SHELF-LIFE ESTIMATION OF APPLE-BABY FOOD   总被引:1,自引:0,他引:1  
The aim of the present work was to study the evolution of the color of an apple‐baby food and to estimate its sensory shelf life. Samples of apple‐baby food stored at 25C were analyzed using trained assessors and a consumer panel. A zero‐order reaction kinetics was found for the evolution of sensory color with storage time. Color was highly correlated with consumers' rejection percentage and overall acceptability, which indicates that consumers consider this attribute when deciding to accept or reject this product and in assigning their acceptability scores. Using this correlation, the sensory cutoff point for color, corresponding to a 25% consumer rejection, was calculated. Sensory shelf life was estimated using consumer data. Sensory shelf life estimated by survival analysis was in agreement with that calculated considering an acceptability limit of 6.0 in a 9‐point hedonic scale.  相似文献

ABSTRACT

In the present study, survival analysis was applied on consumers' acceptability scores, focusing the shelf‐life risk on the consumers disliking the product. Shelf life was estimated as the time necessary to reach a fixed percentage of consumers disliking the product, that is, the percentage of consumers scoring the product's overall acceptability below 6 in a 9‐point hedonic scale. In the present work, this methodology was applied to estimate the sensory shelf life of whole pan bread and alfajores. Shelf lives estimated considering 50% of the consumers disliking the product were shorter than those estimated considering consumers' rejection to consume. These results suggest that a proportion of consumers might dislike the sample but still answer “yes” when asked if they would consume the product at their homes. This could be attributed to the fact that when consumers are asked whether they would consume the product, they might think about consuming it after being stored at their homes. In this situation, consumers might be more tolerant toward sensory defects because they do not want to discard the product.

PRACTICAL APPLICATIONS

Sensory shelf life can be estimated using survival analysis considering the percentage of consumers disliking the product. This methodology seems to be a conservative criterion in order to assure the product's quality throughout its storage.  相似文献

Roasted peanuts were stored at 20 treatment combinations of water activities (0.33, 0.44, 0.54, 0.67, 0.75) and temperatures (23, 30, 35, 40C), and evaluated after storing for 0, 20, 40, 60, 80, 100, and 110% of estimated shelf life, ranging from 0 to 91 days. Regression models indicated that increasing storage time and storage water activity resulted in decreasing crispness, crunchiness, hardness, roasted peanutty, sweet aromatic, salty, bitter and sweet attributes and increasing fracturability, chewiness, tooth packing and cardboard flavor. Storage temperature did not contribute to regression models of textural properties of roasted peanuts. Increasing storage temperature resulted in a faster rate of decrease for roasted peanutty and faster rate of increase of cardboard flavor. Roasted peanuts stored between 0.33 and 0.41 a w at 23C are predicted to have the least change in sensory properties after 68 and 91 days respectively.  相似文献

Aims: The aim of the study was to evaluate the behaviour of Listeria monocytogenes in the conditioning liquid of packaged water buffalo mozzarella cheese (WBMC). Methods and Results: The conditioning liquid was contaminated with L. monocytogenes, and the contaminated samples were stored at four different storage temperatures: 5 and 10°C for 22 days; 20°C for 9 days; 20°C for 3 days and then at 5°C for 6 days. The results showed that L. monocytogenes concentration decreased when contaminated samples were stored at 5°C. When WBMC was stored at 20°C and at 10°C, L. monocytogenes started to grow after a lag phase of 3 and 10 days, respectively. When samples were stored at variable temperature conditions, L. monocytogenes numbers showed a lag phase of 5 days. Conclusions: Use of a conditioning liquid characterized by acidity and a correct storage temperature is able to counteract pathogen replication during shelf life. A high concentration of lactic acid bacteria was associated with effective control of L. monocytogenes but the role of lactic acid bacteria in WBMC conditioning liquid requires further investigation. Significance and Impact of the Study: According to European regulations, food producers should be able to justify decision‐making on the shelf life assigned to their products, taking into account reasonable storage conditions and use by consumers. The results of the trial yielded information for producers of WBMC and similar cheeses for decision‐making on product shelf life.  相似文献

