin, and waxy corn starch containing about 99% amylopectin were used in this study. Concentrations of 2, 4, 6, and 8% (w/v) in 10% water-90% DMSO (v/v) were used for each starch type. An increase in the amylopectin content of starch from 30 to 99% caused a change in behavior from semidilute solution to viscoelastic solid at a concentration of 8% (w/v). At a concentration of 2%, an increase in the amylopectin content of starch from 30 to 99% caused a change from Newtonian to incipient gel-like behavior. Behavior at intermediate concentrations of 4 and 6% (w/v) varied from semidilute to critical gel-like with increasing amylopectin content. A power-law relaxation was observed for all concentrations of common and waxy corn starches with the slope decreasing with increase in concentrations. A 2% waxy corn starch solution displayed extension thinning behavior, while a 2% high amylose corn starch solution displayed Newtonian behavior.  相似文献

Most strains of Butyrivibrio fibrisolvens are known to produce extracellular polysaccharides (EPs). However, the rheological and functional properties of these EPs have not been determined. Initially, 26 strains of Butyrivibrio were screened for EP yield and apparent viscosities of cell-free supernatants. Yields ranged from less than 1.0 to 16.3 mg per 100 mg of glucose added to the culture. Viscosities ranged from 0.71 to 5.44 mPa.s. Five strains (CF2d, CF3, CF3a, CE51, and H10b) were chosen for further screening. The apparent viscosity of the EP from each of these strains decreased by only 50 to 60% when the shear rate was increased from 20 to 1,000 s-1. Strain CE51 produced the EP having the highest solution viscosity. A detailed comparison of shear dependency of the EP from strain CF3 with xanthan gum showed that this EP was less shear sensitive than xanthan gum and, at a shear rate of 1,000 s-1, more viscous. EPs from strains CF3 and H10b were soluble over a wide range of pH (1 to 13) in 80% (vol/vol) ethanol-water or in 1% (wt/vol) salt solutions. The pH of 1% EP solutions was between 4.5 and 5.5. Addition of acid increased solution viscosities, whereas addition of base decreased viscosity. EPs from strains CF3, CE51, and H10b displayed qualitatively similar infrared spectra. Calcium and sodium were the most abundant minerals in the three EPs. The amounts of magnesium, calcium, and iron varied considerably among the EPs, but the potassium contents remained relatively constant.  相似文献

The aim of this study was to investigate how physico-chemical properties of two dietary fibres, guar gum and pectin, affected weight gain, adiposity, lipid metabolism, short-chain fatty acid (SCFA) profiles and the gut microbiota in male Wistar rats fed either low- or high-fat diets for three weeks. Both pectin and guar gum reduced weight gain, adiposity, liver fat and blood glucose levels in rats fed a high-fat diet. Methoxylation degree of pectin (low, LM and high (HM)) and viscosity of guar gum (low, medium or high) resulted in different effects in the rats, where total blood and caecal amounts of SCFA were increased with guar gum (all viscosities) and with high methoxylated (HM) pectin. However, only guar gum with medium and high viscosity increased the levels of butyric acid in caecum and blood. Both pectin and guar gum reduced cholesterol, liver steatosis and blood glucose levels, but to varying extent depending on the degree of methoxylation and viscosity of the fibres. The medium viscosity guar gum was the most effective preparation for prevention of diet-induced hyperlipidaemia and liver steatosis. Caecal abundance of Akkermansia was increased with high-fat feeding and with HM pectin and guar gum of all viscosities tested. Moreover, guar gum had distinct bifidogenic effects independent of viscosity, increasing the caecal abundance of Bifidobacterium ten-fold. In conclusion, by tailoring the viscosity and possibly also the degree of methoxylation of dietary fibre, metabolic effects may be optimized, through a targeted modulation of the gut microbiota and its metabolites.  相似文献

Shear-thickening and shear-induced pattern formation in starch solutions   总被引:4,自引:0,他引:4  
Since Dintzis et al. reported shear-thickening behavior and shear-induced pattern formation in semidilute starch solutions for the first time in 1995, considerable efforts have been made to understand the science behind these observations. Despite these efforts, however, many questions regarding this behavior of starch solutions remain. Using a Brookfield programmable rheometer and a custom-built shear microscope, starch solutions in alkaline solution medium were investigated. In this report, we present data leading to the following conclusions: (1) gently prepared starch solutions are macroscopically heterogeneous with regions of highly concentrated gel-like structures dispersed in dilute starch solution; (2) shear breaks up these heterogeneous regions, increasing in viscosity (shear-thickening) which is thus seen to be a result of an increase in the concentration of dissolved starch; (3) pattern formation, observed when the solution is exposed to higher shear rate, is the result of a separate shear-induced aggregation process; and (4) aggregations are not induced below a certain critical threshold shear rate and time is also a factor in the behavior of the aggregate.  相似文献

