| 摘 要： | 分析了小荚蛏（Siliqua minimai)肉的营养成分。结果表明，小荚蛏肉中的水分，蛋白质，脂肪和灰分含量分别为87．06％，8．70％，1．22％和2．50％，必需氨基酸占氨基酸总量的37．21％，氨基酸分为59．0；并富含钠（3959），外（8102），磷（1219），钙（513．7），镁（479．1），铁（80．73），锌（13．81），锰（2．82）等多种无机元素（单位：(mg/100g DW)。

| Abstract: | The nutritive compositions of the muscle of Siliqua minimai were analyzed. The results show that the moisture, protein, lipid and ash content was 87 06%, 8 70%, 1 22% and 2 50% respectively. Essential amino acids comprised 37 21% of total amino acids, the score of amino acids was 59 0. The contents of Na, K, P, Ca, Mg, Fe, Zn, Mn were rather high. |