Fruity fermented (FF) flavor is a common off‐flavor in peanuts resulting from high‐temperature curing. The 9‐point hedonic scale is the most widely used scale to determine consumer acceptance; however, research has indicated that line scales may provide equal reliability and greater sensitivity. The objectives of this study were to characterize consumer perception of FF flavor in peanuts and to compare the effectiveness of the two scale types. Consumers (n = 208) evaluated control (no FF), low‐intensity (1.0) FF and high‐intensity (3.0) FF peanut pastes for the strength/intensity of roasted peanut flavor (RPF), sweet taste (ST), fresh peanut flavor (FPF) and overall liking (OV) using randomly assigned ballots. Sensitivity in defining consumer perception of off‐flavor in peanuts was greater with use of line scales than with the hedonic scale. The line scale indicated that FF flavor in peanuts, even at low intensity, negatively impacted OV and further identified significantly lower RPF and FPF perception by consumers. The hedonic scale identified only a difference in FPF and was not sensitive enough to show a difference in OV.  相似文献

Volatile organic compounds (VOCs) are chemical species that play an important role in determining the characteristic aroma and flavor of fruits. Apple (Malus × domestica Borkh .) cultivars differ in their aroma and composition of VOCs. To determine varietal differences in the aroma profiles, VOCs emitted by 7 modern and 35 old apple cultivars were analyzed using Proton Transfer Reaction Mass Spectrometry (PTR‐MS). PTR‐MS is a rapid, reproducible, and non‐destructive spectrometric technique for VOC analysis of single fruits, developed for direct injection analysis. In the present study, we analyzed the differences in the emission of VOCs from single fruits at harvest and after a storage period of 60±10 days, followed by 3 d of shelf life. Our results show that VOC profile differences among apple cultivars were more pronounced after storage than at harvest. Furthermore, chemodiversity was higher in old cultivars compared to modern cultivars, probably due to their greater genetic variability. Our data highlight the importance of storage and shelf life are crucial for the development of the typical aroma and flavor of several apple cultivars. The validity of the method is demonstrated by comparison of two different harvest years.  相似文献

The effect of temperature on the life table of Acyrthosiphon pisum reared on Pisum sativum was evaluated under laboratory conditions using temperatures of 10, 15, 20, 25, 30, and 35°C. The development time of juvenile A. pisum decreased with increasing temperature (from 21.3 days at 10°C to 4.7 days at 35°C). Adult longevity also decreased with increasing temperature (from 53.2 days at 10°C to 2.3 days at 35°C). Interestingly, 70% and 25% of A. pisum nymphs reared at 30°C and 35°C, respectively, successfully developed into adults. These temperatures have previously been considered unsuitable for A. pisum development. However, adult aphids reared at 30°C and 35°C failed to reproduce. Linear regression analysis revealed that the lower development threshold of A. pisum was 153.1 degree‐days above 1.9°C. Maximal average reproductive capability was observed at 10°C for A. pisum adults, with each adult producing more than 120 nymphs. The intrinsic rate of increase (rm) of A. pisum increased from 0.124/day at 10°C to 0.337/day at 25°C, whereas opposite trends were observed for the net reproductive rate (R0) and the mean generation time (GT). At 20°C and 25°C, the intrinsic rate of increase of A. pisum was significantly higher than at 10°C and 15°C (P < 0.0001), indicating that 20°C and 25°C are within the optimal range for the growth of A. pisum, and that 30°C is beyond the upper threshold limit for reproduction, which involves a temperature range that is narrower than that of the survival range (upper limit is unknown, but above 35°C).  相似文献