The objective of the study was to develop guar gum matrix tablets for oral controlled release of water-soluble diltiazem hydrochloride. Matrix tablets of diltiazem hydrochloride, using various viscosity grades of guar gum in 2 proportions, were prepared by wet granulation method and subjected to in vitro drug release studies. Diltiazem hydrochloride matrix tablets containing either 30% wt/wt lowviscosity (LM1), 40% wt/wt medium-viscosity (MM2), or 50% wt/wt high-viscosity (HM2) guar gum showed controlled release. The drug release from all guar gum matrix tablets followed first-order kinetics via Fickian-diffusion. Further, the results of in vitro drug release studies in simulated gastrointestinal and colonic fluids showed that HM2 tablets provided controlled release comparable with marketed sustained release diltiazem hydrochloride tablets (D-SR tablets). Guar gum matrix tablets HM2 showed no change in physical appearance, drug content, or in dissolution pattern after storage at 40°C/relative humidity 75% for 6 months. When subjectd to in vivo pharmacokinetic evaluation in healthy volunteers, the HM2 tablets provided a slow and prolonged drug release when compared with D-SR tablets. Based on the results of in vitro and in vivo studies it was concluded that that guar gum matrix tablets provided oral controlled release of water-soluble diltiazem hydrochloride. This paper deals with dielectric dispersion curves (covering a frequency range from a few Hz to 100 MHz) of Na-poly(styrene-sulfonate) of 65,000 < or = Mw < or = 1,060,000 g mol(-1) in aqueous solutions. The values of the low frequency (dielectric increment1) and high frequency (dielectric increment2) dielectric increments, obtained from the experimental curves matched to a superposition of two Cole-Cole equations, have been analyzed in terms of their concentration and molar mass dependence. The concentrations C (g l(-1)) of the various solutions were mostly situated in the transition regime defined by Odijk [T. Odijk, Macromolecules 12 (1979) 688] between the dilute regime (C < Cg*) and the semi-dilute one (C > C**), and wherein the characteristic concentration C* marks the onset of flexibility effects on the polyion behavior. It has been shown that in the concentration range Cg* < C < C** the increments in both frequency domains satisfy a scaling relation dielectric increment(j) = Bj M(nu j) (C/C*)(mu j) with molar mass independent exponents nu j and mu j changing around C*. Their values are different for dielectric increment1 and dielectric increment2, except for mu above C* where both increments appear to become concentration-independent. Below Cg*, in the dilute regime, the two dispersion domains seem to merge. The increment dielectric increment = relative permittivity (0) - high frequency limit of relative permittivity is molar mass independent if scaled to (C/Cg*). The molar mass dependence of the increments as a function of the macromolecular concentration rhoP, dielectric increment or dielectric increment(j) approximately Mgamma (rhoP)mu, also reveals differences between the different concentration regimes. Extrapolation from above Cg* to zero concentration is thus unjustified.  相似文献

In this study, dynamic light scattering (DLS), turbidity, and rheo-small angle light scattering (rheo-SALS) methods have been utilized to examine the impact of pH (1 < or = pH < or = 7) on aqueous solutions of noncommercial purified pig gastric mucin. The asymmetric flow field-flow fractionation (AFFFF) measurements established that the mucin sample has a high molecular weight and is polydisperse. DLS measurements on dilute solutions of mucin disclosed large interchain aggregates at pH 2, where the polymer has a low charge density or is uncharged. At lower or higher values of pH, mucin is charged and the tendency of forming interpolymer complexes is affected. In the semidilute concentration regime, pronounced junction zones ('lumps' of polymer) are evolved and a heterogeneous connected network is formed at pH 2, whereas the association structures are disintegrated (smaller 'lumps') at lower or higher pH values due to electrostatic repulsive interactions, and a more homogeneous network is evolved. The DLS and viscosity results at pH 1 indicate the development of a fragmented network, composed of contracted chains that are decorated by some positive charges. The effect of shear flow on the structure of semidilute solutions of mucin was investigated with the aid of rheo-SALS methods. The scattered intensity revealed a strong upturn at low values of the wave vector (q) for mucin solutions at pH 2 and pH 4, which suggests the evolution of large association domains. At these pH values, a flow-induced anisotropy in the 2D SALS patterns in the form of elliptical shapes was observed at high shear rates.  相似文献
