In the traditional sense, food ingestion consists of prehending, masticating, swallowing, and digesting plant matter. It is also possible to ingest plants without eating them. Volatile compounds are inhaled directly into the lungs and transported from the lungs into the bloodstream. Volatiles in high concentrations could presumably produce toxicosis, without an herbivore ever ingesting a plant in the customary sense. Volatile compounds may be aposematic, serving to warn potential predators of toxins in plants. We conducted three experiments to explore the roles of odor, taste, and toxicity in the food preferences of lambs. The first experiment determined if brief exposure to a novel odor followed by lithium chloride (LiCl)‐induced toxicosis caused lambs to avoid a familiar food that contained the odor. Lambs that sniffed coconut‐flavored barley and then received LiCl subsequently ate less coconut‐flavored barley than lambs that did not receive LiCl. The second experiment determined if lambs were deterred from eating a familiar food by the odor of Astragalus bisulcatus. A. bisulcatus is a malodorous (to humans) sulfur‐containing herb considered unpalatable and toxic. Neither odor nor intraruminal infusions of A. bisulcatus deterred lambs from feeding. The third experiment also determined how the degree of familiarity with the odor of A. bisulcatus, along with toxicosis, influenced preference of lambs for food with or without the odor of A. bisulcatus. Lambs with 8 d exposure to the odor but not given LiCl ate similar amounts of food, with and without the odor of A. bisulcatus, whereas lambs given LiCl showed a mild aversion to food with the odor during testing. Lambs with 1 d exposure to the odor but no LiCl ate similar amounts of food, with and without the odor, whereas lambs given LiCl showed a strong but transient aversion to food with the odor. Collectively, these findings show that lambs responded strongly to novel odors, but their response was transient and depended on the postingestive consequences of toxins and nutrients associated with odor inhalation. Thus, we submit that odor alone, in the absence of toxicosis or nociception, is not a deterrent to herbivores that continually sample foods and adjust intake based on the postingestive effects of toxins and nutrients. It also is unlikely that non‐toxic plants can mimic the odors of toxic plants to avoid herbivory (Batesian mimicry), unless the odors are indistinguishable by herbivores, again because herbivores constantly sample foods.  相似文献

Subjects were simultaneously given subthreshold levels of taste and odor stimuli, delivered orally, for both a commonly paired and an uncommonly paired taste–odor combination. Results indicate cross‐modal summation of subthreshold concentrations of both taste–odor pairs when the olfactory stimulus is delivered orally. Results of control studies suggest that the summation was indeed across modalities, and not due to the taste of the odor compound or the smell of the taste compounds. Furthermore, results indicate that regardless of taste–odor pair commonness, taste and smell can combine in a completely additive fashion (i.e., at threshold detectability when both stimuli are presented simultaneously at 50% threshold level) if the taste–odor pair is presented orally. In several instances, but not all, measured probabilities exceeded those predicted by probability summation, indicating that hyperadditive mixing often occurs, but there do seem to be individual differences. Cross‐modal summation, regardless of taste–odor pair commonness, has broader implications for the development of foods, beverages and pharmaceuticals, especially in masking undesirable tastes and smells.  相似文献

We conducted laboratory experiments using a wind tunnel to determine the effects of prior experience on the learning and retention of learned responses in the larval parasitoid Microplitis croceipes (Cresson) (Hymenoptera: Braconidae). Although most females that had either antennated host frass or oviposited in a host in the presence of vanilla odor, made oriented flight to the odor from downwind in the wind tunnel at 30 min after experience, only those that had oviposited in a host with the odor responded to the odor at 24 h after experience. Females that had oviposited in the non‐natural host beet armyworm (BAW) larva with or without the odor did not respond to the odor at 30 min after experience. These results indicate that an oviposition in the host in the presence of odors strongly affects associative learning and the persistence of learned response to the odors. When females were allowed to antennate host frass in the presence of vanilla and to subsequently oviposit in a host within an interval of 5 min or less, their learned response to vanilla also persisted for 24 h. Similarly, when females were conditioned to link vanilla with host frass and then allowed to make an ovipositor contact with host hemolymph, their learned response persisted for 24 h. However, antennal contact with hemolymph after such conditioning of vanilla with host frass did not improve the persistence of learned response to the odor. These results indicate that ovipositor contact with host hemolymph during oviposition is partially responsible for an increased retention of learned response. Females responded to vanilla 48% of the time at 30 min after antennating host frass without the odor, but their response to the odor significantly decreased after oviposition in a BAW larva subsequent to the antennation of host frass. This result indicates that oviposition in a BAW larva decreases subsequent response to general odors. Based on the results, we discuss the foraging behavior of M. croceipes dependent on learning and subsequent experiences.  相似文献