The cycad aulacaspis scale (CAS), Aulacaspis yasumatsui Takagi (Hemiptera: Diaspididae), is a serious pest of ornamental cycads in the southeastern United States. In Florida, CAS was first reported in Miami in 1996 and is now present in 43 Florida counties. Chemical control of CAS can be effective, but it is expensive, and insecticides must be frequently and regularly applied. Recent surveys of natural enemies in Thailand identified a new potential biological control agent of CAS. The objective of this study was to examine the temperature requirements and consumption rates of Phaenochilus kashaya Giorgi and Vandenberg (Coleoptera: Coccinellidae). Survival, developmental time and number of scales consumed by P. kashaya were measured at four constant temperatures (20, 25, 30 and 35°C). In addition, adult longevity and consumption were recorded at three constant temperatures (20, 25 and 30°C). Phaenochilus kashaya completed development to adulthood at temperatures ranging from 20 to 30°C. The highest survival rate (48%) was obtained at 25°C, and the accumulated degree-days for this species was 714. Phaenochilus kashaya is a voracious predator of CAS, consuming 380 scales during the larval stage and an estimated 4700 scales during the adult stage. Adult longevity varied from 59 days at 30°C to 220 days at 20°C for females, and 31 days at 30°C to 148 days at 20°C for males. The intrinsic rate of increase (r m) was 0.34 at 20°C, which is high compared with other coccinellid species. According to this study, P. kashaya has the potential to be an effective biological control agent of the CAS in Florida.  相似文献

All life-stages ofSarcoptes scabiei var.canis survive in the hosts' environment for several days to several weeks depending on r.h. and temperature. Survival of larvae was comparable to males; survival of nymphs was comparable to females. Females and nymphs generally survived longer than larvae and males.Low temperature (10–15°) and high r.h. prolonged survival of all life stages. At 10–15°C, females and nymphs survived 1–3 weeks at 97% r.h., 1–2 weeks at 75% r.h. and 5–8 days at 45% r.h. At 20–25°C, survival was significantly reduced but all life-stages survived at least 2 days at 25% r.h. and 5–6 days at 75–100% r.h. Long survival off the host coupled with host-seeking behavior of these mites make it likely that environmental contamination is a source of scabies in domestic and wild mammals, and in humans.  相似文献

The life table of the indigenous Neoseiulus californicus was studied at different temperatures and 65 ± 5% relative humidity under conditions of 16 h light : 8 h dark (LD 16:8). The total developmental period from egg to adult varied from 3.0 to 14.0 days at 15 to 35°C. Survival to adulthood ranges from 86.21 to 93.94%, with the highest rate at 25°C. The lower threshold temperature from egg to adult stages of females and males was 10.84 and 10.72°C, respectively, and the thermal constant was 57.14 degree‐days (DD) for females and 56.18 DD for males. Total number of eggs laid by each female was the highest (70.38 eggs) at 25°C, whereas average daily fecundity was the highest (3.69 eggs/female/day) at 30°C. The net reproductive rate was the highest (48.49) at 25°C and lowest (26.18) at 30°C. Mean generation time decreased from 19.04 to 11.47 days with increasing temperature from 20 to 30°C. Both intrinsic rate of natural increase (0.284) and finite rate of increase (1.32) were maximum at 30°C. Adult longevity was the highest (42.75 days for females and 32.60 days for males) at 20°C and lowest (22.70 days for females and 15.30 days for males) at 30°C. Sex ratio was female biased and was the highest (78.08) at 25°C and lowest (70.24) at 30°C. Developmental data of five constant temperatures, temperature thresholds and thermal requirements may be used to predict the occurrence, number of generations and population dynamics of N. californicus as an important biocontrol agent of Tetranychus urticae.  相似文献

Oomyzus sokolowskii, an important parasitoid of Plutella xylostella, has great potential for use in biological control. Storage at suboptimal temperature is valuable for increasing the shelf‐life of insect parasitoids. In this study, O. sokolowskii larvae were reared at 30/25, 25/25 and 25/20°C light/dark (65 ± 5% RH, 16 : 8 h L : D) until pupation. The pupae were then cold‐stored at 4 ± 1°C (60 ± 5% RH, full darkness). The pupae were removed out from the storage at 10, 20, 30 and 40 days after storage (DAS) and maintained at 25 ± 2°C until adults emerged or pupae died. Quality of the emerging adults and their F1 offspring were assessed. Incidence of parasitism by O. sokolowskii was higher at 30/25°C than at 25/20°C. Cold storage of O. sokolowskii pupae greatly affected the fitness of the parasitoid: adult emergence rates were lower in the 40 DAS treatment than in other treatments; when O. sokolowskii larvae developed at 25/25°C, female proportions of the emerged adults were lower in the 40 DAS treatment than in the 0 and 10 DAS treatments. Larval rearing temperature mildly affected the adult emergence rate, post‐storage developmental time and female proportion with a few exceptions. Number of parasitoids emerged per host pupa, and incidence of parasitism by the females were neither affected by larval rearing temperature nor cold storage duration. Trans‐generational effects on F1 offspring were evident in adult emergence rate, egg‐adult developmental time and female proportion which were negatively affected by long duration of storage (40 days), but not by larval rearing temperature with a few exceptions. In conclusion, O. sokolowskii pupae could be stored at 4°C for up to 30 days without significant fitness loss.  相似文献