This study investigated differences in food perception sensitivity between genders in a group of 274 subjects (187 females, 87 males). Sensitivity to taste, odor, texture, astringency and oral irritation were assessed using tests developed during the HealthSense project. The impact of gender on the different sensitivity types was determined using a Student t‐test. A significant gender effect was observed on the following sensitivity types: bitter identification ability (P = 0.04), bitter, sour and sweet intensity assessment (P = 0.001, P = 0.01 and P = 0.03, respectively), odor identification ability (P < 0.001), chewing ability (P = 0.02) and oral stereognosis (P = 0.02). Females obtained higher scores than males for all sensitivity types except for the chewing ability (P < 0.05 for both the ability to chew 10 and 20 strokes). No gender effect was observed for the ability to perceive astringency and oral irritation.  相似文献

The aim of the present work was to study the sensorial characteristics of Murcia al Vino cheese made with different coagulants (animal rennet and powdered vegetable coagulant obtained from cardoon [Cynara cardunculus]) and of different weights (1 and 3 kg). The cheeses made with rennet showed less odor and taste intensities, a bit clearer color and were harder and grainier, but less creamy than the cheeses made with vegetable coagulant. The big cheeses were characterized by high wine odor, acid odor, wine taste, bitter taste, acid taste, and number, size and distribution of eyes notes. The small cheeses were distinguished by a high overall taste intensity, hardness, overall odor intensity, color, saltiness and graininess. Most of the sensorial characteristics were affected by the ripening time of the cheeses.  相似文献

One objective of this study was to compare taste test ratings with amounts consumed and postconsumption ratings made as iced teas of different strengths were repeatedly consumed. The second objective was to determine whether sensory specific satiety could be used as a rapid indicator of long term acceptability of the teas. Subjects first rated their liking of and the flavor intensity of several samples of lemon flavored iced tea. Two tea concentrations were selected from this test to represent distinctly different flavor intensities. Taste test liking ratings of the strong concentration were higher than those of the weak concentration. Subjects consumed either the strong or the weak iced tea ad lib on 20 different afternoons over a 2-month period and rated their liking of the tea after each session. We measured the amount of tea consumed each time. On repeated consumption the subjects liked the weaker tea better than the stronger tea. Subjects consumed about the same amount of each tea. A different group of 15 subjects participated in a sensory specific satiety study of the same two teas. Those subjects drank more of the weak tea than the strong tea.  相似文献

The current study took a first step toward elucidating the sensory input that drives retronasal odor referral to the mouth. In 2 experiments, subjects performed odor localization tasks under various oral-nasal stimulation conditions that allowed us to assess the effects of direction of airflow, taste, and tactile stimulation on retronasal odor referral. Subjects reported the locations of perceived odors when food odorants were inhaled through the mouth alone or in the presence of water or various tastants in the mouth. The results indicated that when perceived alone, vanilla and soy sauce odor were localized 54.7%: 26.4%: 18.9% and 60.0%: 21.7%: 18.3% in the nose, oral cavity, and on the tongue, respectively. The localization of odors alone was not significantly different from when water was presented simultaneously in the mouth, indicating that tactile stimulation itself is not sufficient to enhance odor referral. However, the presence of sucrose, but not other tastes, significantly increased localization of vanilla to the tongue. Likewise, only NaCl significantly augmented referral of soy sauce odor to the tongue. These data indicate that referral of retronasal odors to the mouth can occur in the absence of a either taste or touch but that referral to the tongue depends strongly on the presence of a congruent taste.  相似文献