Seeds with a water‐impermeable seed coat and a physiologically dormant embryo are classified as having combinational dormancy. Seeds of Sicyos angulatus (burcucumber) have been clearly shown to have a water‐impermeable seed coat (physical dormancy [PY]). The primary aim of the present study was to confirm (or not) that physiological dormancy (PD) is also present in seeds of S. angulatus. The highest germination of scarified fresh (38%) and 3‐month dry‐stored (36%) seeds occurred at 35/20°C. The rate (speed) of germination was faster in scarified dry‐stored seeds than in scarified fresh seeds. Removal of the seed coat, but leaving the membrane surrounding the embryo intact, increased germination of both fresh and dry‐stored seeds to > 85% at 35/20°C. Germination (80–100%) of excised embryos (both seed coat and membrane removed) occurred at 15/6, 25/15 and 35/20°C and reached 95–100% after 4 days of incubation at 25/15 and 35/20°C. Dry storage (after‐ripening) caused an increase in the germination percentage of scarified and of decoated seeds at 25/15°C and in both germination percentage and rate of excised embryos at 15/6°C. Eight weeks of cold stratification resulted in a significant increase in the germination of scarified seeds at 25/15 and 35/20°C and of decoated seeds at 15/6 and 25/15°C. Based on the results of our study and on information reported in the literature, we conclude that seeds of S. angulatus not only have PY, but also non‐deep PD, that is, combinational dormancy (PY + PD).  相似文献

Aims: The objectives of the study were to evaluate the effect of selected antimicrobial agents on the shelf life of osmotically pretreated gilthead seabream and to establish reliable kinetic equations for shelf‐life determination validated in dynamic conditions. Methods and Results: Fresh gilthead seabream (Sparus aurata) fillets were osmotically treated with 50% high dextrose equivalent maltodextrin (HDM, DE 47) plus 5% NaCl and 0·5% carvacrol, 0·5% glucono‐δ‐lactone or 1% Citrox (commercial antimicrobial mix). Untreated and treated slices were aerobically packed and stored isothermally (0–15°C). Microbial growth and quality‐related chemical indices were modelled as functions of temperature. Models were validated at dynamic storage conditions. Osmotic pretreatment with the use of antimicrobials led to significant shelf‐life extension of fillets, in terms of microbial growth and organoleptic deterioration. Conclusions: The shelf life was 7 days for control samples at 5°C. The osmotic pretreatment with carvacrol, glucono‐δ‐lactone and Citrox allowed for shelf‐life extension by 8, 10 and 5 days at 5°C, respectively. Significance and Impact of the Study: The results of the study show the potential of adding carvacrol, glucono‐δ‐lactone or Citrox in the osmotic solution to extend the shelf life and improve commercial value of chilled osmotically pretreated fish products. The developed models can be a reliable tool for predicting the shelf life of fresh or minimally processed gilthead seabream fillets in the real chill chain.  相似文献

The influence of brand and price on the sensory acceptability of alfajor (an individual cake covered in chocolate) among children from different household incomes was measured. Two brands of alfajores, “cheap” and “expensive,” were used. A total of 120 children, half from low‐income households (LI) and half from medium‐ to high‐income households (M–HI), participated in the study. They tasted the alfajores in three conditions: blind, package‐alone and package + product. The LI children were not influenced by brand. For the M–HI children, an assimilation effect was observed. The findings highlight the importance of socioeconomic factors in sensory expectation. In the blind condition, if the price is very high, no matter how much a child likes an alfajor he/she will not buy it. If the price is low, the overall liking will highly influence the choice. Implications of results for manufacturers, money providers and nutritional education agencies are discussed.  相似文献

To examine the effect of early‐climacteric (postripening) 1‐methylcyclopropene (1‐MCP) exposure on the shelf‐life and quality of green Cavendish bananas (Musa acuminata cv. Williams) from the middle section of the bunch, bananas were harvested bimonthly and treated with 100 μL L?1 ethylene for 2 consecutive days prior to exposure to 0, 100, 300, 1000, 3000 or 10 000 nL L?1 1‐MCP for 24 h prior to storage at 22°C. 1‐MCP treatment at a concentration of 300 nL L?1 or above increased banana shelf‐life significantly compared with the control, regardless of the month in which fruit were harvested except March where a higher concentration was needed (3000 nL L?1). Fruit harvested in May were the most responsive with a greater than twofold increase in shelf‐life. To examine the effect of fruit position in the bunch on 1‐MCP efficacy, green fruit from the top or bottom of bunches were treated with 100 μL L?1 ethylene for 2 consecutive days prior to early‐climacteric 1‐MCP (300 nL L?1) exposure for 24 h at 22°C. In spring and autumn but not in summer, application of 1‐MCP to early‐climacteric fruit was more effective in fruit from the top than in those treated from the bottom of the bunch, increasing shelf‐life. Firmness of 1‐MCP‐treated fruit was up to 19% greater than that of the control across the year, except in fruit from the bottom of the bunch. Given that 1‐MCP is less effective in extending the shelf‐life of summer‐harvested fruit (particularly those from the bottom of the bunch), we conclude that preharvest conditions and fruit position in the bunch affect their responsiveness to ethylene and their behaviour during the ripening process.  相似文献

Survival data, in addition to data on growth and reproduction rate, are necessary to estimate rotifer productivity under various thermal conditions. A method of individual culturing of Philodina roseola helped the authors to obtain data concerning length of life span and realisation of reproduction potential at different temperatures, ranging from 9 to 35 °C. The method also was helpful in revealing the causes of individual deaths. It is shown that at a temperature of 20 °C net reproduction rate (R0) of Ph. roseola is maximum and is equal to reproduction potential of the individual. The peculiarity of Philodina ontogenetic reaction to temperature beyond optimum is the impairment of reproduction process.  相似文献

An Amycolatopsis fastidiosa culture, which produces the nocathiacin class of antibacterial compounds, was scaled up to the 15,000 L working volume. Lower volume pilot fermentations (600, 900, and 1,500 L scale) were conducted to determine process feasibility at the 15,000 L scale. The effects of inoculum volume, impeller tip speed, volumetric gas flow rate, superficial gas velocity, backpressure, and sterilization heat stress were examined to determine optimal scale‐up operating conditions. Inoculum volume (6 vs. 2 vol %) and medium sterilization (Ro of 68 vs. 92 min?1) had no effect on productivity or titer, and higher impeller tip speeds (2.1 vs. 2.9 m/s) had a slight effect (20% decrease). In contrast, higher backpressure, incorporating increased head pressure at the 15,000 L scale (1.2 vs. 0.7 kg/cm2) and low gas flow rates (0.25 vs. 0.8 vvm), appeared to be problematic (40–50% decrease). High off‐gas CO2 levels were likely reasons for observed lower productivity. Consequently, air flow rate for this 25‐fold scale‐up (600–15,000 L) was controlled to match off‐gas CO2 profiles of acceptable smaller scale batches to maintain levels below 0.5%. The 15,000 L‐scale fermentation achieved an expected nocathiacin I titer of 310 mg/L after 7 days. Other on‐line data (i.e., pH, oxygen uptake rate, and CO2 evolution rate) and off‐line data (i.e., analog production, glucose utilization, ammonium production, and dry cell weight) at the 15,000 L scale also tracked similarly to the smaller scale, demonstrating successful fermentation scale‐up. © 2009 American Institute of Chemical Engineers Biotechnol. Stem‐end rot is a postharvest disease associated with multiple important fungal pathogens including Lasiodiplodia theobromae. The incidence of stem‐end rot in avocado during postharvest storage affects the shelf life, quality and marketability of the fruit. This study is aimed at the investigation of the antifungal activities of selected natural plant volatiles (vapour phase): citral, octanal, hexanal and thymol against L. theobromae (causal pathogen of stem‐end rot) in vitro and in vivo in “Hass” and “Fuerte” avocados. Hexanal showed a lower inhibitory effect on the radial mycelial growth of L. theobromae in vitro. However, citral at a minimum concentration of 4 μl/L revealed fungicidal activity and completely inhibited the spore germination of L. theobromae. Artificially inoculated “Hass” and “Fuerte” avocados with L. theobromae were exposed to citral (768 μl) and commercial fungicide prochloraz and stored for 6 days at 20°C and 14 days at 10°C separately and thereafter held at 20°C for 3 days to simulate the retail shelf conditions. Although citral in a volatile phase effectively reduced the development of stem‐end rot in both cultivars, its effect was significant in “Fuerte” with 75% reduction in the incidence of stem‐end rot. The biochemical analysis demonstrated an increase in total phenol contents, phenylalanine ammonia‐lyase, chitinase and β‐1, 3 glucanase activity in fruit exposed to citral when compared to the reference treatment prochloraz and the untreated control for both cultivars. Furthermore, fruits exposed to citral retained the ready‐to‐eat firmness and therefore could be considered a potential alternative treatment to control stem‐end rot at the postharvest stage.  相似文献