Nymphs of Homalodisca vitripennis are strict xylophages and frequently switch host-plants to obtain a balanced level of nutrients at appropriate tension levels. Associative learning of odors and other semiochemicals may enhance the nymphs’ ability to recognize and locate potential host-plants. We examined whether nymphs could learn to associate a novel olfactory stimulus (vanilla) with a host-plant. Nymphs fed on cowpea plants treated systemically with vanilla extract or on untreated plants. Subsequently, their responses to a pale green target were measured in the presence or absence of vanilla odor. Nymphs were not innately attracted to pale green, and exposure to vanilla odor did not decrease a stereotypical scanning behavior. However, when presented with vanilla odor, significantly more conditioned nymphs selected the target than did control nymphs.  相似文献

Objective: Negative associations between the inherited ability to taste the bitter compound 6‐n‐propylthiouracil (PROP) and preference for fat and body weight have been observed in adults. This study tested the relationships among the ability to taste PROP, reported food intake, and body weight in young children. Research Methods and Procedures: Fifty‐three 4‐ to 5‐year‐old children were classified as tasters (N = 35) or nontasters (N = 18) of PROP using a standard screening solution. Anthropometric measures were taken in the laboratory. Mothers completed questionnaires to assess their child's food intake and their own dieting behaviors. Results: Nontaster boys had higher weight‐for‐height percentiles than taster boys (77th vs. 56th percentile, respectively), but the relationship was opposite for girls (p ≤ 0.05). Nontasters reportedly consumed a higher percentage of their daily energy from protein (p ≤ 0.01), mainly as high‐fat meat products. Tasters reportedly consumed a higher percentage of their daily energy from sugars (p ≤ 0.05), mainly in the form of brownies, doughnuts, cookies, soft drinks, and juice drinks. There were no differences between tasters and nontasters for reported intake of grains, fruits, vegetables, dairy products, or discretionary fats. Discussion: This study is the first, to our knowledge, to report weight differences in children as a function of their PROP status. Genetic taste factors seem to play a role in the development of dietary patterns and weight differences in young children, but the nature of these relationships may vary with gender.  相似文献

This study was conducted to analyze the bioactive compounds and in vitro antioxidant capacity of tea infusions prepared from whole and ground medicinal fruits, including gardenia, jujube, magnolia, quince, and wolfberries. The dried medicinal fruit samples were ground, and then passed through a 60‐mesh sieve (pore size, 250 μm). Hot water (80 °C) infusions of whole and ground fruits were examined. In average of both whole and ground tea infusions, the maximum bioactive compounds were found in gardenia (β‐carotene, lycopene, and vitamin C), magnolia (total chlorophyll and anthocyanin), quince (flavonoid), and wolfberries (phenolic), and the maximum antioxidant capacity was found in quince (ABTS and DPPH) and wolfberries (NSA). Whole fruit tea infusions showed a higher brightness than the ground fruit tea infusions. The total chlorophyll, anthocyanin, β‐carotene, lycopene, phenolic, flavonoid, and vitamin C contents were found to be significantly (p≤0.001) higher in the ground fruit tea infusions than in the whole fruit tea infusions; additionally, the ground fruit tea infusions had a higher antioxidant capacity especially ABTS, DPPH and NSA. Therefore, the ground fruit tea infusions appeared to be more powerful with regard to the contents of bioactive compounds and antioxidant capacities than the whole fruit tea infusions.  相似文献

Through a single oviposition experience in the presence of vanilla odor, female Brachymeria intermedia were conditioned to fly toward a source of vanilla odor in a wind tunnel. Conditioning was an associative process, and wasps were able to fly toward odor sources at much lower doses than the dose used in conditioning. Furthermore, upon approaching vanilla-scented paper rolls hung on a vertical cylinder, conditioned wasps landed on them readily, whereas few wasps landed on real pupae. However, more wasps reached pupae or pupal cases than white paper rolls. Visual and olfactory cues appeared to mediate the foraging behavior of wasps in conflicting ways. Therefore, the extent to which olfactory learning mediates foraging success in this species remains unresolved.  相似文献

Aims: To obtain a bacterial strain that can be used to quantify biodegradable polysaccharides at concentrations of a few micrograms per litre in freshwater. Methods and Results: Flavobacterium johnsoniae strain A3 was isolated from tap water supplemented with laminarin, pectin or amylopectin at 100 μg C l?1 and river Rhine water. The organism utilized 14 of 23 oligo‐ and polysaccharides, and 1 of 9 monosaccharides, but none of the sugar acids, sugar alcohols, carboxylic acids or aromatic acids tested at 10 μg C l?1. Amino acids promoted growth of strain A3, but not in coculture with assimilable organic carbon (AOC) test strain Pseudomonas fluorescens P17, which utilized these compounds more rapidly than strain A3. Compounds released by strain P17 and AOC test strain Spirillum sp. NOX grown on acetate promoted the growth of strain A3 at Nmax values of ≥ 2 × 105 CFU ml?1 of strain P17 and ≥ 5 × 105 CFU ml?1 of strain NOX. Significant growth of strain A3 was observed in surface water and in tap water in the presence of strain P17 (Nmax P17 < 2 × 105 CFU ml?1). Conclusions: Strain A3 utilizes oligo‐ and polysaccharides at microgram‐per‐litre levels. In surface water and in tap water, the organism was able to utilize compounds that were not utilized by strain P17. These compounds may include oligo‐ and/or polysaccharides. Significance and Impact of the Study: Phytoplanktonic and bacterial polysaccharides can constitute an important biodegradable fraction of natural organic matter in water and may promote growth of heterotrophic bacteria during water treatment and drinking water distribution. Strain A3 can be used to quantify a group of compounds that includes oligo‐ and polysaccharides at microgram‐per‐litre levels in freshwater.  相似文献

In eutrophicated water, cyanobacteria massively grow and release an abundance of volatile organic compounds (VOCs) that contribute to the water odor. To uncover the effects of different phosphorus (P) nutrients on the formation of cyanobacteria VOCs and water odor, the cell growth and VOC emissions of Microcystis aeruginosa were investigated under different P nutrient conditions. Among K2HPO4, Na4P2O7, and (NaPO3)6, K2HPO4 showed the largest increase in cell density, while a reduction in P concentration decreased the cell density. There were 26, 23 and 22 compounds in M. aeruginosa VOCs with K2HPO4, Na4P2O7 and (NaPO3)6 as the sole P source, respectively, including sulfocompounds, terpenoids, benzenes, hydrocarbons, alcohols, aldehydes, and esters. Non‐P markedly promoted the VOC emission, and six additional compounds were observed: α‐pinene, 1‐phenyl‐1‐butanone, 1H‐1‐ethylidene‐indene, 2,6,10‐trimethyl‐tetradecane, 2‐ethyl‐hexanal, and acetic acid 2‐ethylhexyl ester. It can be deduced that cyanobacteria release different VOC blends using various P forms in eutrophicated waters, and the reduction of P amount promotes VOC emission and increases the water odor.  相似文献

The tea green leafhopper, Empoasca vitis (Göthe) (Hemiptera: Cicadellidae), is a serious pest of tea plants. We examined the behavioral responses of E. vitis adults to odors from the shoots of three host plants in a Y‐tube olfactometer with background visual cues. The host plants were tea [Camellia sinensis (L.) Kuntze (Theaceae)], peach [Prunus persica (L.) Siebold & Zucc. (Rosaceae)], and grapevine [Vitis vinifera L. (Vitaceae)]. Volatiles from the shoots were analyzed. Both yellow‐green and gold backgrounds enhanced the olfactory responses of E. vitis adults to tea plant odors, and this enhancement was stronger under a high light intensity. On the yellow‐green background, E. vitis adults significantly preferred the odors from shoots of the three host plants compared with clean air. Moreover, E. vitis adults preferred grapevine odor over the tea plant odor. The volatile blends of the three plant species were distinctly different. Peach plant shoots emitted the greatest amount of volatiles, whereas grapevine shoots released the greatest diversity of compounds. These results provide evidence that background visual cues could enhance the response of E. vitis adults to host‐plant volatiles. The leafhoppers can discern different host odors, suggesting the possibility of using peach plant and grapevine odors to monitor and manage this pest in tea plantations.  相似文献