Development and survival of the immature stages of an aphidophagous ladybeetle, Propylea dissecta (Mulsant) was investigated at five constant temperatures, viz. 20, 25, 27, 30 and 35°C, using Aphis gossypii Glover as prey. Developmental period of all the life stages were significantly affected with change in constant temperature and developmental rate increased with increase in temperature. Theoretical lower thermal threshold for complete development and thermal constant was 10.39°C and 465.11 Day‐degrees, respectively. Of the various life stages, first instar larvae were most susceptible to mortality at temperatures between 20 and 30°C, whilst pre‐pupae suffered least mortality. Egg‐mortality was maximum at 35°C. Female biased sex ratios were obtained at all five temperatures tested with higher proportion of females at the extremes of temperature, thus suggesting that females are more thermal‐tolerant. Lowest mortality of immature stages with maximum larval survival and adult emergence was recorded at 27°C, while reverse was the case at 35°C. Thus, 27°C may be considered best for the laboratory rearing of P. dissecta.  相似文献

Aim Although satellite tracking has yielded much information regarding the migrations and habitat use of threatened marine species, relatively little has been published about the environmental niche for loggerhead sea turtles Caretta caretta in north‐west Atlantic waters. Location North Carolina, South Carolina and Georgia, USA. Methods We tracked 68 adult female turtles between 1998 and 2008, one of the largest sample sizes to date, for 372.2 ± 210.4 days (mean ± SD). Results We identified two strategies: (1) ‘seasonal’ migrations between summer and winter coastal areas (n = 47), although some turtles made oceanic excursions (n = 4) and (2) occupation of more southerly ‘year‐round’ ranges (n = 18). Seasonal turtles occupied summer home ranges of 645.1 km2 (median, n = 42; using α‐hulls) predominantly north of 35 ° latitude and winter home ranges of 339.0 km2 (n = 24) in a relatively small area on the narrow shelf off North Carolina. We tracked some of these turtles through successive summer (n = 8) and winter (n = 3) seasons, showing inter‐annual home range repeatability to within 14.5 km of summer areas and 10.3 km of winter areas. For year‐round turtles, home ranges were 1889.9 km2. Turtles should be tracked for at least 80 days to reliably estimate the home range size in seasonal habitats. The equivalent minimum duration for ‘year‐round’ turtles is more complex to derive. We define an environmental envelope of the distribution of North American loggerhead turtles: warm waters (between 18.2 and 29.2 °C) on the coastal shelf (in depths of 3.0–89.0 m). Main conclusions Our findings show that adult female loggerhead turtles show predictable, repeatable home range behaviour and do not generally leave waters of the USA, nor the continental shelf (< 200m depth). These data offer insights for future marine management, particularly if they were combined with those from the other management units in the USA.  相似文献