Rooibos tea was extracted with boiling water. The aqueous extract was chromatographed in a Diaion HP20 column eluted stepwise with water, 25%, 50% and 75% (v/v) aqueous methanol, and 100% methanol. The water eluate (fraction A) showed an augmenting effect on anti-ovalbumin (anti-OVA) immunoglobulin M (IgM) production in OVA-stimulated murine splenocytes in vitro. Fraction A also showed a strong augmenting effect on interleukin-10 generation in murine splenocytes. Furthermore, continuous ingestion of fraction A was found to increase the anti-OVA IgM level in the sera of OVA-immunized mice.  相似文献

In herbivorous insects, host selection involves various sensory modalities (sight, smell, taste), but the contact chemoreceptors capable of detecting stimuli both from host and non‐host plants play an important role in the final steps of oviposition behavior. Female butterflies scratch and drum the leaf surface and taste the compounds present in plant saps with their tarsal chemosensilla. We assumed that tarsal taste sensitivity may be related to the breadth of host selection in ovipositing females of Papilio hospitonGéné (Lepidoptera: Papilionidae). The spike activity of tarsal taste basiconic sensilla was recorded in response to stimulation with NaCl, bitter compounds, and carbohydrates, with the aim of characterizing the gustatory receptor neurons (GRNs) and of comparing the response patterns in the light of differences in acceptability of host plants. Then we studied the sensitivity of GRNs to saps of the host plants Ferula communis L., Peucedanum paniculatumLoisel, Pastinaca latifolia (Duby) DC. (all Apiaceae), and Ruta lamarmorae Bacch., Brullo et Giusso (Rutaceae), and evaluated the relationship between taste sensitivity and oviposition preference. The results indicate that (1) each sensillum houses sugar‐, bitter‐, and salt‐sensitive cells; (2) the spike activity of the gustatory neurons in response to plant saps produces a different response pattern across all active GRNs; and (3) the number of eggs laid on each plant is highest on F. communis and lowest on R. lamarmorae. These results suggest that the varying activity of the tarsal GRNs may affect host plant acceptability and that ovipositing females of P. hospiton seem to be able to discriminate between host plants.  相似文献

Human studies indicate that alcohol exposure during gestation not only increases the chance for later alcohol abuse, but also nicotine dependence. The flavor attributes of both alcohol and nicotine can be important determinants of their initial acceptance and they both share the component chemosensory qualities of an aversive odor, bitter taste and oral irritation. There is a growing body of evidence demonstrating epigenetic chemosensory mechanisms through which fetal alcohol exposure increases adolescent alcohol acceptance, in part, by decreasing the aversion to alcohol''s bitter and oral irritation qualities, as well as its odor. Given that alcohol and nicotine have noteworthy chemosensory qualities in common, we investigated whether fetal exposure to alcohol increased the acceptability of nicotine''s odor and taste in adolescent rats. Study rats were alcohol-exposed during fetal development via the dams'' liquid diet. Control animals received ad lib access to an iso-caloric, iso-nutritive diet throughout gestation. Odorant-induced innate behavioral responses to nicotine odor (Experiment 1) or orosensory-mediated responses to nicotine solutions (Experiment 2) were obtained, using whole-body plethysmography and brief access lick tests, respectively. Compared to controls, rats exposed to fetal alcohol showed an enhanced nicotine odor response that was paralleled by increased oral acceptability of nicotine. Given the common aversive component qualities imbued in the flavor profiles of both drugs, our findings demonstrate that like postnatal alcohol avidity, fetal alcohol exposure also influences nicotine acceptance, at a minimum, by decreasing the aversion of both its smell and taste. Moreover, they highlight potential chemosensory-based mechanism(s) by which fetal alcohol exposure increases the later initial risk for nicotine use, thereby contributing to the co-morbid expression with enhanced alcohol avidity. Where common chemosensory mechanisms are at play, our results suggest broader implications related to the consequence of fetal exposure with one substance of abuse and initial acceptability of others.  相似文献
